During the planning of the Hawaiian Wedding, Gordon and I knew that it was our responsibility to host and pay for the Rehearsal Dinner.  Because the wedding would take place in Hawaii Gordon and I suggested that the Rehearsal Dinner be held at a Luau.  I think at first not many were interested in attending a Luau, they wanted some dinner at the estate they would all be staying in out in the North Shore, but we insisted.  🙂

Our goal was to get everyone out of the estate for one night, and get them into Waikiki for a professional Luau.

During our 13 years of living in Hawaii we had been to several Luau’s.  The Hale Koa Hotel has one of the best Luau’s on the island.  We knew this, which is why we wanted the Luau at The Hale Koa.  Yes, we were staying there.  And yes, it was convenient to us, but we would have booked the best Luau no matter where it was because we wanted the best for the bride and groom.  I do believe that we did deliver!

Buying The Luau Leis In Chinatown

  

Prior to the Luau, the day before, Gordon and I went into Chinatown to buy the Leis.

Chinatown has the best leis and the best prices.

Before we left Hawaii in 1999, my girlfriends and I would drive into Chinatown for the afternoon, have lunch and do some shopping.  Everything was so open back then.  Not now.  Everything was very closed off, as in you had to enter into stores along streets, nothing was open.  That was very sad to see.  I miss the open markets.  It was just streets lined with stores.

Before The Luau

When you are the Mother of the Groom, the Hostess for our Guests at the Luau, and when you are the Family’s Main Photographer, sometimes you miss out on the major happenings because I was playing 3 different rolls.  Oh, and I was also a Guest of the Hale Koa Luau as well.

So, where was Gordon?  Socializing, of course.  🙂

Because we hosted the Wedding Party for the Luau, we did it months in advance, and made sure that we got the best tables.  We gave the Bride’s Table the best spot in front of the stage, and then we took the Groom’s Table as the second best, and then the other tables flanked us.

It wasn’t until the Luau that we were able to meet so many of the guests.  Most of them were on the bride’s side.  Everyone we met was really wonderful and it was such a nice pleasure to meet them all.

I would like to say that the male dancers and entertainers, were just the best!  They just seemed to enjoy themselves and had the best time up there on stage and in the spotlight.  It’s as if they were just having lots of fun.  That’s actually how it should be.

Here, they called for a volunteer to crack open a coconut.  We all screamed for Brodie to be that volunteer.  He did.  They chose him.  And he was wonderful!  He cracked that coconut open just fine.

Welcome to My Aloha Julie Barefoot 2026 ‘Puke Punaewele (Blog)

Ready for 2026

This year will be a more eventful one from in the past few years.   Traditionally we are home bodies as it is, but with Gordon working overseas for the past few years, and with me keeping the home fires burning, I am also my Grand-Daughter’s main caregiver.  I don’t really have a lot of free time anymore.  Especially when it comes to working on my websites.

You will find out as I take you along with me, and my Ohana throughout the year, what we have in store.

We lived in Hawai’i for 13 glorious years.  Hawai’i means a lot to us.  Both of our children were born there.

My Grand-Daughter Isabelle calls me Tutu, the Hawaiian word for Grandmother.

I sometimes call her Peanuku, (Peanut) because when we first saw the scan of her before she was born she looked exactly like a Peanut.

This year our son Brodie Keith Kanakaleo Whann will be getting married in Hawai’i on the North Shore to his betrothed Mackenzie Meers Parish.

Arizona, perhaps if Gordon’s former ship is docked we can get a tour and show Veronica, Brian and Isabelle the ship itself.

We have a huge Luau planed in Waikiki before the wedding, hosted by us.   I’ve been buying gifts for the occasion.

A Flower In My Hair

I’ve written about this before on my website, but I would also like to write it here again:

When my family moved to Rockingham, North Carolina, 1978, the summer before my senior year in high school, I wore a flower in my hair every day.  I was laughed at.  Made fun of.  And made to feel as if there was something wrong with me.  But when I became an adult, got married, Gordon and I moved to Hawaii for his military career.  I noticed that all the women in Hawaii would wear a flower in their hair every day.  I knew then that there was never anything wrong with me, I was just living in the wrong place.  🙂

Time For Talk Story

 

Let Me Tell You A Story About Karma

There once was a woman that lived in a neighborhood in Florida.  She kept to herself and minded her own business but that never seemed to matter to some arrogant trouble makers that were her neighbors.  (Or as my grandmother would have called them.  They are a bunch of spoons because they love to stir up trouble.)  These particular neighbors loved to bother her and try and make her miserable.  I won’t go into all the details, but this woman was an observer of the behaviors of her neighbors.  One thing she noticed was that the families that were harassing her were of a certain mindset.   It was important for them to look good to others.  Oh, and they had the nicest homes, the nicest lawns, the nicest cars, and wore the nicest clothes, while carrying the nicest handbags, all just part of the disguise.  All those pretty things were to distract from their true selves.  For you see, they showed the woman they were abusing exactly who they really are. 

As time passed the woman may not have liked being abused by them, but she knew that karma would come along and get them eventually.  The Universe has a way of doing that.  You see, in their efforts to look good on the outside, they employed companies to make their grass extra green and beautiful.  Killing the Dandelions that the bees needed to pollinate.  Every 3rd. bite of food that we eat was pollinated by a bee.  Once the bees are gone, we are gone.  But to these people it didn’t matter, they just wanted the nicest yard in the neighborhood.  Gotta keep up with those Jones’.  Whoever they are? 

These pesticides that are used to accomplish this are killing the bees, and the other important wildlife that helps to keep us healthy and safe.  I’ve noticed that my frogs haven’t lay any eggs in the past few years in our fountains.  As ugly as the fountains may look, I knew that we needed the frogs so that our ecosystem would thrive and be healthy.  I would even feed them lettuce so that they wouldn’t cannibalize each other.  When the hurricane’s were coming we covered them up and protected them so that they would make it through the storms.  Did you also know that when a tree is cut down and is nothing left but a stump that the other trees will feed that stump through an underground network so that the stump will still live?  Did you also know that our planet has a heartbeat?  Probably not, because who cares about science, huh?  Science is truth whether you believe in it or not.

All that matters to these kinds of people are that they look good on the outside.  HOA’s even encourage this, as most HOA leadership are of a certain political party that don’t care about the environment, and love to make everyone look the same as them.  Houses must be painted approved colors, lawns must be perfectly green and attractive, no weeds, even though some weeds help our ecosystem.  Not caring that those chemicals used to make everything look nice and green are giving dogs cancer of the mouth, and children that play on those lawns are getting cancer as well.

Which brings me to my point.  Almost every week these neighbors in the neighborhood employ housekeeping services.  Breast cancer is in their futures.  So, how would I know that?  I’ll tell you.

It was about 15 years ago that all these women out in California were getting breast cancer.  The only thing they had in common was that they all had their homes professionally cleaned on a weekly basis.  The kinds of cleaning products that were being used caused cancer.  When we clean our house we use Bar Keeper’s Friend along with some elbow grease, and some bleach products that have been around for a long time.  We don’t breathe in those cancer causing chemicals like so many others do.  Now there are so many products on the market that are dangerous to use.  Yet, they are also perfectly legal.

It’s those products that professional housekeepers use.  Most of the women who clean homes professionally are Spanish speaking.  (Not that there is anything wrong with that but stay with me.)  These women tend to be small in stature and probably have a few houses to get to each day.  Their employer most likely wants them to finish each house as quickly as possible and move on to the next.  That means that there is no time for them to use safe products like Bar Keeper’s Friend.  That will require a lot of elbow grease from these women and they will take longer to finish cleaning and may be late to the next house on their list because of irate people that employ them don’t like waiting around.  So, they spray on the highly industrialized stuff that will dissolve the messes so that all they have to do is then wipe it all up and leave.

The toxic chemicals aren’t just being used in the bathrooms, also the kitchen and other places in the home.  And what with everyone wanting the ‘open concept’ home so that they can be just like everyone else, family’s can be sitting in their living rooms watching T.V. while breathing in the chemicals just a few feet away from the kitchen.

If you are thinking that those things only happened in California, wrong, things may start in California but then they spread to the rest of the country quickly.  California being a progressive state, for good and bad reasons, is just where something will start.  However, California being a blue state will then ban the toxic stuff once they discover it, while the red states will green light the toxic because they can’t disappoint their corporate donors.  Living in a red state is like maneuvering through a daily mine field.  If you don’t keep up with everything, then you lose.

When Bill Clinton was President he empowered the FDA to protect the American people.  If a product was toxic and a business didn’t remove that product from it’s shelves then the FDA had the power to close that business.  But, then along came W. who removed that power from the FDA and made it so that businesses could decide on their own whether they wanted to remove the toxic products from their shelves.  One morning while W. was President I read online how the Sara Lee Bread was being recalled due to metals from their factory in China.  I then drove to the Commissary on base where I saw all this Sara Lee Bread in the front of the store with a $1.00 price along with a $1.00 off coupon.  Pretty much FREE.  Free toxic bread!  I saw a woman with 3 young children happily loading her cart with this bread.  I went over to her and told her that this is the recalled bread from China that has metal in it.  I wanted to help her.  She just looked at me as if I were crazy.  Well, I tried.

Well, Getting Back To Karma

This woman that was being abused by her nasty neighbors observed all this and knew what was coming their way.  She had two choices, she could either tell these rotten people and help them, although it probably wouldn’t go very far.  (Remember the woman above with the bread?)  Or, she could just sit back and let karma do all the work for her.  So, if this were truly a good decent woman then would she try and tell them just to clear her conscience?

She Is.  She Is Telling Them Right Now.

Meet The Kalama’s, Kamohai and Tristyn

Renovation Aloha debuted on HGTV on February 20, 2024.  Although Gordon and I haven’t seen every episode, we’ve seen enough to know that we love this show!  We’ve been watching for over a year now.  Whenever there is a Renovation Aloha marathon on HGTV we always get excited!!  🙂

We love the show because they take usually old run down homes in Hawaii and make them beautiful.  They always incorporate something original from the home into their design.  We love the reveals!  They are stunning!  We can usually recognize some of the Hawaiian artists they use in their staging.  This talented couple is inspirational!  I cannot use enough exclamation marks as I write this. !!!!  🙂

There are a lot of homes in Hawaii that look as if they are unique ‘shacks.’  When we left the island in 1999 the average home cost about 450 thousand.  And their version of average, is our version of below average.  It is extremely expensive to live there which is why you will see families living together.  As in ageing parents, children and their spouses with their own children, and in some cases aunties and uncles.  Only then could they all afford a descent home to live in.  Also, no one owns the land.  You may buy a house on land, but you won’t own the land.  At least that is how it was on Oahu when we left.  I do think The Big Island is different.  We did know a local woman that owned land on The Big Island but it was covered in lava from the volcano oozing.

Watching the talent that is revealed through these two remarkable people is sometimes awe inspiring.  In many cases they will take a ‘treasure’ they find from the home and alter it in a very unique and special way, and then regift it back to the owner that sold them the house.  Also, Kamohai’s father is a spiritual leader who blesses the house once it is finished and ready to be placed on the market.  It’s just that added Hawaiian Spirituality that just makes you feel good.

Well, I have probably bragged enough on this family.  They brought us back to HGTV.  I hadn’t watched HGTV in years prior to discovering the Kalama’s.  Oh, and Kalama means Torch, or Flaming Torch in Hawaiian.  And they are certainly lights that we love to follow.

Ever since we got back from Hawaii we have been very “chill.”  Taking our sweet time with getting back into the swing of things.  Oh, we do what we have to when we have to do it, but everything else has taken a backseat.  What with major events going on at the moment, Gordon is now home for good as it is no longer safe to work overseas.  We had planned on him perhaps coming back here later on this year, and perhaps going back the following year for another two years, but now things are so up in the air that plans have had to be altered.  It looks like he is home for the foreseeable future.  He did just get another job here doing what he does.  He’ll just do it here and not over there.  But now gone is all that hazard pay.  🙁  But, we would much rather have Gordon home safe and sound now.

Both Gordon and myself have at least one suitcase each that we haven’t unpacked from Hawaii yet.  We’ve just been doing other things.  I think we took “Hawaiian Time” too serious.  There is EST, MT, PST, HST, and Hawaiian Time, or Island Time.  The locals of Hawaii are on their own time and they get to things when they get to things.  🙂  I know that it frustrated Mackenzie’s mother when it came to the wedding planning.  It actually wasn’t until the Sunday before the wedding that was scheduled for that Friday, did the Wedding Planner get back to her.  Yeah, they cut things very close but that is just who they are.  I will say that I did warn her.  🙂  But, as far as anyone could tell the wedding went off without a hitch.  It was beautiful!  I did thank the wedding planner when I met her and told her that she did a great job.  

I’m still working on the other Hawaiian website pages of our trip there.  It has been a lot of fun to recount it all. 

At this writing I am still working on them.  Although I have gotten a few done.

I also mailed Brodie and Mackenzie the extra coasters that I had made as party favors at the Rehearsal Dinner Luau to pass out to all.  We couldn’t take all of the coasters as they would be too heavy in our luggage.

I am embarrassed to say that I bought too many.  I honestly didn’t know how to order them and wrote in the wrong amounts.  But, as I see it, Brodie and Mackenzie either have ‘coasters for life,’ or excellent ornaments for their 2026 Kalikimaka Tree.  🙂

It was while we were shopping at Ala Moana Shopping Center for a dress for me to wear to the wedding, that we discovered CocoNene.  We were instantly smitten!  The wooden art, the artists, the beauty of all of the creations!  We loved it all!  That is when we did do some shopping.  We also did some shopping once we got back home and visited their website.

Back From Aloha, Banyan Tree, Hale Koa Hotel, Waikiki

It’s been awhile since I’ve blogged.  We have had a lot going on in our lives.  Gordon came home from working overseas in February.  He got home before my birthday.  Because he came in late at night our son-in-law Brian picked him up from the airport.  Interestingly enough he flew over the country everyone is talking about right now. 

It was less than a week after he got home that where he works overseas was evacuated.  Gordon was on the phone trying to find his stuff.  It was all sent to another state’s base here on the mainland.  It wasn’t until we got to Hawaii on the 28th. of February and saw the news that I knew why they were evacuated to begin with.  Gordon took leave to come home before all hell broke loose.  Happy he was here already.

Yes, we were in Hawaii and had just checked into our room and turned on the news.  That’s when we saw what was going on.  It just seemed so bizarre to be on vacation while all hell is breaking loose.  I do write about our vacation in other website pages on our website.  The vacation was much needed by both of us!  We did have a nice time in spite of everything going on in the world.

You see, our son Brodie married his long-time girlfriend Mackenzie on the North Shore of Oahu, Hawaii on March 6th..  🙂

We were in Hawaii almost 2 weeks.  We put our dogs into a kennel during that time.  I just knew they would be mad at us when we came back for them once we got home.  I was right, they were.  

You know on videos online you’ll see these dogs running happily into their owner’s arms after having not seen them for awhile?  I kind of thought that would happen.  Nope!  They just looked at us like, ‘You left us.’  Me, ‘I know, but we came back for you.’  Dogs, ‘You left us.’  Me, Yes, but Brodie got married to Mackenzie in Hawaii and we couldn’t take you with us, so we put you in a fun camp for Spring Break.  Yeah!!!’ 

