Julie’s Lunchbox Take Out
My theory is to always take food with you.
You never know what you may encounter, and you shouldn’t be at the mercy of having to settle for something you don’t want, or need to eat, just because it is available and you are hungry. Or worse, you may not have access to food at all when you need it.
Packing a lunch, based on your likes and tastes to me, is the best lunch you can eat.
Also, when you prepare your own food you know exactly what you put in it. I view eating out as a treat, not a daily occurrence.
Here are a few examples of my fun lunches that I take with me. I didn’t intend for them to be of an Asian theme, that’s just how it has turned out.

Coffee, Before I Hit The Road…

I have to go into Tampa,
Drive into the (Military) Base,
Pick up my Prescriptions,
Fill the Car with Gas,
Shop at the Exchange,
Run into Class 6 (Base Liquor Store),
Shop at the Commissary,
And, Shop at the Commissary AGAIN.
(I run in the first time for toiletries, household items, etc.
and I run into the Commissary the second time, for Food.)

Seeing as how this is going to be one of my big days,
I need to bring a nice lunch, and a snack or two with me, as I head out the door for the day.
There is always a Purse, and a Lunch Tote, and Plenty of WATER!

Then I End Up Picking At A Chicken From The Deli While Driving Home,
Which We All Know Is Kinda Gross.

Asian Soup To Go
W/ Mushrooms, Chives, Black Meatballs, and Kimchi!
(If you are wondering how Soup can be ‘Take Out,’ that is because it is generally quite hot before you leave the house, or you are able to keep it hot with good insulation, or you are able to heat it up while you are out and about. Either way, it is possible. Also, lukewarm is also acceptable sometimes.)

The keiki’s (Kids) in Hawaii always keep a pack of Top Ramen in their pockets to snack on while they play outside.
Sometimes I will grab one to snack on while I’m driving and on the go.

I love these Asian Crackers:
Seaweed and Onion, and Shallot
They are large, and very sturdy. I also like that they are packed in a plastic container, and wrapped with about 4 to a pack.
They don’t come all broken as our crackers do here in America.
Here I have placed my Seaweed Dip/Spread into a small Bento Box with the Crackers, for a Take Away Snack

My Monochromatic Fortune Cookies
I Love Fortune Cookies!
I love that they are a nice crunchy cookie treat that isn’t very sweet. I love the cute little message inside every cookie. I also love that we can easily dress them up, and enhance them to make them even better. Here is what I did to these Fortune Cookies…
You can find Fortune Cookies in the Ethnic Isle of your local supermarkets, usually.
But if not, you can always shop the Asian Supermarkets near you.
Ingredients:
Plain Fortune Cookies
Dark Chocolate, and White Chocolate Melting Wafers
Sesame Seeds:
Black, White, and Tan Sesame Seeds

This is very simple to make:
You just want to melt some of the Chocolate Wafers in Microwave Safe Bows…
..and then dip one side of the Fortune Cookie into the melted Chocolates….
..and then, dip that chocolaty side of the Fortune Cookie into the Sesame Seeds.
Quite Beautiful and Tasty Too!
Just Allow Them To Cool and then Store in an Airtight Container

It’s not only healthy for you, but delicious. I especially love that crunch, and the tanginess of the Ginger Dressing.
My Salad Ingredients:
1 Bag of Chopped Asian Salad, Readymade
Chopped Red Cabbage
Shredded Butter Lettuce

My Aloha Snack Mix
I wanted to create a snack mix which reminds me of Hawaii. After all, we lived in Hawaii for 13 years. Hawaii is still with us, we carry that Aloha Spirit every day. It may look Asian to you. Hawaii is made up of many different cultures, some Asian as well as Polynesian. I based this on what I think the average local Hawaiian resident would like to snack on.