Dogs, ‘You left us.’  And they then proceeded to urine on the living room carpet.  So, yeah, there was that.  🙁

We got back home a few weeks ago.  So many things had changed on the island.  In a way I hate that we went back.  I liked remembering it the way that we left it in 1999.  There were some negative changes on the island, as well as some positive.  It does look like we made it out from the island just in time.  Our last full day there was spent with it raining, and having dumped a good 33 inches of rain overnight on us!  Our hotel lost power for 8 hours until it was restored.  We weren’t planning on doing very much that last full day because we did a lot of laundry and packing.  We also put together 3 boxes to mail to our house of goodies we bought over there.   Gordon ran those to the post office while I kept Isabelle in our room.  Veronica and Brian had gone to the North Shore to tour the Jurassic Park tourist area.  Luckily I had brought coloring books and crayons for Isabelle, along with some Bluey story books.  Plus, Veronica had left behind her tablet with some movies for Isabelle.   And as always, I had some great local snacks.  (Guava, Ube, and Coconut Shortbread Cookies.)

Luckily for us our flight was scheduled to depart in a window between storms the following day.  Also, we got out of there and back home without the back log of flight departures due to not funding our TSA Agents.  We did really feel for them.  Having to work those long and hard hours with no pay.  The ones that we encountered were very professional and working so hard.

And let’s not forget the additional amounts of rain that fell on the islands after we left.  I do appreciate that we got out just in time.  But, we also can’t help but feel for the local’s left to deal with that devastation.

Since we’ve been back home, and at this writing, I still have 2 suitcases to unpack and put away, I also have the 3 boxes we mailed home to really deal with.  Not to mention we still have some Christmas to put away.  That’s right.  Some Christmas is still up.  AND, I am even leaving up other Christmas things in our dining room, just because.  I’m doing that because we really don’t know Gordon’s schedule or where he will be working in the near future?  This week he attended a school to help with his job, and he is going into the base, but they really don’t have anything permanent for him, or others in his situation right now, so things are kind of iffy.  Will he be here?  Will he be sent back overseas somewhere?  We just don’t know?

We are also down to only 1 car.  We weren’t expecting him here now so therefore he needs it.  And because things are so iffy, we don’t know if we need to buy another car now, or wait until later on?  We do still have the Santa Fe that is dead, and sits in our driveway.  We will need to have that one towed away and traded for whatever Jeep Gordon wants to buy either now, or in the future.

Living with so much uncertainty seems to be The American Way right now.

But, right now all we can do is to deal with things as they come.  It’s spring here and that means we need to get on the ball and hire our yard guys to deal with the massive amount of leaves in our yard.  Pull up all those dead things that died during our many frosts we had back in February.  Taxes are due April 15th.  While Gordon is here he needs to take care of all those doctor appointments that he needs to catch up, (bone spurs.)  And, we just need to get things organized and packed away in the attic here in the house.

I am dying to create so many things from all the inspiration of Hawaii and the Islands.  I am also very happy to catch up with my website.  I’ve enjoyed finishing up old website pages from the past, along with new one’s I’m creating.  We’re eating off paper plates and cups because I really don’t want to deal with dishes right now.  I even lost about 6-10 pounds in Hawaii that I am afraid I will put back on just because we are grabbing a lot of take out at this time.  🙁

Turning 65

It’s so hard to believe that I am now 65, but yet it also isn’t.

I can remember the lyrics to songs that I sang when I was 6, 7, 8, years old, etc.  I was even singing some of them the other day.

So far 65 feels pretty good!

We tried signing me up for Medicare but because Gordon is younger than me, and still working, I don’t quality yet.

I wish that I knew when I was younger what I know today.  Because I never would have cared what others thought of me.  Ageing comes with this badass shield that protects you from the arrows others throw at you.  They just deflect off of it.  It’s really nice actually.  Sometimes I feel like Wonder Woman with her Bracelets that reflect bullets.  I think that I learned who to care about and who not to.

We are currently living in very hard times and it breaks my heart the amount of indifference that some people have about it all.

I can’t change anyone’s feelings and I no longer care to try.  I just want to enjoy my life right now and the people that I love the most.  I’m not out to save anyone, they are on their own.  I’m done trying.  I do feel for those vulnerable people who are suffering.

The Hawaiian Royal Crown was an old stencil that I bought back in the early 90’s when I was stenciling coconuts to sell at Craft Fair’s.

The older that I get the more proud of myself that I am.  I am letting go of what I cannot control and protecting all that I can, while I can.  I think it’s what we leave behind that says a lot about who we are.  I want to leave behind great children, and a wonderful granddaughter.

I don’t know what 66 will be like, but I do think that 65 will be pretty terrific!

Before, On My Way

After, On My Way Home

I realize that I do tend to post photos of myself in the car going somewhere, but if I didn’t there wouldn’t be many photos to post.

I wanted to write something today, January 31st., before February arrived.

I am looking forward to February, there will be a lot going on.  All good!  I just kind of wanted to get January out of the way.

In the photos above you can definitely see my white hair.  It’s not really grey, it’s white.  I colored it about a month ago and you would never know it to look at me.  My hair grows very fast, annoyingly so.  Also, I’m wondering if my white hair just isn’t taking the color anymore?  When I have make-up on and my hair styled nicely then the white hair looks good on me.  However, when I don’t have make-up on and I have it back in a pony tail, I just look old, sad, and tired.   I’m just not ready to look like I belong on some revamped version of The Golden Girls.  I also want my face to reflect how I feel.  I don’t like looking tired when I’m not.  I also don’t like looking sad when I’m not.

The photos above I took on Thursday.  I drove into the Air Force Base to do some much needed shopping.  I hadn’t been in a long time.  I was low on all my supplies.  I spent so much money at the Commissary, but brought home barely anything to eat.  🙂

I wanted to tell you what I observed while on the base:

I tend to only buy gas when I am on the base.  I feel much safer buying it there.  I always hear about how people who buy their gas around here are always getting their cards scanned by criminals while at these large gas station business’s.  So I do tend to fill up when I am on the base.

I then went to the Exchange hoping to find some things for Isabelle, and to just look around and see if there was anything else I wanted to buy?  The children’s section, which is normally packed full of a large assortment of so many things, just looked very ‘thin.’  I bought her some crocks to wear here at my house, they cost $25.00.  They normally would have cost under $5.00.  There were no Bluey clothes, which in the past there were racks of them.  I did find a few clothes for her, but nothing along the line of what I am used to finding and buying for her.  In the toy and book sections, they were very thin as well.  Hardly anything Bluey or really anything at all.  Not many toys at all, not many books at all.  I was very disappointed.

The women’s clothing section which is usually packed full, as in an entire length of the store area, but was very thinned out.  I did come across some black pants that were ‘Made In Jordon.’  I have never seen anything ‘Made In Jordon’ in the Exchange in my life!  And I look at those kinds of things.  They were priced normally for $97.00 and I got them for the Exchange price of $72.00, but just a month ago those pants would have been around $38.00, in line with how the other items would be priced.  This is a big indication of how things are going for the military families who depend on the Exchange and Commissary for affordable prices because most military families live from paycheck to paycheck as it is.

The Commissary items were also priced higher than normal.  I can only assume that these are the Trump Tarif’s taking effect. 

The funny thing is that most of your white military are republican’s.

Life In America Now

Hillary Clinton did say about getting our reproductive rights back would take generations.  It will.  Also, what we are all going through now will take decades to undo and restore.  It took 10 years to recover from the George W. Bush Recession.  It will take longer to recover from what we are going through now.  And there is nothing we can do about it.  Oh, we can protest, and we should, but when this disastrous regime is gone, it will take a long time to rebuild, as in decades or even generations.

I don’t know how bad things will get, I just know it will be bad.  But in the meantime, I want to enjoy life when I can, eat, drink and be merry when it is important to do so.  If I can’t buy anything new for myself for years then I will b o.k.  I am only worried about Isabelle as she is a growing little girl that will need things as she grows.  

We have a lot to look forward to in the next few months.  For all I know this will be the only life I get and I want to spend what time I have left having some joy and not so much sorrow as we see right now in our country.  Sometimes we just cannot ignore the sorrow, but we can deal with it our own unique way.  I like how the artists out there are dealing with the current tragedy’s.  They paint pictures of the fallen, whether on canvas or on sand at the beach.  They sing, they write songs, like Bruce Springsteen.  Things may be bad but I feel as if I am in good company.  No matter what happens next.  I really don’t feel alone.  In a weird way I kind of feel like someone I don’t even know has my back.  🙂

If I can do it anybody can!  But for now, we all do have each other.  🙂

Doing The Best I Can

(Having some Cold, COLD, weather here in Florida.)

I want to blog but in some ways I don’t know what to say, yet I know I want to say something.

We are all going through so many trying times right now.  I see the ending, I just don’t know when the ending will be?  Or how horrific it will all be in the end?  Everything runs it’s course.  The more evil, the sooner the ending.  Evil will always eventually burn itself out, or will be snuffed out, but not before it has done terrible damage to those that don’t deserve it.  And there will be many damaged human beings from all of this.

It’s difficult to keep this blog all positive and happy when I am surrounded by so much unhappiness in my country right now.  It also seems a bit insensitive to try and ignore it all.  Trust me, I may not write about it, but I cry about it every single day.

However, it was last February 12, 2025 that Brodie and Mackenzie took me into Sarasota, Florida for the day to be at their ‘Save The Date’ photo shoot.  They then treated me to a great lunch at The Columbia Restaurant.  It was in the car ride to Sarasota that I told them about a scene in Harry Potter and the Deathly Hallows Part 1, where Harry and Ginny were discussing Bill and Fleur’s upcoming nuptials.  

Ginny said something to the effect of, ‘It seems ridiculous to be having a wedding at this time.’  And Harry said something to the effect, ‘If you think about it, it is a perfect time for a wedding.’

I immediately knew what he meant by that.  And it reminded me of something gay activist Dan Savage once said about the AIDS Epidemic:

‘We would bury our loved ones in the morning, grieve in the afternoon, and dance at night.  It was the dance that got us through.’

We all need something wonderful to celebrate.  That is what Brodie and Mackenzie’s upcoming wedding will mean to a lot of us.  I told them about what I write above because I didn’t want them at any time to regret getting married in such harsh times.  Sometimes that special celebration during harsh times is exactly what we all need.

On a Personal Note:

Gordon will be coming home from working overseas in less than 3 weeks.  🙂

I am doing my best to get the house back in order for when he comes home.  Not that it is in terrible condition, it’s just that because I keep Isabelle a few days a week, and have 2 dirty dogs in the house, this is more of a daycare/dog kennel than it is an organized house.

I now have many irons in the fire and I am just trying to do the best I can.

I no longer have the energy that I once had when it comes to dealing with people.  Sometimes I feel like a failure.  That emotion comes from all the years my mother would chastise me for not being perfect.  For not having a lot of energy to do what she thought I should be doing.  I’ve come to realize that I need to give myself some slack.  I did the best that I could given the abuse that I had to endure.  I’ve grown tremendously from those early years.  I enjoy my own company, pursuing my own interests.  Yes, I am looking forward to Gordon coming home.  We are a team, and I will be delegating many responsibilities his way.  🙂  Luckily, he doesn’t mind those kinds of things.  Also, we have many fun things planned for both of us to enjoy.  🙂

However, we do live in times where the people that surround us are not that great.  I read today about a senior citizen male here in Florida was arrested for a DUI.  He insisted that he didn’t drink and drive because he only drank at the stop lights.  How do any of us reason with someone who thinks that way?  That is the MAGA mind.  There is no reasoning with them.  All that you can do, is to stay away from them because they are just too dangerous to know.  As much as I want to help people at this time, there will come a time when it will be every man for themselves.  A person can only do so much.

Sorry to be so dark but we are living in dark times.

Happy Birthday Gordon

Because we have a Hawaiian Wedding to plan, and all that comes with that, I started buying Gordon some Hawaiian shirts for the occasions where he will need to wear them.  I didn’t want to send them to him overseas, that was pointless, so I started photographing them in our bedroom, sent them to him one in each email, and he “opened” his Christmas gifts on Christmas Day that way.

But, I did save the Duke shirt for his birthday!

He will be opening this today!

I also bought him some Asian themed shirts because Hawaii does have a large Asian population and we will be going into China Town, and hopefully eating at Masaharu Morimoto’s restaurant in Waikiki.  

The Aloha Shirt on the left looks a bit Christmassy, and the shirt on the right is perfect for everyday.

I have had a lot of fun shopping and planning for our big trip.  Hawaii is a Democrat state and we are looking forward to just being around all the diversity and like minded people.  There are no billboards in Hawaii, they are outlawed.  Not so when traveling to my home state of Georgia.  I always know I’m home when I see all The Jesus, Lawyers, and Porn Billboards.  Yeah, that’s Christian Georgia for ya.  Home, Sweet, Home!  🙂

Kulii’s Teriyaki Spam and Pineapple ‘Ai Pu Ana

This entire recipe was born out of my finding these beauties at the grocery store.

  I was actually excited and giddy when placing them into my shopping cart!

Look How Beautiful They Are!

Ingredients:

Squid Ink Pasta

Tiki Tomatoes

1 Can Teriyaki SPAM, Fried in Chunks

1 Medium Onion, Chopped

1 Green Bell Pepper, Chopped

1 Yellow Bell Pepper, Chopped

1 Can Crushed Pineapple, Drained

Extra Virgin Olive Oil

Hawaiian Sea Salt

Freshly Ground Black Pepper

Hawaiian Teriyaki Sauce, To Taste

In a Casserole Dish I placed my chopped Green and Yellow Bell Peppers, as much as I liked.

I then chopped Medium Onion into Chunks, as much as I liked.

I Then Added The Entire Can of Crushed Pineapple, Drained.

I Then Added My Tomatoes To The Dish, Drizzled Some EVOO Overtop, and Added a Sprinkling of Hawaiian Sea Salt and Freshly Ground Black Pepper.

Mix Together and Then Place Into a 350F Oven…

You Will Bake For About 20-30 Minutes Depending On Your Oven. 

Have a Watchful Eye!

You just want all of the ingredients to have softened.  And not be so crunchy.

Meanwhile….

Teriyaki SPAM and Hawaiian Teriyaki Sauce

In a Medium Pan on a Medium Heat, Place Your SPAM that you have Cut into Chunks

Now Place Some of the Hawaiian Teriyaki Sauce Into The Pan

Cook on that Medium to Low Heat, Stirring Continuously, Until Caramelized.

While the SPAM is cooking, Boil some Water in a Saucepan and Cook the Pasta Until Al Dente, Then Drain.

Add As Much Pasta As You Like To The SPAM, Stir Together.

Add the Pasta and SPAM to the Casserole, Stir Together, and then Enjoy!

My Tropical Naan’s

Pineapple Left, Mango Right

I knew that I wanted to make a Pineapple Pizza with my beautiful Tiki Tomatoes.

I already had the Naan, the Tomatoes, Pomegranate Seeds, and some canned Dole Pineapple Rings.

So, I went shopping trying to find some sort of Pineapple Hummus.  Well, I couldn’t find any.  However, they did have a Mango Jalapeno Hummus.

  BOOM KANANI!  That’s it!

So, I bought some Fresh Jalapeno’s and Mango as well.

Ingredients:

Naan

Hummus, I used Plain and Mango/Jalapeno

Tiki Tomatoes

Pineapple Rings, Drained of Liquid

Mango Slices

Jalapeno’s Sliced and Deseeded

Mozzarella Cheese

Pomegranate Seeds

AND,

My Oriental Jezebel Sauce (optional)

Fresh Cilantro (optional)

I wanted to use the Plain Hummus with the Pineapple Naan

I did Place My Naans Into a 350F Oven for About 5 Minutes

I Then Removed The Naan, and Spread The Hummus onto Each One

Plain Hummus for the Pineapple, and Mango/Jalapeno Hummus for the Mango Naan

Because Pineapple holds so much water, and you don’t want all that water on top of your pizza, I pressed down on the Pineapple Rings with some paper towels to get rid of some of the liquid.  It worked, and the pizza tasted better because it wasn’t all soggy on top.

The Best Ingredients  🙂

 

Once I had placed all of the ingredients onto each Naan, I then drizzled some of my Oriental Jezebel Sauce over top and it was perfect! 

They tasted wonderful!

When they came out of the oven I added the Pomegranate Seeds and some Fresh Cilantro.

I was shopping at the base exchange in Tampa and I found this book, and many other great books, in the sale bin.  I recognized it’s importance immediately and fished it out.  (I’ve discovered that the best children’s  books are always overlooked and in the sale bin.)

Cindy and Panda’s Blueberry Pie

This is just a cute book for any toddler about friendship, and cooking.  The book even ends with a nice recipe for making a Blueberry Pie.

I placed this here because Isabelle and I just might have a go at making this recipe someday.

The author and illustrator, Benson Shum, has also written books of Little Seed, Anzu the Great Kaiju, Anzu the Great Listener, and Alex’s Good Fortune, and he is the illustrator of Sloth Went by Adam Lehrhaupt.  He is also an animator at Walt Disney Animation Studios and has worked on such films as Frozen, Big Hero 6, Moana, Raya and the Last Dragon, and Encanto.

He is originally from Vancouver, British Columbia.

Wasabi Salt

My Seaweed Dip/Spread, with Shiso Leaves

(Shiso Leaves are the original leaves that were placed in the containers of Sushi that you would buy in restaurants, and stores that would sell sushi products.  They eventually replaced the real leaves with the plastic ones.  Which is what you are familiar with now.  These are those real leaves.  We have them growing in our backyard.  They are very healthy for you.  They aid in digestion.  They were also used to wrap around meats and other foods that had gone a bit bad, and they helped to prevent you from getting sick when eating such meats.)

Served with Seaweed and Onion Crackers

(I purchased the crackers at the Asian Supermarket. 

They are some of the best crackers I’ve ever eaten!)

Over Every Cracker Sprinkle Some Tuxedo Sesame Seeds and Some Wasabi Salt

I made some extra for my daughter and her family.  But, I never told her what it was because I figured that she would reject it if I told her it was made out of seaweed.  So, when she came over the following day to pick up Isabelle, I asked her if she liked it?  She said, “Yes, it was really good.  But, what was it?”  🙂

Soft Dried Mango with Chili Salt

(Formed into a Flower, purchased at the Asian Supermarket)

This is a favorite of ours.  I buy this a lot.  It is not only beautiful, but it is so delicious!  It has this excellent Chili Salt on it.  I would love to find that salt sold separately.  I can think of so many things that it would taste so good on.  

I just unravel it, and eat it that way. 

As the flower gets smaller, and smaller.

My Seaweed Dip/Spread, with Shiso Leaves

I Snipped These From The Backyard, and Washed Them

Ingredients:

Prepared Seaweed,  1-2 Containers, Drained, Squeezed of Liquid, and Chopped

(You can buy this at any grocery store or Asian Supermarket, already prepared for you.)

1 Medium Onion, Chopped

3/4 Cup Stick Carrots, Chopped

3, 8 oz. Blocks Cream Cheese, Softened

2 T. Hawaiian Teriyaki Sauce ( or less if you desire)

1 – 2 T. Toasted Sesame Oil

Tuxedo Sesame Seeds (Black and White) As a Garnish

Wasabi Salt To Taste

Garnish with Shiso Leaves, or any Edible Leaf, if possible.

This is the tasty Seaweed that I purchased from our Sushi guys at the Commissary on base.

It is actually quite tasty!  For those that are a bit put off by it, at least try it.  You just might find that you will like it.

The first thing that I did was to soften all of my Cream Cheese, and then place it into a mixing bowl.

I chopped up a medium sized Onion….

…and then chopped some Carrot Sticks, even smaller.

The Seaweed

I drained the Seaweed into a small colander….

then I squeezed it dry into some paper towels.

The then placed it onto a cutting board and chopped it finely.

In the Meantime….

My Cream Cheese had softened, I had added the Onion, Carrots, and the Seaweed…

With Everything Mixed Together, It’s Time To Add My Flavors

Hawaiian Teriyaki Sauce and Toasted Sesame Oil

I added as much as I wanted to.  This is a ‘per-your-personal-tastes’, by the way.

I Then Molded Everything Into 2 Balls.

(One for me, and one to give away.)

It was at this point that I did refrigerate the Cheese Balls for at least a few hours. 

Allowing the flavors to meld together.  You can also do this the night before.

Time To Plate the Cheese Ball

The container that you see above that is housing my cheeseball, is actually two small bowls that I hot glued together.

I loved the bowls when I saw them at the Asian Supermarket.  I would have loved them to have a larger bowl in that set, they didn’t, so I improvised.

I did add my Shiso Leaves around the Cheeseball, and sprinkled some Tuxedo Sesame Seeds on top.

Adding a Few Spring Onions, and Some Snap Peas, Along with my Seaweed and Onion Crackers.

Whenever I think of the Asian cultures, I always think of birds.

It was while I was making the dip/spread above, that this beauty paid a visit to the backyard.

It even ate a few lizards before flying off.

I love it when I get backyard visitors.  Just leave the lizards alone.

Happy Barefoot Spring, and Summer in my Backyard  

And Fall and Winter, but not so much.  🙂

Our Backyard Peach Tree

We spend a lot of time outside in our backyard.  Gardening, Landscaping, Grilling, Picnicing, Playing….

The Dogs love it in the Backyard, so does our Grand-Daughter Isabelle.

There have been some changes this year. 

With Gordon working overseas I have decided to downgrade my massive Herb Garden, (situated on the side of our house) and to move it inside the Lanai Extension.

  A smaller version of it, anyway.  Oh, all the pots and planters are still on the side of the house for when we decide to make it all grand again.  But for now, I don’t need all that.

I really don’t need the massive amount of herbs that I once did.  I am cooking for 1 now.  ME!  And, sometimes I do create large meals that I will share with my daughter, son-in-law and grand-daughter.  But most of the time I am just cooking for me.  So, I created an area where I can harvest my most favorite and used Herbs for my meals.  It’s just more convenient for me.

The larger one is for me and my specific Herbs, and the smaller one for Isabelle and her new found love of gardening.  (Or so I hope!)

My hope is that Isabelle will grow up with an interest in planting something, nurturing it, and watching it grow into something useful and beautiful.  It always starts at a very young age.  Children grow up watching their parents and grandparents, and develop their interests.  My intention isn’t to teach her to become a gardener.  But, my intention is to teach her to be able to grow a few things on her own to help substantiate her future life.  If she chooses to expand on that knowledge, then wonderful!  But, it does start somewhere.

Humid, and Hazy Morning on our Lanai

My Vanda Orchid is thriving in this humidity.

The name of my plant escapes me right now.  But, what I love the most about it is the main resident.

This lovely lizard is living here.  I see it on various leaves every day, and night.

  I’m happy the lizard likes it here.  I consider it my neighbor.  I always look to say “hello’ every day.

March/April, 2025

Every Spring we clean up our backyard that usually gets a bit overgrown during the Winter months here in Florida.  

Lots of clearing, pulling up weeds, thinning Bamboo, and Pressure Washing.

This year was no different.  We did all of that above, and even created a nice garden area inside the Lanai Extension.

The New Planters Project

The Planters I purchased online.  One for me, one for Isabelle.

It’s just a matter of assembling them, purchasing all the potting soil to go in them, followed by the plants and flowers that you choose.

The Planters came with a cloth bottom that goes in the bottom before you place your dirt in it.

You do want to purchase Potting Soil.  Potting Soil goes in pots, other dirt goes on the ground.  Even though these are planters they are still considered pots.

Cute Doggie Planter Project

I found this cute doggie planter, and knew that it would be great for Isabelle and her garden planter.

If you can, place some sort of Tarp down to collect the dirt so the project doesn’t become a huge mess you have to clean up.

I chose these yellow flowers for the doggie because they would look nice, and be great in this medium light part of the Lanai Extension.

My Special Project, Thanks to Brodie

This area of the house was vacant of anything.  We did have a lovely wooden potting bench at one time, but the Florida sun and humidity will ruin all woods eventually.

  It did last about 5 years before we got rid of it. 

 I got the idea that I wanted to place a large cabinet here.  Something with shelves and drawers.  Where I could place pots out of sight that I didn’t use, and to even make it very attractive with nice pots and plants.  Even serving up some foods for when we entertain or eat outside.

I would like to say that I have a great idea for a future project for this area.  See that long window?  That is our Den window, that used to be Brodie’s bedroom.  I think that it would be nice to turn that window into a doorway to allow another backyard exit.  Kind of like a Mother-In-Law Suite.  The rectangular window in the top right of the photo above is the Guest Bathroom.  Also, on the other side of the den is a spare bedroom.  It might be kind of nice to create what would be an entire different wing of our house where someone else could live in that part of the house.  Not that I want to do that.  But, it would add value to our home and would be great for when guests visit.  And, imagine how nice it would be to create an outdoor ‘porch’ of sort there as well?  Kind of like a Mother-In-Law Suite.

I based these on my love of Dirt Cups. 

You know, the dessert made from Chocolate Pudding and Kool-Whip, with Oreo’s and Gummy Worms?  A lot of people would place the delicious dessert in Garden Pots.  I always loved them.

Except mine are based on Lemons and Herbs from my Garden.

The first thing that I did was to make my Lemon Pudding to set overnight.

  You can use as many Lemon Pudding’s as you like.  I used 4!  Just follow the package instructions.

I Put Them All In One Bowl And Covered With Saran Wrap, Place In The Refrigerator

Ingredients:

The Ready Made Lemon Pudding that has been Refrigerated overnight

Tub/Tubs Kool-Whip, Thawed

Some Clear Plastic Cups

Lemon Snap Cookies, Crushed

Isabelle’s Fresh Mint (Garnish)

Micro-Greens

Fresh Lemon Peel, or Grated Lemon Zest (Or Both) Garnish

Lemon Cookie Thins (Garnish)

Mint Malted Milk Balls (Garnish)

Sunflower Seeds, Garnish

My Lemon Pudding I Made the Day Before….

This food project is to be as big or as small as you like it to be.

I spooned about half of the Lemon Pudding into a separate bowl, and then added some Kool-Whip.

You eye-ball this for your own tastes.  Then mix together.

Into each of the plastic cups you want to cover the bottom with the Lemon Snap Cookie Chunky Crumbs.

I Did Add a Few of the Micro-Greens to a Few of the Cups.

My Mother’s Day Dinner

I wanted to add the recipes here because this page is all about my 2025 Mother’s Day so I wanted to keep everything together. 

Even though the recipes really don’t have anything to do with my outdoor projects.  

Baked Valentine Jezebel Ham, and Arabic Potatoes

My Arabic Potatoes

With Gordon working overseas he brings back the most exotic of spices and even a few interesting cookbooks.  It was while I was flipping through one of them that I found a great potato dish.  I loved the presentation, not that I copied it here, and I also loved the flavors.  They just seemed so delicious together.  Although I ignored the presentation, and even changed up the tastes a bit, I am very happy with my rendition of this creation.  I hope you like it too!

Ingredients:

Potatoes:  I used a Combination of Red and Yukon (About 5 Pounds)

Other Ingredients:

Onion (I used a Vidalia Onion, and a few large Shallots.)

1-2 Cups Vegetable Oil, For Frying

10-15 Garlic Cloves, Minced or Crushed

1 t. Cayenne Pepper

1 t. Paprika

Black Garlic Salt, Sprinkled Over as Desired

1/2 t. Turmeric Powder

2 t. Ground Coriander

Freshly Ground Black Pepper, To Taste

Garnish with Fresh Coriander and Micro-Greens

The first thing that you want to do is to have your Potatoes already washed and prepared.

The Cast Iron Skillet is for my Ham, the Wok is for my Potatoes.

Here I am Slicing My Potatoes into Small Bite Sized Chunks….

and then Placing them into a Large Bowl of Water.

(This will help to remove some of the starch.)

My Vidalia Onion, and Two Large Shallots

Cutting Up the Vidalia Onion and Shallots….

Garlic to be Crushed

Having chopped up my Potatoes, and Having them sit into the large bowl full of water, I have now Drained them into 2 separate Colander’s.

Time To Place Some Vegetable Oil Into The Wok, To Sautee The Onion and Shallot

(About a 2-3 T. of the Vegetable Oil, for now)

Sauteing The Shallots and Vidalia Onion in Vegetable Oil

Do this for about 5-7 minutes until it softens a bit…..

Now, Start To Crush Your Garlic Cloves Into the Onion/Shallot Mixture. 

You can either mince them or crush them.

Time To Add More Of The Vegetable Oil Into The Wok, About a 1/4 Cup.

Add All of Your Potatoes To The Wok, Stir Everything Around

It’s Time To Add The Spices As The Potatoes Cook

This is entirely up to your personal tastes.

  To start I did add 1 t. of Cayenne, 1 t. of Paprika, 1/2 t. of Turmeric Powder….

Also, about 2 t. of Coriander and some Freshly Ground Black Pepper to Taste.

Also, I did a Sprinkling of Black Garlic Salt over Top.  Just a Pinch or Two.

Blend Together and Keep Stirring in a Medium-Low Heat

If you need to add more Vegetable Oil, do so.  You don’t want your potatoes sticking to the bottom of the Wok.  If you would like to add a few more of the Spices, do so.  This is all up to your personal tastes. 

Season and Taste as you go!

When the Potatoes are Tender then you know they are done.  Set them aside until ready to eat!

Time For The Ham

This is so easy! 

I simply placed a pre-baked Ham into my Cast Iron Skillet and then turned the oven on 350F.

I did add a little bit of water to the skillet, and then started spooning my Jezebel over the Ham.

I placed the Ham into the oven for about 10 minutes to start, and then removed it to spoon over a few more tablespoons of my Jezebel, and then placed it back into the oven for an additional 10 minutes.

I wanted a caramelization over the Ham. 

Potatoes have been done and are on a very low heat.

Ham is Ready!

It was a very nice dinner for me!

My Italian Sloppy Julie Ann’s Are The Best Thing I Have Ever Eaten In My LIFE!

I kid you not!

This was something that I created based on some of my favorite food ingredients.  I even inserted a few new ones that I just knew would work well here.  Whenever I make something like this I tend to double, and sometimes triple the recipe.  I love to give food as gifts.  I also love to have plenty to freeze for another day.

I have featured my Baked Beans in the past in other blog postings here on the website, but they do still deserve a space here for this meal.