The Ingredients:
The ingredients are more of an Idea, and a Suggestion, but nothing is written in stone here. You can change things up a bit if you like.
I wanted to make this mix in the same style that I do when I would make my beloved homemade Chex Party Mix.
So, I am giving you the ideas, and you can go forward with the experiment.
La Choy Chow Mein Noodles (I used a bag and a half. I believe the bags were about 16 oz. each.)
2, Top Ramen Dry Noodle Soups (I am using a Chicken Flavor, but not using the seasoning packet. I am only using the dry noodles.)
Plain Almonds
Sesame Sticks
Dry Roasted Peanuts
Sunflower Seeds
Black Sesame Seeds
(The amounts of the above ingredients are up to you.)

1, 1/2 Cups Tahini (Tahini is 100% Ground Sesame Seeds)
8 T. Fish Sauce
1/2 Cup, Aloha Soy Sauce
1/4 Cup Hawaiian Teriyaki Sauce
Water, To Help Thin Out The Wet Ingredients
(Wasabi Peas ended up being a Side, and not in the Mix)

You will need a large baking pan, and a wooden spoon.
Adding Our Dry Ingredients First
Chow Mein Noodles, Sesame Sticks, Almonds, Dry Roasted Peanuts, Sunflower Seeds, and Black Sesame Seeds
Break up your Top Ramen Noodles, and add to the Baking Pan
Black Sesame Seeds
The Amounts For All of the Above are up to You

In a Medium Sized Bowl….
Adding 1 1/2 Cups of the Tahini
Adding 1/2 Cup of Aloha Soy Sauce, 8 T. of Fish Sauce, and 1/4 Cup of Hawaiian Teriyaki Sauce
Stirring All The Wet Ingredients Together
(I wish that I had thinned it out more than I did.)
The Sauce is Still a bit Thick
It was good though!
I was experimenting and adding more of this, and more of that.
However, I do give you the totals that I used in the recipe ingredients listed above.

I Stirred Everything Together
Turn Your Oven on 250F
I decided to bake these along the same lines as I do when I make Chex Party Mix.
Into The Oven
Remove after 15 minutes and then stir together.
Then place the mix back into the oven for another 15 minutes.
Remove and stir together.
Then put it back into the oven for a last 10 – 15 minutes.
Remove and stir together.
Allow To Cool
I’m Cooling The Mix On Parchment Paper

We spend a lot of time outside in our backyard. Gardening, Landscaping, Grilling, Picnicing, Playing….
The Dogs love it in the Backyard, so does our Grand-Daughter Isabelle.
There have been some changes this year.
With Gordon working overseas I have decided to downgrade my massive Herb Garden, (situated on the side of our house) and to move it inside the Lanai Extension.
A smaller version of it, anyway. Oh, all the pots and planters are still on the side of the house for when we decide to make it all grand again. But for now, I don’t need all that.
I really don’t need the massive amount of herbs that I once did. I am cooking for 1 now. ME! And, sometimes I do create large meals that I will share with my daughter, son-in-law and grand-daughter. But most of the time I am just cooking for me. So, I created an area where I can harvest my most favorite and used Herbs for my meals. It’s just more convenient for me.

The larger one is for me and my specific Herbs, and the smaller one for Isabelle and her new found love of gardening. (Or so I hope!)

But, my intention is to teach her to be able to grow a few things on her own to help substantiate her future life. If she chooses to expand on that knowledge, then wonderful! But, it does start somewhere.

Humid, and Hazy Morning on our Lanai
My Vanda Orchid is thriving in this humidity.
The name of my plant escapes me right now. But, what I love the most about it is the main resident.
This lovely lizard is living here. I see it on various leaves every day, and night.
I’m happy the lizard likes it here. I consider it my neighbor. I always look to say “hello’ every day.