Although they aren’t the main focus, they are a co-starring role and deserve recognition.  I took these Baked Beans to Isabelle’s birthday party which was on the 4th. of July, 2024.  I made the double batch to accommodate a great deal of people invited to the party.

My Pickled Red Onions

Ingredients:

4 Red Onions, Sliced Thinly

8 T. Sugar

6 Cups Apple Cider Vinegar

4 Pinches of Sea Salt

I Don’t Know Why They Call Them Red Onions, They Look Purple To Me  🙂

You will need jars for this project.  Mason Jars work best as they have the lids to secure them.

You want to slice your Red Onions as thin as possible, and place them into the Mason Jars.

In a Medium Sized Bowl add your Sugar, Apple Cider Vinegar and Sea Salt

Mix Together, and Allow the Sugar and Salt to Dissolve

You Will Need A Funnel For This

Pour The Liquid Into The Jars of Red Onions

Like So…..

Secure the Lids and Refrigerate Until Ready to Use

They are an excellent condiment to any July 4th. celebration and can be made ahead of time.

Cooling On The Stove Top

(This Can Also Be Made Ahead Of Time)

Ingredients:

Lots of Italian Sausage:  I have 2, 1 LB. Packages of Jimmy Dean Italian Sausage

I also have 3, 1 LB. Packages of Johnsonville Sweet and Hot Italian Sausage (2 Sweet, 1 Hot)

I Actually Like Mixing Up Different Brands of Sausage To Create A Unique Taste

The Onions

I Am Chopping Up 2 Sweet Onions, and 1 Red Onion

(Not all of this is for my Sloppy Julie Ann’s.  Some of this Onion is for my Baked Beans, and my Potato Dish.)

Place Your Chopped Onions Into Bowls and Set Aside

(This is also something that can be done ahead of time.  You can even refrigerate them a day or two before you need them.)

Garlic Cloves… (A Lot!)  About 27!

Finely Chopped

3 Red Bell Peppers…

2-3 Green Bell Peppers, Chopped

(The Green Bell Peppers Here Are For My Baked Beans.  See Recipe Below)

Time To Start Creating My Sloppy Julie Ann’s

Melting My Butter/Margarine in 2 Saucepans on the Stove Top, on a Medium-High Heat, About 3 T. in Each Pan

(Because I am making a large amount of the meat mixture, I need more than one sauce pan, etc.)

Once The Butter Has Melted, Time To Add Some Red Onion

I Probably Have About 3/4 Cup Red Onion In Each Pot

Stir Around On A Medium-High Heat While It Starts To Soften

My Sweet Onion I Had Chopped Ahead Of Time….

Adding A Handful To Each Sauce Pan To Soften

(Do This For About 5-7 Minutes)

Now That My Onions Have Softened, I Am Adding All The Garlic To Each Pan, Divided, In Order To Soften As Well

Mix Together

You Do Want To Stir This Occasionally So That Nothing Burns

Now That The Onions and Garlic Are Ready…

I’ve Dumped Them All Together Into One Sauce Pan

I Am Now Using The Other Sauce Pan To Soften The Chopped Red Bell Peppers In 2-3 T. Butter/Margarine

Both Sauce Pans Are Ready, So Set Aside

All Of My Sausage

I got Out 2 Wok’s For This

I Placed Half Of The Sausage In One, And The Other Half In The Other Wok

Because This Is Sausage, There Is No Need To Add Any Oil….  For Now, Anyway

Just Use A Wooden Spoon To Break Up The Sausage Into Small Chunks, While Stir Frying Around

This Is A Spatter Screen, But I Also Use It For When I Need To Drain Excess Fat Out Of A Wok Or Skillet

HOT!  HOT!  HOT!!!!!

I Only Used About 2 -3 T. Per Wok! 

This is the Secret Ingredient in Many Great Italian Meals!  Just Be Cautious!

Time To Add The Crushed Tomatoes To Each Wok

28 oz. Each!

(I Added 1, 28 oz. Can in Each Wok)

Just Use Cooking Scissors To Cut Up The Tomatoes In The Wok

My 2 Woks Simmering Away on a Medium-Low Heat

Having Added The Calabrian Peppers

By Now I Have The Stove Top On A Low Heat To Simmer, I Monitor It.  I Want It To Thicken Up.

Adding The Sauteed Red Bell Peppers

Stir Together, And Simmer More…

Now To Add My Red and Sweet Onions With The Garlic, Divide Among Each Pot and Continue To Simmer and Thicken

Look How Beautifully Thick and Caramelized It All Is!

PERFECT!!!!

 

Allow To Cool, Then Spoon Into Containers To Save, Freeze, And To Give Away!

This, Is A Nice Little Gift!

Frying The Bacon…

I Fried An Entire Package of Bacon Here

My Cans of Beans, and My Bacon, Along With the Ketchup

In A Large Bowl Add Your Beans, Once Drained

Now, I Am Adding Some of the Chopped Green Bell Pepper and Chopped Onion To Them

(I had chopped the Green Bell Pepper and Onion in advance from the photos above.)

This is all about personal tastes.  So add as much, or as little as you like.

I ended up transferring my beans from one bowl, to a larger one.

Stir Together

Now It’s Time To Add The Ketchup

As much as you like!  You do want it to be a nice saucy liquid.  Not too runny, but enough of a sauce for when we bake it in the oven so that it doesn’t dry out.

Add as much Freshly Ground Black Pepper as you like, along with as many shakes of Tabasco as you want.

BROWN SUGAR!

Eyeball This!  Add as much as you like!  And Taste As You Go!

Stir Together…

Time To Add The Yellow Mustard

I Just Drizzle What I Think Is Appropriate

I Have Two Glass Casserole Dishes Here With The Beans Ready For The Oven

However, I Covered Them With Saran Wrap, Placed Them Into The Refrigerator, Covered Them, Until…..

It Was Time To Bake Them!

I Put The Oven On 400F, And Placed Them Into The Oven

Into The Oven They Go!  About 45 Minutes Cooking Time.

I Do Have Most Of The Bacon I Cooked Crumbled Up In Them…

I Did Withhold Some To Add On Top

When Done, Remove From The Oven To Cool

Also, Time To Head Out To The Party!

My Italian Potatoes with Tomatoes, and Basil Pesto

RED, WHITE, AND BLUE

I love any version that I have made of this potato dish.  I love potatoes.  This is easy and creative.  Be inspired to make your own version geared towards your family’s personal tastes.  Make it as plain or as elaborate as you wish.  🙂

Ingredients:

Grape Tomatoes (As many as you like.)

Bags of Potatoes (As many as you like.)

I love the Fingerlings, and the Red/White/Blue one’s as well.

You want to wash all of your potatoes well.

Clean them Good as You go

I like to make sure that all the little growth bits are removed and any bad areas of the potatoes.

Cook The Potatoes On The Stove Top Until Tender

I brought the potatoes to a boil, and then lowered the heat as they simmered away. 

They are ready when you can stick a fork into them easily.

When The Potatoes Are Fork Tender, Pour Them Into A Colander to Drain and Cool a Bit

On a Cutting Board cut your Potatoes into smaller chunks.  Removing any bits you don’t want, and then place them into a greased Casserole Dish. 

(Just use a Cooking Oil Spray all around the Casserole Dish.)

Remember my washed Grape Tomatoes?  Add as many as you like!

Time To Add The Spices

I Chose:  And I Eyeballed:

Dried Oregano

Ground Oregano

Garlic Powder

Pizza Palooza (A spice blend.)

Black Garlic Salt

(I pretty much just added as much as I like.  About a 1/2 to 1 teaspoon of each, and about 1/4 t. of the Black Garlic Salt.)

Although I don’t have a photo of it, I chopped several Garlic Cloves and sprinkled them over top.

A Really Nice Extra Virgin Olive Oil

(Drizzle a Nice Amount Overtop)

Stir Everything Together

Turn Your Oven On 350F

I covered the dish with Aluminum Foil because I wanted the casserole to steam, and not burn.

I Baked For 20-25 Minutes

I then removed the casserole…..

…and added some Sea Salt, just a pinch!

I Also Added Some Marinated Mozzarella Cheese, Dotting Them All Around

This is the Olive Oil and Spices left in the Marinated Mozzarella container.  I did drizzle a few Tablespoons over the casserole.

Now, It’s Back Into The Oven For The Cheese To Melt, About 10 Minutes, No Aluminum Foil Needed Here

Right Out Of The Oven To Cool

I Added Some Basil Pesto, A Dollop Actually, To The Potatoes. 

It Increased The Taste Significantly!

Potatoes are always a great side dish. 

These however, were an excellent Italian side dish.

I’ve Missed You, Just Try Not To Be So HOT This Year  🙂

But, If You Do Insist Upon It….

I Have a Few Suggestions For Us All

I have created a nice area here in our backyard.  The Shelving Cabinet is anchored to the wall, and has some protection underneath the house eaves.  Our son Brodie put it together for us.

I purchased the white shelving unit to use for my gardening as well as an area of the backyard to entertain.  I thought it could also make a great Buffet for food.

In Florida, any kind of wooden furniture only has a shelf life here of about 3 – 5 years.  Wood always eventually rots here and there is nothing we can do about it.  Even Teak will only last so long.  What with our heat, humidity, mold, and storms, there is constant cleaning, bleaching and pressure washing.  So, we do try and make the best of it while we have it looking good.

I have however, enjoyed the different ideas that we have had for this area over the years.  And, I’m sure that in a few years we will be doing something totally different.  For example, I think removing that window you see behind me, and replacing it with a door, would be really nice.  Then, we could turn the area you see into some sort of nice patio.  Well, perhaps someday.  But for now, let’s just enjoy what we have.

Julie’s Fruit Cocktails

I had this idea in my head that I wanted to fill our cooler with ice to the very top, and place a few bottles of Bubbly along side a platter of Fruit surrounded by Colorful Flavored Ice Cubes with tongs to fill pretty Pink Wine Glasses with the Ice, Fruit, and Mint Leaves.

The Bubbly is Mango, Peach and Strawberry Moscato

I also have a few other juices, along with some nice round plump juicy grapes.

My idea was to pour the Moscato of your choice into a glass, then add the flavored Ice Cubes, along with some Fruit and Mint.  To me, they are now “Fruit Cocktails.”

The Umbrella Offers Some Shade and Cool

I also had a fan blowing on me, which you cannot see.

I have my special plants and flowers around me. 

I also wanted some of my pretty flowers in the cooler as well with my Fruit Cocktails.

A Toast To Summer

I wanted just a few goodies to eat with the Fruit Cocktails.

A favorite tea sandwich of mine is Pimiento Cheese, and I did use a Carrot Hummus to create another tea sandwich topped with Pimientos.

I was actually quite proud of my Potstickers. 

Usually Gordon is the one that makes them to perfection but I thought mine were pretty good!

Making My Colorful Flavored Ice Cubes

These Flavored Waters are so Delicious!  Gordon used to drink them all the time to take with him to work with his lunches, or even when he would be running errands he would grab one from the fridge in the garage to take with him.  Which is why I thought of these when I wanted to create some nice flavorful and colorful ice cubes for my drinks, above.

I just poured the many flavorful drinks into the ice cube trays you see above…

I then placed them into the freezer to freeze…

And then I placed them into this refrigerator tray when they were ready.

I kept making them as long as I had the flavored water to add to the ice cube trays. 

When Done, I Added Them To The Platter On My Cooler For The Fruit Cocktails.

WELCOME TO FLORIDA

Picture This:

It’s 1966 and you are a young girl of 5.  You are on your way to Florida with your Grand-Parents and Great-Grandparents for a nice stay at a motel on the beach in St. Petersburg.  The car you are riding in is full.  2 adults in the front, and me and 2 adults in the back.  My Grand-Parents vintage blue and silver water cooler is sitting on the floorboard in the backseat at my Grandmother’s feet, along with about 5 or 6 tin cups of different colors.  If we were thirsty, my Grandmother would fill one of the cups with water and pass it to whomever made the request.  It was always the coldest water.  Each cup had a different color, which is how we kept up with who’s was who’s…..

Just a Few Florida Souvenir’s to Take Home

…As we cross the Florida State Line, and see the Florida Welcome Center, we stop to take a bathroom break, drink a lovely cup of complimentary Orange Juice, and browse the many brochures of things to do while in Florida.  I was the one that collected the most.  I loved looking at them while we were in the car still on our way to St. Petersburg.  Granddaddy, who did all the driving, would stretch his legs walking around the Welcome Center.  When it was time to leave we would all pile back into the car, with me sitting in the middle, in the backseat.

I would look at all of the brochures that I had collected and I would ask my Grand-Parents if we could go here….  or there….?

I can’t remember what they would say to me?  But, we always did do a lot while we were in Florida.  So, I don’t think that I lacked in anything at all.

Once we crossed the Florida State Line, there were always gas stations that Granddaddy would pull in to in order to get gas.  There were always Souvenir Stands at these gas stations. There were always gross things like Alligator feet, or even the occasional Alligator head with teeth.  There were also plenty of Alligator teeth for sale.  There were these wooden birds that would dip their beaks into a small bird bath as if getting a drink of water.  There were plenty of bags and cases of Oranges to buy!  There were souvenir mugs, or tea cups, plates, serving trays, and foods like Peanut Brittle, (my favorite), and Salt Water Taffy, (my second favorite).  Lots of nuts, Florida honey, and homemade jams and jelly’s.  Even a nice homemade Orange Jam.  This is what I am basing my Old Florida Jezebel on.  These memories, and the old Florida Souvenir Stands that we would frequent and sometimes purchase something delicious to eat while we were in Florida, or to take back home to Georgia with us to enjoy.

My husband Gordon helped me to put these recipes together.  I created the Florida Jezebel Sauce, but I could not have done some of the recipes without Gordon’s help.  We hope that you will enjoy them, along with this Old Florida Jezebel.  🙂

Canning Equipment and Ingredients

(Along with some tasty Orange Juice to put us in the mood.)  🙂

Before you begin any canning project you not only need to have all of your ingredients that you will need on hand and ready, but you also need to understand what equipment you will need for the project.  In addition to the food ingredients, and all of the jars, lids, and rings, you also need to have many large pots on hand for the job.

Whenever we can anything we always make a lot of it.  Therefore, we use two large pots to cook everything in, along with good spoons for all the stirring that will go on.  You will also need a smaller tall pot to place the lids in so as to sterilize them.  A magnetic ‘lid grabber’ is also essential for that so that your fingers don’t touch the lids and contaminate them.

You will need some kind of large sturdy pot to use once the jars have been filled and need to go through the process of canning.  Some kind of funnel is also important for when you ladle the Jezebel into the jars.  And, also a good ladle.  🙂

You will also need canning tongs in order to place, and remove the jars once they have finished the canning process.

Above, a few of the lids and rings, and the large Pressure Cooker Pot that we use when canning.

The Fresh Florida Oranges will add something nice to our Jezebel as well.

NOTE:  Gordon will explain the Canning Process down in the body where we do the canning of the Orange Jezebel recipe.

Although it really isn’t necessary to wash the rings, I do anyway.  I’m just that way.  But, the rings do get sterilized during the canning process. 

You can place your jars into the dishwasher to sterilize them for canning.

How I Wanted to Decorate My Jars

I specifically chose these jars because they were short and a bit rounded, kind of like an Orange.

I purchased some yellow paint and painted a smiley face on each jar.  I wanted it simple yet perfect!

I wanted my Orange Jezebel jars to be easily recognized for when I needed to find one for a recipe.  After all, I have many different Jezebel’s in the pantry that I have created.

I would love to say that I purposely made some of them a bit sloppy, but no, I’m just not very good at painting.  🙂

But, I do like the fact that they look like something a child would have done, making them look even more homemade and charming.

Ready to Make My Florida Jezebel Sauce (Orange)

Julie’s Jezebel Kitchen

The Ingredients:

(The amount of ingredients that you see in these photos, I never use all of them.  I just like to be prepared.  I did use most of them though.  I detail the precise amounts that I used for this recipe for you though.)

THIS RECIPE IS TO BE GEARED TOWARD YOUR VERY OWN TASTES, SO EXPERIMENT!

(If you like you can halve this recipe if you don’t want to make as much as we did.)

8, 12 oz. Jars of Pineapple Preserves

8-10 Jars, 17 oz. of Apple Jelly (Actually, I used different brands with different ounce amounts.  But, 8-10 jars will work for you regardless.  You can’t screw up this recipe.  You just need to taste it as you go so that it is to your liking.)

(You can substitute a few jars of the Apple Jelly with some Orange Marmalade, I did!)

4, 11 oz. Plochman’s Cuban Style Mustard

3, 9.75 oz. bottles of BookBinders Prepared Horseradish

4 t. of Fine Hawaiian Sea Salt (Or, any that you prefer.)

Florida Sunshine Spice Blend (Several grindings into each pot.)

I also threw in the rest of this Florida Crab and Shrimp Boil that I had, just for good measure.  I had a few ounces of it left.  It worked great too!

And, about 8-10 Oranges, Peeled and De-seeded

Turn the Stove Top Burners to a Medium Heat

My 2 Big Pots to Make My Orange Jezebel In

This is going to take a while so let’s get started!

I start be dividing everything between 2 large pots.

Here are all of my Pineapple Preserves.

I also keep double paper bags in the kitchen to house all of the bottles and things to be recycled.

I like to add the ingredients and allow them to simmer together, allowing everything to meld together.

You Can See The Oranges Added Here

I like to keep everything on a nice simmer, not boiling, just heating up together.

Keep stirring though, to make sure nothing is sticking to the bottom of the pot.

Now, It’s Time to Add the Mustard and the Horseradish

You don’t have to add as much as we did if you don’t want to. 

Taste, to make sure it is to your liking.

I’m showing you the stages of the Jezebel.

I like to take my time with it and enjoy the cooking ritual. 

I’m not one of these that rushes in the kitchen when I make something special.

Time to add the Crab and Shrimp Boil, and the Salts

I pretty much did about 7-8 shakes of the Florida Sunshine Salt Blend in each pot.

And, I added about 3 ounces to each pot of the Fine Hawaiian Sea Salt Blend.

I just distributed the Crab and Shrimp Boil evenly as well.

While This is Boiling Away, Time to Bring out our Canning Equipment

Here you see the Jezebel ingredients boiling away in the pot. This is done to get the sauce thick.  I had added Oranges and Orange Juice that was very juicy and the extra water needed to be boiled out so as to thicken up.

Take a spoonful after some time to see if it is as thin or thick as you like.

When it is to your liking remove the pots from the heat.

Mats, Ladle, and Funnel

You will need to place the jars onto something such as this because the jars will be hot once the Jezebel goes into the jars.  You could use towels if you like.

The pots will take time to cool, you can remove them from the burners and place onto cooling racks if you like.  Or, just allow them to cool down on the stove top with the burners off.

I never know how many exactly that we will need, so I always buy extra.

It’s at this point that Gordon comes into my Jezebel process. 

He is our expert house canner.

Take It Away Gordon….

Here I have a pot of Jezebel Sauce on one burner, and a large pot of almost boiling water next to it on another burner. This is actually a steam pot. Whatever you use must be deep enough to when you place your jars in, they need to be submerged by at least an inch of water.

I am placing the lids with the rubber seal in water that is barely boiling. 

This will loosen up the rubber seal.

Time to Ladle

Using a wide mouth funnel and large ladle, ladle in your Jezebel Sauce into the jar leaving 1 inch of space at the top. This is called the ‘Head Space’ which is the area needed to make a vacuum, sealing your lid to your jar.

Repeat this process for a number of your jars.

Here you can see I filled them all evenly, leaving that 1 inch of head space.

Using a slightly wet paper towel, wipe any excess or residue of the Jezebel Sauce that may have dripped on top of the glass. If not removed, it could cause your jar to not seal and could let contaminants into the sauce causing it to spoil.  Only wiping the top and outside of the jar.

When one jar’s surface is clean, remove a lid from your almost boiling water using your magnet stick.  Only touch the sides of the lid to prevent contamination, creating a sterile environment.

Repeat the step for all the jars.

Here you can see how to remove the jar lid with the magnetic stick, and then place onto the top of an already wiped and cleaned jar.

Now, place a ring onto the jar and tighten slightly. You don’t want to tighten it too tight because the air in the head space needs to be able to escape during the boiling or canning process.

 I am using the Jar Tongs to place the sealed jars into the almost boiling water.  You should start to see bubbles coming out of the jars which in the head space, are leaving … that means the rings aren’t on too tight!

Continue to load the jars into the pot until no more will fit.

Boil the jars for 10-15 min. on a Medium-High heat. Most things that are canned need 15 min. such as pickles, stewed tomatoes, or corn relish. Jezebel sauce is mostly sugar and not easily contaminated so 10 min. is fine. With this much water in the pot, it will take it a while to eventually boil.

 

I am removing the jars after 10 min. of boiling time. You may hear the jar lids start to pop which is a great sound and means the jars have sealed. Some jar lids have a raised button on the top which when sealed will go down, another indication the jar has sealed.

After no more than 10 min. all the jars should be sealed.  Check this by looking at the button seal or if you can press the lid down, they have not sealed.  If this happens, simply remove the ring and lid.  Throw the lid away.  Remove some of the sauce in the jar as you may have not had enough head space to create a seal, then clean the top of the jar again.  Place another lid on top of the jar and gently tighten on another ring.  Now, place it back in the water using your jar tongs, boil for 10 min. then remove! Repeat if necessary.

Here you see all our hard work that will bring us, family and friends some great homemade joy!

Orange Jezebel Chicken with Grilled Oranges and Pineapple,

with Caribbean Rice

Here I am rinsing the chicken to remove any of the bone fragments and blood residue.

I am using my knife to remove any excess fat, then place the Chicken Breasts into a zip lock bag.  Now, add enough of your Orange Jezebel Sauce to coat all the chicken.

Mix the Chicken with the Jezebel Sauce well, then fold the bag over to remove the air, then seal the bag.

Place the Orange Jezebel marinating chicken into a large bowl and place into the refrigerator overnight, or for a few days if desired.

Here you see the Caribbean Rice and the other ingredients for our dinner.

Our Marinated Chicken Still in the Bag, but Resting

I am going to use Coconut Milk instead of water to give the rice more of a Caribbean flavor. 

You could also add some of the Pineapple juice if you wanted.

The rice takes an exact amount of liquid. 

Place the Coconut Milk into a medium sized pot.

Then add your Rice to the pot and turn your heat to medium high using your gill’s side burner…

if you have one.  (I started this rice on our stove top, but moved it to our grill once it got started.)

 I am adding some butter as per the Rice directions.

Give the rice a good stir…

Place your Jezebel marinated chicken into a colander to remove any excess juices.

Like So….

Now open your can of sliced Pineapple, and slice your Naval Orange into ½ inch thick slices.

Prepare your grill by heating it on high for about 5 min. then clean off any residue with your grill brush.  Make sure all your brush bristles are gone from the grill.  I like to keep my grill looking good and ready to use.

Turn your gill down to Medium Heat and add your Chicken to the grill.  Place it down and leave it still to get those great grill marks.  Then, add more of the Jezebel sauce.

Since I am touching the chicken with the brush, I have to use all the Jezebel sauce from this jar… easy to do as it tastes so good!

After about 8 min. or so, flip the chicken over onto a new hot spot on the grill.  Add your Orange slices as well.  When they are done, you can place them on the grill shelf.  See the nice grill marks… that is from not moving them around on your grill.

Now it is time to add the Pineapple Slices to the grill and move any chicken that is mostly done on the shelf if needed.

Here I am cooking the rice on my side burner while finishing up the grilling.

Place your chicken on a large platter as shown to let it rest for at least 10 min. before slicing into it, as you don’t want those flowing juices to run out.

Now, I have added my grilled fruit to the platter.  This looks great this way as well.

On another platter, I am adding the Caribbean Rice, then spreading it all around.

Layer your ingredients, being sure they are all seen as they all look great!

An Old Florida Orange Jezebel Strata

We Have Two Florida Jezebel Strata’s

(We Will Explain As We Go)

——————————————————————————–

Ingredients:

~1/2 Cup Caramel Sauce

Or

~1/2 Cup Splenda Brown Sugar with 4 Tbsp. Butter

The Main Ingredients in both:

2 Packages Cream Cheese – softened

~1/2 Cup Florida Jezebel Sauce to be mixed with the Cream Cheese

And

~1/4 Cup Florida Jezebel Sauce to top the Strata – See Recipe Above

2 Loafs of Good Bread – Italian Ciabatta works great!

10 Eggs (This is for 2 Casseroles, one large, one small.)

1/2 Tbsp. Vanilla Extract

1 Tbsp. Ground Cinnamon

~4 Cups Milk

1 Tbsp. Orange Dried Peel

For the Garnish:

Naval Orange Zest – Fresh

1 Naval Orange – Peeled and Segmented

A few cooked Bacon Strips for each person as a breakfast side

Powdered Sugar – this would also go nice lightly sprinkled on after the Strata is baked.

For this recipe we had two thoughts… one Strata would be made with a Caramel base (Ice Cream Topping) and the other would have a Brown Sugar and Butter base.  Both were amazing!

Our Two Casserole Dishes, and our Mixing Bowl and Whisk

For the Caramel based recipe, simply spread a good amount of Caramel Sauce onto the base of your casserole dish as shown.  You just want to coat the bottom.

For the Brown Sugar version, simply add your butter then the Brown Sugar to the casserole dish and place it in a 350’F oven for about 5 min. just long enough to melt the butter.

Like So….

While that is happening, add your Cream Cheese to a medium sized bowl.

Then add your Orange Jezebel Sauce… you can add a little or a lot! 

It’s up to you!

Mix the ingredients well using a rubber spatula.

Now that the Brown Sugar and Butter have melted nicely, remove it from the oven and set it aside. 

Turn off your oven for now.

Here are both casserole dishes ready to be filled.

Slice your crusty bread into ¾ to 1-inch slices as shown.

Using your spatula, spread some of your Cream Cheese and Orange Jezebel mixture between the two slices of bread, basically making a sandwich as shown.

Continue to do this with all the bread slices.

Making the Jezebel Sandwiches…

Then slice the sandwiches on the diagonal as shown. 

Doing this will spread the sandwiches out so they reach the sides of the casserole dish.

Place your cut Cream Cheese sandwiches into the casserole dish as shown..

You want to place them cut size down.

Fill the casserole dish with as many slices as you can.

For The Next One…

Slice it the same way you did the first one.

Make your Cream Cheese sandwiches as you did previously…

Placing them cut sized down onto the Caramel, as shown.

Be sure to fill in all the spaces and gaps.

Both are Resting and Ready for the Oven

The Egg Mixture

Here is a great picture of the next set of ingredients you will need.

Add your eggs to a medium sized bowl.

Tip: Crack your eggs on a flat surface, this will prevent eggshells from being forced into your egg if you use the pointed side of a bowl.

Whisk the eggs until combined.

 

Now, add your Vanilla Extract…

Then your Ground Cinnamon.

Whisk the ingredients again.

Now add your Milk and whisk once more. 

Here you have basically made a common base for making French Toast!

I thought some Dried Orange Peel would be nice as it has a concentrated flavor.

Whisk the ingredients one last time.

Pour your wet mixture evenly into both casserole dishes.

Let them sit for about 10 minutes or until the bread absorbs all the milk and other ingredients.

Turn your oven to 350’F and bake your Strata’s for about 30 min. or until the milk and egg mixture are solid.  Meaning, there is little to no liquid in the bottom of the casserole dish.

When fully baked, brush on more of your amazing Orange Jezebel Sauce to the top of the Strata’s.

A Beautiful Close-Up!

Here we will segment a Naval Orange.

Begin by slicing off both ends of the Orange,

then slice away the orange peel using a curving motion to your slice.

Continue to remove the white pith of the orange. 

Then slice between the segments to segment the orange slices. 

Simply follow the thin white lines of the orange with your knife to the center.

Garnish with your orange segments as shown.

Almost time to plate the Strata!

Pictured is an old-fashioned way to remove the zest of your orange.

Add some of your Fresh Orange Zest to the top of the Strata’s.

You could also add a sprinkling of Powdered Sugar here if you like!

Remove a good section of the Strata and place it on your plate, add some more of the amazing Orange Jezebel Sauce and some nicely cooked Bacon.  The saltiness of the bacon goes well with this dish.

There you have it…. Time to dig in!

Orange Jezebel Cocktail Sausages

This is an easy and delicious recipe. 

It’s just 2 ingredients:

Cocktail Sausages

and,

My Orange Jezebel Sauce

My Orange Jezebel and 4 Packs of Cocktail Sausages

You may use any sausages that you like.  These are perfect for this recipe.  They are Hillshire Farm Lit’l Smokies.  I first drain them into a colander to remove any excess liquid.

Because I’m making 4 packs of the sausages, I am placing 2 packs of sausages in each baggie, using about 1 jar per bag.

I start marinating these about 2-3 days before I will be cooking them.  Just place them in some kind of plastic container in your fridge just in case the bag may leak.  You just want to massage them around in the bag to make sure they are covered with the sauce.

When I am ready to cook them, I dump the entire bags of sausages into a colander to drain, then I place them into an un-greased casserole dish.  I do not rinse them!

I then open up a new jar of my Orange Jezebel and add that to the sausages, making sure they are coated nicely with the sauce.

I then just stir them together…

…and then I place them into a 400F oven for about 35-40 minutes. 

I do take them out after about 20 minutes or so just to stir them around.

You know they are done when they plump up. 

I also love some of the charring as that is the sausages caramelizing.

Red Pepper Relish

Start by heating a large sauté pan to medium heat, then spread some of the Orange Jezebel over one side of each slice of bread.

Place the bread, Jezebel side down into the sauté pan.

No butter is needed as this is a non-stick pan.

Cook the bread so that the Jezebel sauce is slightly browned and very sticky.  This will take a few minutes.  Then flip the bread over and brown the other side.

Here you can see the bread is nicely browned.  Place the Jezebel side of the bread on the outside of the sandwich.  This will make them “Finger Lickin’ Good”…  I know that phrase was already taken, but it applies to this as well.

Spread a little more of the Jezebel Sauce over one side of the bread for good measure.

Then add your Mustard to the other side as shown.

Slice your Bell Pepper as shown producing nice wide slices.

One of our Bell Peppers was Pregnant with TWINS!  🙂

Now add some Sweet Honey Ham slices.

Then add your Baby Swiss Cheese.