March/April, 2025
Every Spring we clean up our backyard that usually gets a bit overgrown during the Winter months here in Florida.
Lots of clearing, pulling up weeds, thinning Bamboo, and Pressure Washing.
This year was no different. We did all of that above, and even created a nice garden area inside the Lanai Extension.
The New Planters Project
The Planters I purchased online. One for me, one for Isabelle.
It’s just a matter of assembling them, purchasing all the potting soil to go in them, followed by the plants and flowers that you choose.
The Planters came with a cloth bottom that goes in the bottom before you place your dirt in it.
You do want to purchase Potting Soil. Potting Soil goes in pots, other dirt goes on the ground. Even though these are planters they are still considered pots.

Cute Doggie Planter Project
I found this cute doggie planter, and knew that it would be great for Isabelle and her garden planter.
If you can, place some sort of Tarp down to collect the dirt so the project doesn’t become a huge mess you have to clean up.
I chose these yellow flowers for the doggie because they would look nice, and be great in this medium light part of the Lanai Extension.

My Special Project, Thanks to Brodie
This area of the house was vacant of anything. We did have a lovely wooden potting bench at one time, but the Florida sun and humidity will ruin all woods eventually.
It did last about 5 years before we got rid of it.
I got the idea that I wanted to place a large cabinet here. Something with shelves and drawers. Where I could place pots out of sight that I didn’t use, and to even make it very attractive with nice pots and plants. Even serving up some foods for when we entertain or eat outside.
I would like to say that I have a great idea for a future project for this area. See that long window? That is our Den window, that used to be Brodie’s bedroom. I think that it would be nice to turn that window into a doorway to allow another backyard exit. Kind of like a Mother-In-Law Suite. The rectangular window in the top right of the photo above is the Guest Bathroom. Also, on the other side of the den is a spare bedroom. It might be kind of nice to create what would be an entire different wing of our house where someone else could live in that part of the house. Not that I want to do that. But, it would add value to our home and would be great for when guests visit. And, imagine how nice it would be to create an outdoor ‘porch’ of sort there as well? Kind of like a Mother-In-Law Suite.

I based these on my love of Dirt Cups.
You know, the dessert made from Chocolate Pudding and Kool-Whip, with Oreo’s and Gummy Worms? A lot of people would place the delicious dessert in Garden Pots. I always loved them.
Except mine are based on Lemons and Herbs from my Garden.

The first thing that I did was to make my Lemon Pudding to set overnight.
You can use as many Lemon Pudding’s as you like. I used 4! Just follow the package instructions.

Isabelle’s Fresh Mint (Garnish)
Micro-Greens
Fresh Lemon Peel, or Grated Lemon Zest (Or Both) Garnish
Lemon Cookie Thins (Garnish)
Mint Malted Milk Balls (Garnish)
Sunflower Seeds, Garnish

My Lemon Pudding I Made the Day Before….

This food project is to be as big or as small as you like it to be.
I spooned about half of the Lemon Pudding into a separate bowl, and then added some Kool-Whip.
You eye-ball this for your own tastes. Then mix together.

Into each of the plastic cups you want to cover the bottom with the Lemon Snap Cookie Chunky Crumbs.
I Did Add a Few of the Micro-Greens to a Few of the Cups.

Baked Valentine Jezebel Ham, and Arabic Potatoes

My Arabic Potatoes
With Gordon working overseas he brings back the most exotic of spices and even a few interesting cookbooks. It was while I was flipping through one of them that I found a great potato dish. I loved the presentation, not that I copied it here, and I also loved the flavors. They just seemed so delicious together. Although I ignored the presentation, and even changed up the tastes a bit, I am very happy with my rendition of this creation. I hope you like it too!
Ingredients:
Potatoes: I used a Combination of Red and Yukon (About 5 Pounds)
Other Ingredients:
Onion (I used a Vidalia Onion, and a few large Shallots.)
1-2 Cups Vegetable Oil, For Frying
10-15 Garlic Cloves, Minced or Crushed
1 t. Cayenne Pepper
1 t. Paprika
Black Garlic Salt, Sprinkled Over as Desired
1/2 t. Turmeric Powder
2 t. Ground Coriander
Freshly Ground Black Pepper, To Taste
Garnish with