Here is the Red Pepper Relish we used… it provided some nice sweet heat.

Spread the Red Pepper Relish on top of the cheese.

Close the sandwich and slice!

Nice!

Now for another variation…Spread your Orange Jezebel over both slices of bread and place the Jezebel side down in the sauté pan as you did previously.

Cook until slightly browned.

As I was waiting, I placed some Cuban Mustard and Orange Jezebel on the other side of the bread.

Now add your Provolone and Bell Pepper slices.

Then I am adding some of our leftover Turkey.

The Turkey Pastrami and Red Pepper Relish goes on next.

Close up the sandwich and cook for another minute or two, just until the bread is nicely browned as shown.

Remove from the pan…

Slice diagonally as shown for a great presentation.

You can also use your Toaster:

Toast the bread as shown.

Place the toasted bread on a plate…

Then add your Orange Jezebel and Cuban Mustard to the inside of the sandwich.

Now add your Bell Pepper, Baby Swiss, and Turkey Pastrami…

Then add your Red Pepper Relish, a slice or two of the Sweet Honey Ham, Provolone Cheese, and some Black Pepper.

Join the sandwich together and slice on the diagonal!

Leftover Spatchcock Turkey

Using the leftover meat, we made pressed sandwiches using Julie’s Florida Jezebel Sauce… absolutely delicious!

To start, use some good crusty bread. 

These were perfect in size and thickness.

I love Swiss Cheese so we shredded a good amount of it.

I love to use our cast iron skillets as they hold the heat well and are great for frying.  I placed about 1 Tbsp. of olive oil into the pan and spread it around using a paper towel and turned up the temperature to medium.

Slice the bread in half then spread some grainy mustard and Julie’s Florida Jezebel Sauce on each slice.

Add your sliced turkey breast and grated Swiss piled high as shown.

Then we added some fresh Spinach leaves to the top of the cheese and used the top section of the bread to close the sandwich.

Place the sandwich off center in the pan as shown.

I quickly made another sandwich…

and placed it next to the one in the pan.

I then placed another cast iron skillet on top of the sandwiches…

then placed another as shown to increase the weight. 

I also pressed down on the sandwiches some to help them press evenly.

I am making another sandwich as I am sure they will be great!

After a few minutes, remove the pans and using a spatula turn the sandwiches over and cook for another few minutes until well browned and crusty.

This is our first project for this website page. 

We do plan on bringing you more.

What you see here is the side of our house.  There was grass here at one time but our yard guys ruined it all.  This part of our yard was always dark, and muddy, and wet.  What grass we had here was no longer coming back.  Therefore, we decided to hire someone to pave this area.  We wanted to turn it into a patio area.

We have two gates to our front gate.  That is how I wanted it.  I wanted our A/C and Trash and Recycling/Yard Debris Pick Up containers, behind the first gate.  The second gate would close off those containers from our view.  And, the side of our house, we would keep our canoe and kayaks.

The pavers on the side of the house look great!

I have my post hole digger, and buckets ready for the project.

You can see the AC drainage pipe. Mine came apart making it easy for me to remove and dig the

hole. It only needs to be as deep as the bucket you are using.

I am going to use some of this weed cloth inside the bucket to prevent and weeds from growing up

through the bottom.

I used a large drill bit to poke holes in the bottom of the bucket.

Place your weed preventing material in the bottom of the bucket.

You can see the pipe goes almost to the center of the bucket. The bucket’s rim is just above the

level of the dirt. This will prevent the surrounding dirt from entering.

Fill the bucket almost full with rocks. I like the white ones.

I then used some decorative stones to surround the bucket and you are done!

I think it looks great and was a simple way to drain your AC’s excess water.  Try this DIY project as I believe most everyone can do it.

Our New Air Conditioner, and Gordon’s A/C Project

This is an easy project that can be completed in about an hour or less. Completing this will let your AC unit drain in one defined spot and not just getting a vast area of your lawn soaked and muddy. This was my issue in that before we had the pavers in place, our lawn was constantly being soaked which turned into a muddy mess.

Whenever I walked by the AC unit, my feet would sink down a few inches in the grass. I got the idea from my sprinkler guy and since we were going to have the pavers installed, I thought it would be a good idea. Also, once the pavers were installed this project helped to keep the area clean and dry.

To complete the project, you will need a 5-gallon bucket, a bag of rocks, a drill with a half inch bit, a hack saw, and a post hole digger.

Start by measuring straight out from your drain line about 2 ft. or at least in an area not to obstruct your path around your A/C unit. Move your drain line out of the way then place the bucket in the area on top of the dirt which gives you an imprint to use as a guide. Dig a hole using the post hole digger about deeper than the depth of the bucket and just as wide. Check for a good seal around the bucket when done ensuring the drain line is not touching the bucket when moved back over top of it.

Now, drill some holes in the bottom of the bucket to let the water escape easily.

Fill your bucket with the rocks about ¾ the way up. Place your bucket in the hole. Cut your drain line with the hack saw so it ends in the center of your bucket. Move the drain line in place and you are done. I took it a step further and placed some ornate rocks around the bucket as shown.

Try this easy DIY project making what was something ugly to something beautiful.

MAINTENANCE

77

Although a bit hard to see, the Temp in our House is 77.

We keep it on a steady 75 at all times.  So, when it starts to get hotter, then there is something wrong with the A/C.

Usually, it is a simple fix.

This Vacuum can be purchased at any Home Depot or Lowe’s.

You simply place the nozzle over the pipe and turn the vacuum on.  It will then suck out the gunk,

thus unstopping the A/C.

The A/C will start working normally once you do this.

Imagine all the money you are saving by doing this yourself and not having to call in a professional?  Trust me, the vacuum is worth it!

Happy Independence Day!

 

On this particular July 4th. we wanted to do something a bit different.

We always seemed to eat the same foods each year, over and over again.  Those classic and traditional foods are wonderful, but they only represented one cultural side of our country.  We wanted to imagine 4th. foods that another residential culture of our country may create.  Which is why this meal is something similar, yet different.

Our Toasted Asian Steamed Buns with a Fried Egg, Swiss Cheese, and Tocino Pork.

Look for the Tocino Pork in the Frozen Foods Asian section of your local grocery stores.

(I just wanted to add that we don’t follow the package directions on cooking this delicious pork.  We place it on a baking sheet and put it in a 400F oven for about 15 minutes, each side.  I do advise that you watch to make sure it is to your desired doneness.)

This is actually an extension of our 4th.  After all, we have that great Asian Coleslaw leftovers with Hot Chinese Mustard, and the great pickles that are leftover.

We have two sets of sausages here.  The long ones are the best I have ever tasted!  They are Asian.  I can’t even remember the name of them.  We bought them at our Asian Supermarket though.  I promise that I will get the name of them soon and tell you here.  The other is a Sweet and Smokey.  Both are delicious!

Making The Char Siu Pork For The 4th.

(A different kind of BBQ Sandwich.)

First Step: Making the Marinade

Make this recipe twice as you will use it as a marinade, and as a glaze when broiling the meat.

Ingredients:

THE MARINADE

(This is what you want to double.)

3 Tbsp. Dark Brown Sugar

1/4 Cup Honey

1/4 Cup Hoisin Sauce

2 Tbsp. Soy Sauce

2 Tbsp. Chinese Five Spice Powder

1 Tbsp. Vegetable Oil

2 Tbsp. Molasses

1 Tbsp. Chinese Rice Cooking Wine

1 Tbsp. Oyster Sauce

1/4 tsp. White Pepper

1/4 tsp. Powdered Ginger

2 Tbsp. Sesame Oil

2 Tbsp. Red Bean Curd

~15 Drops Red Food Coloring – Add more until you get the desired color

For Cooking The Meat

  2 Tbsp. Vegetable Oil for the Dutch Oven

1/2 Yellow Onion – Small Dice

5 Garlic Cloves-Minced

Fresh Ginger – (About the size of your thumb) Minced

8 1/4 Lbs. Pork Shoulder/Butt

This mixture will stain your clothes, so wear an apron!

Using a large bowl, add your ingredient starting with the Brown Sugar.

TIP: Before measuring out your honey, spray the measuring cup with a little cooking oil.  This will ensure the honey doesn’t stick to it.  Add your honey to the bowl.

This brand of Hoisin Sauce is our favorite as it really tastes good.  Adding it to the bowl.

Here is how the ingredients look so far!

Now, add your Soy Sauce.  This is again our favorite brand as it is made in Hawaii.  It isn’t too salty, and simply tastes good, and doesn’t have a winy taste like Kikkoman does.  I never use Kikkoman.

Then add your Chinese Five Spice to the mixture.

Then add 1 Tbsp. Vegetable Oil.

Then add your Molasses…

Still looking good!

Then add your Chinese Rice Cooking Wine to the bowl.

Now your Oyster Sauce.  This too is another good tasting brand I like to use.

Add your Ground White Pepper to the mixture.

And then your Powdered Ginger.

And now your Sesame Oil.

And then your Red Bean Curd. 

This ingredient really gives the marinade that Char Siu flavoring.

Delicious Goo!

Use a whisk to mix all the ingredients well.

This recipe will give you about 1 1/2 Cups of marinade.  Taste the mixture and see if you like it, adding any more of any one ingredient to adjust the seasoning to your liking.  I loved the taste, so I poured it into a seal-able container for later use.  This will also let the ingredients blend together.  Again, make this recipe twice as you will use it as a marinade and as a glaze when broiling the meat shown later.

Pictured above are the ingredients (Onion, Garlic, and Ginger) I will add to the meat and marinade when I begin to cook them.

Here, I am getting those mentioned ingredients ready to be minced.

The marinade above I made the day before and kept in the refrigerator overnight.

So, the following day I was ready to add the Red Food Coloring.  If you added it before when tasting it, your tongue would become very red.

I placed a few drops in the container, then I add the marinade to a bowl and add a few more drops until I got the color I wanted.

Whisk the ingredients well. 

You can see the beautiful red I achieved on the side of the bowl.

Slice your onion in half then into thin slices as shown.

Slice the onion into a small dice.

Here, you can purchase a ready made packet of the sauce if you wanted to, but making your own is so much better.

TIP: Wet your knife before slicing garlic to keep the slices from sticking so much to your blade.

Slice, then mince your Garlic as shown.

TIP: Use a spoon to remove the outer ginger’s skin.  Then slice your ginger and mince it.

Set Aside The Onion, Garlic and Ginger…..

Here is the Pork Shoulder/Butt that I used.

Remove the meat from the packaging and rinse with water to clean off the old blood and bone fragments.

The Pork Shoulder has a fat cap on it which needs to be mostly removed.  Yes, fat is flavor, but not in this case as we want mainly the meat.  Trust me, there is still plenty of fat in the cut of meat.

Here is the fat I cut off.

Now, slice the meat into smaller sections for easier marinating and then cooking.

Here you can see there is still plenty of fat within the meat.

Place the meat into strong freezer bags and pour the marinade evenly over it as shown.

With the bags sealed, mix the marinade around the meat with your hands in order to coat.  Open the bag back up, move the meat to the bottom of the bag, then fold over the top of the bag removing the air.  Seal the bag and lift it up… your bag should be basically vacuumed sealed as shown in the above left picture.  Doing this will help to push the marinade into the meat.  Let the meat marinade in the refrigerator in a large bowl for at least 24 hours or up to 48 hours.  The bowl will prevent any leaking bag from messing up your refrigerator.

The Following Day

We let the pork marinate for 24 hours overnight.

We split our marinaded cuts of pork between our slow cooker and our cast-iron Dutch oven.

Place half the pork in the Slow Cooker as shown…

…and sprinkle half of your chopped onion, garlic, and ginger over the meat.

Add about half a cup of water over the meat to help the pork braise in the juices.

Turn the Slow Cooker on High for Four hours.

——————————————————————-

Now For The Dutch Oven

Turn Your Oven to 400F

Pour about 2 Tbsp. Vegetable Oil into the Dutch oven to keep the meat from sticking.

Then just as before …

…add the remaining onion, garlic, and ginger to the pork.

Add about 1/2 Cup of water to the Dutch Oven to braise the meat.

Now place into the 400F oven for about 4 hours. 

You can check the meat before then to make sure it is cooking nicely.

The Slow Cooker

Here, you can see the meat is cooking in the slow cooker.

When the four hours are done, the meat will look like this.

Remove the meat with tongs and drain in a colander.

Time to Char the Meat

Place a cooling rack on a sheet pan lined with aluminum foil.  Place the cooked chunks of meat on top of the cooling rack.

Now Turn Your Broiler to High

Using your broiler, cook the meat until just a little char begins, and remove the meat from the oven.

Brush your marinade over the meat until every piece is covered.

(Remember, you made 2 batches of the marinade earlier.  One to marinate and cook the meat in, and now the 2nd. batch to use as a sauce to brush on to the meat like a BBQ sauce.)

Coat Very Well

Place your meat back under the broiler and cook until it starts to brown.

You can see the meat turning that nice char color.

Turn the meat over …

…and brush this side with the marinade, then broil the meat again until is browns.

When it is cooked to your desired look, set it aside to cool.

Dutch Oven Pork is Ready

When cooked it will look like this!

Here is the Dutch Oven alongside the pot and steamer we will use later for our Steamed Buns.

Remove the meat with tongs and drain in a colander.

You want to do the same thing we did above.  This is just another way to cook the pork.  Some people prefer a slow cooker/crock pot, and other’s prefer oven cooking.  We like both!

Again, brush your marinade over all the meat.

Broil the meat on both sides as before… it looks great!

Making The Dough

Now, we are going to make the dough for the Char Su Pork Sandwiches.

Ingredients:

1 Tbsp. Rapid Rise Instant Yeast

6 Cups Flour – sifted

~1 1/2 Tbsp. Peanut Oil

1/4 Cup Turbinado Sugar

4 tsp. Baking Powder

3/4 tsp. Salt

2 Cups Water at a temperature just a few degrees less than 110′ F

~1 Tbsp. Sesame Oil

A digital thermometer is best to check the temperature of the water.

Here I am using the microwave to heat the water.

Measure the flour well.

Sift the flour into a larger bowl to remove any clumps and makes a lighter dough.

Gently move the sifter back and forth to sift the flour.

Here you can see how much lighter the flour is after being sifted.

Add your sugar to the bowl.

Add your baking powder and then your Peanut Oil to the bowl.

When your water is a temperature, add it to the bowl.

Use your clean hands to mix all the ingredients together as shown.

In just a short time, the dough will come together.  Kneed the dough for a while to build the gluten within the dough.  You can tell when it is done when the dough feels soft to the touch and is very elastic.

Using the same bowl, add a tablespoon or more of Sesame Oil around the bowl and all over the dough.  This is done to allow the dough to rise without resistance in the bowl.  You could use any type of oil, but I chose sesame oil to impart the Asian flavor into the dough.

Here you can see I am using the dough to help move the oil around the bowl.  Use plastic wrap to cover the bowl tightly and place the dough in a warm spot for about an hour, or until it doubles in size.

After the dough has risen, take some flour in your hand and toss it over a clean working surface.

Here is the dough… soft and spongy.

I formed the dough into a long round shape.

Now, evenly slice the dough into sections.

Place the dough sections onto sheet pans and cover with plastic wrap.  Let the dough rise again for about an hour.

Here is our large pot of boiling water and our bamboo steamer

Place your dough rounds onto parchment paper squares within a section of the steamer.

Do this for all the sections of your steamer.

When your water is boiling, Place the bamboo steamer on top of the pot of boiling water.

Steam the buns for about 10 min. or until they are fully cooked.  You can see I only placed three in each section as they grew in sized during the cooking process.  Use a sharp knife to slice the buns in half to then load up with your Char Siu Pork!

Oriental HOT Mustard

(Comes in powder, just add water.)

A nice condiment for our sandwiches.

Our Asian Slaw

Ingredients:

1/2 Savoy Cabbage – thinly sliced

1/2 Red Cabbage – thinly sliced

1 Cup Carrot Sticks

1/2 Cup Crinkle Cut Carrots

1/2 Cup Red Onions – sliced thinly

2 Green Onions – sliced

1 Anaheim Pepper

Snow Peas

1 Can Water Chestnuts

Sesame Oil

Mirin Sweet Cooking Rice Seasoning

Start by cutting the Savoy Cabbage in half, then slice diagonally down the sides of the core as shown.

Remove the core…

then slice the cabbage thinly as shown.

Do the same procedure with the Red Cabbage and add both the Red and Savoy Cabbage to a large bowl.

Add your Red Onions and Carrot Sticks to the bowl and mix all the ingredients with you hands.

Here I had to transfer the ingredients to a larger bowl.

Slice the root ends of the Green Onions off, then slice as many of the Green Onions as you need.

Add the Green Onions and Crinkle Cut Carrots to the bowl.

Slice your Anaheim Pepper in half and remove the seeds and stem, then slice the pepper as shown.

Add the Anaheim Pepper to the bowl with the other ingredients.

The Vinaigrette For The Asian Slaw

Ingredients:

4 Garlic Cloves – minced

2 small Shallots – sliced thinly

2 Tbsp. Red Onion – sliced thinly

1 Tbsp. Rice Vinegar

1 Tbsp. “Aloha Brand” Soy Sauce

1 tsp. Fish Sauce

Juice of 2 Limes

~6 Tbsp. Peanut Oil

1/4 Cup Sugar in the Raw

1/2 tsp. Crushed Red Pepper Flakes

1 Tbsp. Aji-Mirin – Sweet Cooking Rice Seasoning

2 Tbsp. Sesame Oil

Fresh Ground Pepper to taste

1 Tbsp. Sugar in the Raw Syrup

1/4 Cup Sweet Soy Sauce

Sesame Seeds to your Liking

Peel your Shallots and Garlic.

Slice the Garlic as seen…

and add them to a medium sized jar with a lid.

Slice the Red Onions and Shallots thinly as shown…

and add them to the jar.

Now add your Rice Vinegar…

Soy Sauce and Fish Sauce to the jar. 

This recipe needs no additional salt as the Soy and Fish sauces are salty enough.

Now add your Lime Juice …

then your Peanut Oil to the jar.

Add your “Carefully Measured” sugar to the jar.  If you don’t have this type of sugar, you could add a Sweet Soy, Honey, Brown Sugar, White Sugar or any number of other sweeteners.

Add your Red Pepper Flakes to give the Vinaigrette a little heat.

I like to add this Mirin to a number of my Asian dishes which gives them a nice sweetness.

Sesame Oil is a must for most all Asian inspired things.

Add your freshly ground Black Pepper to the jar…

Place the lid on tightly and shake the jar to mix the ingredients well.  Taste the Vinaigrette and add any additional seasoning you like.  I felt it needed a little more sweetness…

So I got some Sugar in the Raw Syrup….

then also added some Sweet Soy Sauce.  This sauce is so sweet you could add it to your French Toast or Pancakes and nobody would be able to tell the difference. 

Taste the Vinaigrette again until you get exactly the flavor the desire.

Shake the jar just before you add it to the Coleslaw.

Add some Sesame Seeds to give the Coleslaw even more Asian flavor!

Mix the Vinaigrette into the Cole Slaw with some decorative chop sticks and you are done!

Two Bok Choy Pho Vietnamese Noodle Soups

Get the creative juices flowing!  This soup is going to be all YOU!

Gordon is going to outline two nice recipes for making your own PHO. 

You will control the amounts that you like and that suit your tastes.  Gordon is just going to get you started.

A lot of the ingredients are already in the vegetable bins in your refrigerator.

These very good soups are great to make when you have a hodge-podge of vegetables that are leftover from other recipes.  I made two as I wanted them to have varying looks and tastes.  Basically, you heat some water and quickly add your vegetables, seasonings, noodles, and meats.  Below are most of the ingredients I used to give you an idea to be creative with your own Pho.  The amount of water needed will depend on the amount of ingredients you use as there should by about 85 percent ingredients to 15 percent liquid.  Add the ingredients by how fast they cook.  Root vegetables like carrots should be first, then onions, mushrooms, noodles, and green leafy vegetables are last.  The noodles I used cook very fast.  I didn’t use any meat but it would most likely be cooked before using them.  They can all be added very quickly so the vegetables don’t overcook.

Ingredients:

(Gordon’s Suggestions, You Decide)

3 Cups Chicken Broth per pot – add more if needed

Carrot Sticks or Wedges – I used wedges, multi-colored carrots, and carrot sticks

Red Onion – sliced thinly or chopped

Yellow Chives – sliced thinly or chopped into small pieces

Lemon Grass – sliced in half 

Peeled and Sliced Ginger, as much as you like

Asparagus

Snow Peas

Oyster, Baby Bella, Ling Zhi Mushrooms

Shredded Zucchini

High Protein Tofu – sliced into diced sized pieces

Stir Fry and Pad Thai Noodle pkgs.

Bok Choy

1/4 Cup per pot of Soy Sauce

2 T. of Fish Sauce per pot

Water Chestnuts

Red Chili Pepper Flakes to taste

Green Onions – sliced on the bias

1-2 T. Dried Bonito Flakes

Seaweed Garnish

Garnish with Sesame Seeds

Here we have all the washed vegetables we are going to use all laid out and ready.

Start by adding your Chicken Broth to each pot and turn to medium heat.  Then slice off the stiff woody ends of your Asparagus and add to one pot the sliced Orange Carrot rounds.

Here I am slicing the Rainbow Carrots in half.

Add the sliced carrots into the other pot.

Here are the Dried Bonito Flakes we used. 

This gives the soup a great depth of flavor. 

Although hard to see, this package has smaller packets inside of it.  You will only need to use one packet in the two pots we have cooking.  Not one packet per pot.  One packet halved into each pot.

Here is the Lemon Grass which I sliced in half to release the flavor.

Add a half slice of the Lemon Grass to each pot.

Add water or more broth to the pot as needed.

Here I peeled and sliced a Red Onion in half then thinly cut off some slices.

Add a few Red Onion slices to one of the pots.

To add some salt and great flavor, add some Soy Sauce to each pot. 

We love the Aloha Brand

Here I am peeling some fresh Garlic for the soup.

Slice it thinly or thickly to your tastes and add some to each pot.

Here are some Yellow Chives which I am slicing into small sized pieces.

Add some of your Orange Stick Carrots to one pot and Yellow Chives to both of the pots.

Here you can see the flavorful broth in each pot.

GINGER

Here is the best tool to use to remove the outer skin of the Ginger.

Here I am using the edge of the spoon to peel off the Ginger’s skin. 

Now, slice the Ginger into thin wedges and add them to a pot.

Here are the Bonito Flakes and the Noodles we used. 

You can add these near the end as they don’t take long to cook.

Here I have two pots on a slow boil with the different types of Carrots and Red Onions.

Once the water is boiling, you can turn the temperature down to a medium heat as you don’t want to overcook the ingredients.

Here I am adding some Asparagus to one of the pots.

I then added some Snow Peas to the other pot.

Here I am adding some Mushrooms to both pots.

This is the Tofu we used.

I sliced the Tofu in half then sliced it into diced size pieces.

Add the Tofu to one of the pots.

Here are some of the other Mushrooms I found at our local Asian Supermarket.

Give them a good cleaning and add them to the pot.

Now for the Bok Choy.  Slice it in half lengthwise, then add them to the pot.

I brought the temperature up to a slight boil in order to cook the noodles which will go in next.

Here I am tasting the soups to see how much of the seasoning I will need. 

We go through lots of spoons when we cook.  🙂

Pad Thai Rice Stick Noodles

I thought they were a little much so…

I sliced them in half and added them to each pot.

Here are I am adding some Bonito Flakes which are a great addition to most any soup. 

Bonito Flakes are commonly used to make Japanese dashi broth, but they also go nicely in this soup.

(Remember, half the packet per pot.)

Now for some Water Chestnuts.

Time to add the seasonings and a touch more of Aloha Soy Sauce. 

I like to taste the soup as I go.

For a little heat we added these Chinese Chili Pepper Flakes. 

These are an Asian brand but you can use regular hot pepper flakes.

Slice your Green Onions on the bias to give them a more fanciful look.

Fish Sauce is a nice salty flavor for this soup as a little goes a long way. 

Again, taste as you go.

As you can see, all the above ingredients need to go in quickly so you don’t over cook the vegetables. 

But if you do overcook them, they will just improve your soup as they release their flavor.

We used some Seaweed to garnish the soup which I thought was a nice touch to this Pho Soup. 

Also a sprinkling of Sesame Seeds.

Our Toasted Asian Steamed Buns with a Fried Egg, Swiss Cheese, and Tocino Pork.

Look for the Tocino Pork in the Frozen Foods Asian section of your local grocery stores.

(I just wanted to add that we don’t follow the package directions on cooking this delicious pork.  We place it on a baking sheet and put it in a 400F oven for about 15 minutes, each side.  I do advise that you watch to make sure it is to your desired doneness.)

Welcome to our Wonderland

The retaining wall is in bad shape due to some overgrowth and tree roots, which are making the wall lopsided. This wall is quite a few years old and this is what happens sometimes. I built this wall back in 2008.

We also wanted to have pavers put in this side of the yard surrounding the wall, so it
was a great time for a repair. I will show you my step-by-step processes to get it to looking

brand new again.

One of the first steps is to clean out the area of the unneeded items.

These stones will be used on the other side of the house for a walkway in front of our Herb Garden.

In the photo above, I am using a small shovel to pry the stones up being careful not to damage them.

 I will then move them to a location out of the way.

All the stones in front of the wall have now been removed.

The next few pictures show the reasons I am doing the repair to the wall.

Here you can see where the tree roots are slightly lifting up the wall. I had cemented down the
capstones, but over the years and after some bad weather and rain, the cement tends to give way.

Now it is time to break the wall down by removing the capstones first, and then the rest of the stones.

Here you can see I have begun to remove the stones in the wall. I kept them in the area from which they

came from, as they would likely go back in the same location.  This makes everything a bit easier for you when it comes to rebuilding the wall.

Just understand that these blocks can be quite heavy.

  It might be a good idea to look into purchasing a back brace.

Use a good pair of gloves as the blocks will tear up your hands.

 I am getting to the end of the tear down phase of this project.

You can see some of the capstones are still adhered to the stones. I will use a hammer and chisel

to separate them later.

Now here is a surprise, this is a Skink’s nest. You can see she is still guarding the nest and the

clutch of eggs.

I am trying to be very careful so as not to disturb them much. I placed them in a bucket and will
replace them back to the same location when I am done. I couldn’t catch the Skink, so I hope she

will find them later.

Here is something else interesting that I found.

Now that all the blocks have been removed, it is time to lay down the paver base in about a one
inch thick layer. Doing this will help prevent the stones from sinking into the dirt.

I am trying to use the same location the pavers were in, but I also have to ensure I either remove
the root or go far enough above it that won’t damage the wall again. After spreading about one
inch of the paver base down, I then will simply stomp on it to help flatten it out, while it also
makes the ground firmer to hold the weight of the wall.

Once this is done all the way around the
base of the wall, you will then place two inches of sand all the way around again.

Smooth out the paver base some before adding the sand. You do want the sand to be nice and
flat when you are done. I just throw the sand in the area. As you add your blocks, you may need

more or less to make the block level.

It is time to start to lay down the first block. This block is crucial as this will be the starting
height of the first layer of stones. I had to remove the tree root in the back of the wall, and this
process of adding the paver base then sand, placed the wall a good three inches higher than it

was previously.

I am keeping the same pattern I had before using the “C” shape, so I left a gap in the front of the
wall. I then placed the first block down and now I am making it level from front to back and side
to side. Use a rubber mallet to help with this process. Once done, place another block next to it

and make it level with the first block side to side and back to back.

This step is very crucial as all the blocks in the wall are placed upon this first level and if they are

not level, your entire wall won’t be level, so take your time and do it right.

More back breaking work, but once this is done, the rest of the wall goes up fast.

Continuing to Level the Blocks into the “C” Shape

——————————————————————————————————

Again, go slow and make each block perfectly level with the one next to it. You may have to add

more sand or even take some away from underneath the stone.

If you do it right, you should have these results. Here I took my long level and placed it on the

first block and the last block.

It is perfectly level between the two blocks! This is what doing it right looks like.

I am so proud!

After some rest, it is now time for the second layer of stones, but they need to be cleaned off
before being placed on the wall. You start by scrubbing them down in some water as shown
below, then place the block in the center of the lower two blocks forming a brick pattern.

Soaking the Blocks to Loosen the Dirt

I even started my third row, half way over the block below it.

As you go around, the circle will become smaller and smaller. This will tend to make your
blocks not be at the halfway point between the two blocks below them. When this happens and
it will, you simply have to cut one of your blocks on both sides to make it fit the half way pattern

again.

I am giving the edge of the wall a tapered look, this way it opens up so you can see the plants inside. 

 I just felt this is a better look than have it be straight up and down on either side of the opening.

Removing the Cleaned Blocks

Here is a great example of what I was taking about earlier with cutting a block. You can tell the
block in the center is smaller than the rest. Further down, I will show you how to accomplish

this.

This picture shows me starting the fourth row of blocks.

This block needs to fit between these other two blocks. 

 This is because the circle is getting smaller as the wall gets higher as less and less blocks are needed to fill the row.

Here I am measuring the length of the block and I will mark the block with a pencil underneath it
as to where I need to cut it in order so it will fit in the space between the other two blocks.

Take your hammer and chisel and slightly hammer the chisel on the line you made creating a
slight indentation on the stone. Do this all the way around the stone on both ends. Remember,
you are right now just creating a slight groove in the stone creating a nice line.

After you have done that, you can now hammer a litter harder on the chisel which is creating
little fishers or weak areas around the stone. Continue to do this all the way around.

With this last step, ensure the chisel’s flat edge is toward the area of the stone you want to keep
and the angled side is towards the area you want to remove. Give the chisel a few firm hits and

the stone should peel away.

This is a good picture of the stone breaking off right where I marked it.

Now I am using my other chisel to carve away the little extra surface that needs to be somewhat
flattened. Just tape the sone with the chisel and you will start to remove the excess. This could

take some time for it to be removed properly.

After about 20 minutes, I completed the stonework and it fits perfectly.

From this angle, you can barely tell it was ever cut.

 

Continue to place the stones on top of each other, cutting one as needed to make it fit to keep the

brick pattern.

Everything is looking great. I placed another layer on top of the stones to ensure it would be

high enough once the pavers were in place.

I am going to use the capstones I already had, and am now trying to match the curve of the
stones underneath them. I may have to cut the capstones to fit properly.

 

To cut the capstones, I keep the front straight edge and cut the back. This will give me a nice
pattern to the blocks. In this case, I placed the capstones on the front back of the C shape and
worked my way backwards which is why I will have to cut both ends of this capstone to fit in the

area.

Mark your stone with a pencil or other making pen, then use your circular saw with a concrete
cutting blade to cut the block. I am using a milkcrate as a base. Make sure your cut is nice and

straight and use your safety glasses.

The cuts are very fast.

I hope I have provided you good instructions on how to repair your retaining wall as this
was a great DIY project. Bring on the pavers!

 The Pavers Have Arrived

Here you can see the many pallets of pavers that will be used for our backyard project. 

 You will need to ensure the truck bringing the pavers has plenty of room to maneuver as they take up a lot of space. 

Why Pavers in our backyard? For years, we had water coming into our yard from all
the surrounding yards during any large storms. This would drastically flood our backyard
with 5-6 inches of water. You could see the water move from the right to the left of our
backyard, which would then flood our screened in lanai closest to the house. Having
these pavers in place has stopped all that.

Pictured is the area where the pavers will be placed with my newly repaired retaining
wall in the background. The pavers are being laid by a somewhat famous company
called “Outdoor Impressions.” They were featured numerous times on DIY TV as they
were always the crew working in Florida. They are very good at what they do, and
stand behind their work, which is why I highly recommend them. Just see for yourself.
We plan on paving more of our yard in the future. Luckily, the pavers they used are
made in America by a company here in Florida.

These are the drains that will be used to move the water from the back of the yard to the front of the yard.

  They will be tied into our existing Sump Pump.

In these two pictures, you can see the workers spread this dense gravel like material,
which prevents weeds and such from growing in it. They had to bring many
wheelbarrows of this stuff to fill up the backyard.

They then outlined the area with heavy cinderblock type stones shown on the left of the
picture. This kept that gravel like substance in place and provided a great surface for
them to lay down the pavers. Then they smoothed the gravel’s surface.

Here the worker is compacting and smoothing down the surface with a machine that
vibrates it into place, hence the name Vibrating Compactor.

The next few pictures are of the side of our house with all the material still needing to be
compacted. This was a big job, which is why I didn’t do it as it was just to labor
intensive.

This is a view behind my newly repaired retaining wall along the side of the fence. They
will install a drain system here so the water will run off the brick pavers and flow to the
front of the house and then onto the street.

Adding more dense gravel to the main area to ensure it is level and that it slightly tilts
towards the fence.

The dogs are checking out the new look. I had to cut off about 4 inches of the base of
the fence door, so it would clear the new pavers. This didn’t take much time at all using
a circular saw.

Here the worker is using a large circular saw to cut the eye shape out. He was very
skilled at this, which created a large amount of dust in the process.

We wanted our brick pavers to stand out, so we had them design an eye or football
shape design using larger pavers which had similar colors to the main pavers. The
brick pavers will be placed in a herringbone pattern.

This is a great picture of the brick pavers in the herringbone pattern going in behind the
retaining wall. We really love the colors of the bricks.

So pretty!!! Also, if you look closely, you can see where the runoff pipe is being placed.
This was connected to our sump pump, which is positioned right when you come out our
main lanai door. This pulls any excess water from our lanai  to the pipe shown and the
out to the front of our yard.

I love how all our projects are coming together. This just shows, if you stick to what you
like, it will all work out in the end.

Still thinking of my idea on what to do with the runoff water.

I talked about my idea with the Outdoor Impressions supervisor when he came to sign

Below is a picture of what I came up with to capture the drain water from our AC unit.  Before, the water would just empty out onto our property creating a large muddy area.  Now, the water drains in one spot, while providing easy access to the end of the pipe for my shop vac to suck out any clogs.  The drain area also looks more decorative!

Welcome to Barefoot Beach Teas

I got the idea about 3 years ago to create a nice tea and have it look like the beach.  I even thought of putting some sort of seashell candy inside of the tea so that when you came across it you will squeal with delight at finding a pretty sea shell in your very own beach tea.  Hopefully, reminding you of that time long ago when you were on vacation at the beach and finding pretty beachy shell souvenir’s to take home and show your friends.

My original thoughts were to just make one type of tea, a sandy colored tea.  But I then realized that I would like to create a Varie-tea.  🙂  But as I put more thought into it, I realized how great it would be to make several teas and have them look like my most favorite beaches.  For example, here in Florida we have bright white powdered sand.  (Hence, a coconut tea.)  On some of the beaches in Hawaii, where we lived for 13 years, they have sandy colored thick sand beaches, as well as black sand beaches, and there is even some green colored sand beaches.  The black sand being powered volcanic rock on The Big Island and the green sand beach of Papakolea Beach, also located on The Big Island of Hawaii, it’s gets it’s green color from the Olivine sand eroding out of the enclosing volcanic cones.

My Sandy Beach Tea

This tea I based on that tall bottle full of sand and shells you see in the photos, top and bottom.  It is the sand that I collected from our beach when we lived in Ewa Beach, Hawaii.  Our home was right across the street from the beach.  Granted, there was a Marine barracks blocking our view of the beach but, we would walk a block away and enter our beach from there.  I collected that sand in several bottles to bring with us when we moved back to The Mainland.

Our Sandy Beach Tea is a very Healthy Ginger Tea

(I gave this gift along with some Ginger Cookies.)

I like the presentation of the teas with the jars upside down so that you can see the candy sea shells on the “beach.”

Just place 1, 2, or 3 teaspoons of tea per 8 ounces of water. 

The ratio’s are up to you and your personal tastes.

If you find you would prefer them sweeter then add more sugar.  But I do ask that you learn to enjoy them as they are and not loaded with sugar.  Besides, lots of sugar makes you stupid and we are surrounded with sugar in all of our foods and beverages as it is. 

So, let’s try to enjoy something that is not as sweet.

This recipe goes back to when Gordon was 11 years old and attended his very first square dance in Charlotte, North Carolina, along with his brother Jeff, and sister Heather.  A lady was serving Russian Tea and Gordon loved it so much he asked her for the recipe and she gave it to him.  It’s been a Whann tradition ever since.

The Beginnings of Making the Teas

(I wanted to include my star fish bowl and some of my shells.)

When it came to the making of these teas I pretty much had it in my mind the ingredients that I wanted to use, I just didn’t know how they would taste together?  But, that was the fun part.  Putting the ingredients together and coming up with something that passed the taste test, but that was also healthy. 

In this Covid 19/Cold and Flu Season I wanted these teas to be something that would help to heal the sick.  Sooth that sore throat.  Give that boost to the immune system.  And not necessarily give in to your sweet tooth cravings.  For these teas are more about your health than your sweet pleasures.

The Powdered Pomegranate tends to harden quite quickly when exposed to air. 

Remember that.

You will need lots of clean jars and lids.  We washed the jars in the dishwasher but didn’t touch the insides.  I did hand wash the jar lids and seals by hand and let them dry.

A Gordon Whann Tradition

Ingredients:

2, 18 oz. Orange Tang

2, 18 oz. Pineapple Orange Tang

3 oz. Jar Nestea Unsweetend Iced Tea Powder

3 Cups Nestea Sweet Iced Tea Mix with Lemon

3, 6 oz. pkgs. Orange Jell-O

2.37 oz. Cinnamon

3 Tbsp. Ground Cloves

2 Tbsp. Nutmeg

Add your Orange Tang, and Orange/Pineapple Tang to a large bowl.

Then add your Unsweetended Nestea Ice Tea powder to the bowl.

Now, add your Sweetened Nestea with Lemon to the bowl.

Then add your Jell-O to the bowl.

Here, we were thinking about making 2 batches of Russian Tea then saw that all the ingredients would fit into the one bowl.  This is why I am adding additional Tang to the bowl.  The initial recipe ingredients are correct to make this entire batch of tea.

Mix all the ingredients together using a slotted spoon.

Here you see the spices involved in making this tea.  These do not dissolve into the mix, so it is important that you don’t put too much of these into the mix.  They are important though to give the tea that holiday spiced flavor.

Add your Cinnamon to the bowl.

Now the Cloves and Nutmeg to the bowl.  Stir all the ingredients together well.

Here you see all of the clean and sterile jars and lids.

Use a large ladle and funnel to pour the tea into the jars.

  What a simple detail to dress the jars up nicely!

Russian Tea automatically makes me think of Christmas and is one of our holiday traditions to drink this around those winter months.  Julie even sent me some when I was deployed overseas which helped both my mood and spirit with a taste of home.

Chief Whann’s Blue Potatoes

Gordon is a retired Navy Chief.  He served 20 years in the military.  When we created this great breakfast Gordon and I were thinking of names to call it?  Gordon suggested that we use the colors of the flag to determine the names of the dishes.  However, the colors Red, White and Blue did not have meanings for the Stars and Stripes in 1777. 

But, the GREAT SEAL did.

White signifies Purity and Innocence.

Red, Hardiness and Valour.

And Blue, the color of the Chief, signifies Vigilance, Perseverance and Justice.

Hence, our Chief Whann’s Blue Potatoes

(Because these blue potatoes don’t run.)  🙂

I am so giggling as I type this.  We did this breakfast in 2018, but I didn’t get around to working on it until this year, 2019.  Gordon is currently working overseas but we do talk on the phone daily.  I was telling him that I am doing the write up for this and we have been batting around fun “patriotic” names on the phone while laughing our heads off.

Not because we aren’t patriotic, but because we had the T.V. show American Dad, on our minds.  We are a huge fan of the show and this is the kind of breakfast that the Smith’s would serve on Independence Day morning.

Because whether or not we agree politically, we are all American’s no matter what our last names may be.  And we all should love our country enough to protect it from foreign adversary’s.  This is our holiday!  I really don’t want to say——

Chief Whann’s Blue Potatoes

Rinse your potatoes well using a large colander as shown.

Ingredients:

1 large bag of Blue Potatoes = ~ 18 potatoes

½ stick of Butter
2 Tbsp. Olive Oil
1 large Yellow Onion
3 Garlic Cloves
Salt and Pepper to taste

Using a sharp knife slice your Yellow Onion into rings as shown about ¼ inch thick.

Place about 2 Tbsp of butter in a large sauté pan on medium heat.

Slice your Blue Potatoes into ¼ inch think rounds as shown. Once the butter has melted, add your
potato slices.

Add your Olive Oil to the pan and stir to coat and cook evenly.

Add some salt and pepper to taste. The salt we used is a Florida Blend!

While the potatoes are cooking, slice your garlic thinly and the onion rings in half as shown.

(Here Gordon is flipping/tossing the potato mixture to blend together. 

To “Flip” means to Saute in French culinary terms.)

When your potatoes are tender and almost finished cooking, add your onion slices. Toss the mixture to
mix or stir them all together.

Now, add a touch more butter and olive oil to the pan. Continue to Sauté the mixture until the onions
start to brown as shown, then add your garlic slices.

Sauté the garlic for about 5 to 6 more minutes to rid it of its raw flavor and then you are done!

What a great addition to any breakfast!

Breakfast FREE-ttata’s

With this recipe, you can use as little or as much as you want with the ingredients. Just be sure to not
use too many vegetables though so you will still have room for your eggs. I like the ratio of ¼ veggies to
¾ egg mixture.

FREE-ttata Ingredients:

½ Red, Yellow, and Green Bell Pepper – sliced and chopped
¼ Yellow Onion sliced and diced
2 Garlic Cloves sliced and thinly diced
4 to 5-inch piece of ½ of a Leek – sliced into half rounds
Cherry Tomatoes
¼ stick of butter
Green Onions
Chives
Parsley
Oregano
1 Dozen Eggs
1 Culp Half and Half
Italian and Mozzarella Cheese
Salt and Pepper to taste

Washing Herbs

Depending on how many FREE-ttata’s you are going to make, will depend on how much of each ingredient
you are going to use. With that said, begin to slice up your Bell Peppers.

Slice your Bell Pepper in half, then remove the seeds and the stem.

Now, slice the bell pepper into long thin slices as shown.

Using your knife, remove any white part of the inside of the bell pepper as it is very bland.

Do the same for all the Bell Peppers.

 Then chop the
slices into medium dice pieces.

Here is your Leek which can be very dirty inside, as seen later on.

Be sure to rinse all your vegetables before slicing them.

Pour about 3 Tbsp’s of Olive Oil into a large sauté pan and turn to medium heat.

When the oil is hot, add your Bell Peppers as they take the longest to cook.

Add some salt and pepper to taste.  We are using a Florida blend salt mixture here. 

But you can use whatever you like.

Slice your Leek in half as shown. I told you this vegetable is Dirty!

Rinse the dirt away from the root end as shown. Doing this will ensure the dirt doesn’t get further down
into the white part of the leek.

Here, I am slicing up the onion.

Now, slice your root end off the leek, then slice the leek into thin strips as shown.

Once your bell peppers are nicely sautéed, add your leeks and onion and stir.

Slice your Cherry Tomatoes in half as shown.

Now, slice your garlic thinly.

Once your onions and leeks have begun to wilt, add your cherry tomatoes.

Then add your sliced garlic and stir together well.

Add about a tsp of butter to the mixture and stir some more.

Add some freshly ground black pepper to taste.

Left, Slice your Chives thinly as shown. These are from our garden!

Next, slice the root ends off your Green Onions, and slice into thin rounds as shown.

Beautiful Colors!

Remove the Oregano from the stems as shown.

Remove some of the larger stems from your parsley before slicing.

Slice your parsley thinly.

EGGS!

Crack your eggs into a large bowl… here we will use a dozen.

Using a whisk, combine all the eggs until well blended.

Pour 1 cup of half and half into the whisked eggs.

Whisk to Combine

Add some salt to the egg mixture … here we added a special Florida blend.

And also add some freshly ground pepper.

Add as much or as little of the herbs you just chopped to the egg mixture and whisk to combine.

Using your favorite cooking spray, coat each ramekin with enough to just cover the surface.

Now, add a large spoonful of your sautéed vegetable mixture to the bottom of the ramekin.

Add about a Tbsp of Mozzarella cheese to your ramekin.

Using a ladle to add the egg mixture to your ramekin. Add just enough to go ¾ of the way up the side of
the ramekin as shown.

Top your egg mixture with about a Tbsp of any Italian cheese.

Place your ramekins on a cookie sheet just in case the eggs spill over during the cooking process.
Preheat your oven to 350’F and when at temperature, place them in for ~15 minutes.

Here is a great picture of the eggs most of the way through the cooking process. Nice close detailed
shot Julie! Cook them about a few minutes more and they should be fully cooked. Remember, the
residual heat will continue to cook the eggs well after you have removed them from the oven.

Here you can really see the beautiful colors of the herbs and vegetables.

Our Southern Biscuits Shall Rise Again!!

As someone who was born and raised in the south, except for our 13 years of living in a foreign country, Hawaii—— and our Yankee year’s living in Maryland.  I am ashamed to say that I have nevah made biscuits.  I shall have to remudy that in the fewcha.

Howevah, these biscuits are a nice substitution for the real thang.

Our Patriotic Sausages

Heuh is the “red” in houwuh Red, White, and Blue.

These are just little smokey sausages that Gordon browned in a saucepan with olive oil, on the stove top, on a medium heat. 

You just want to brown them.
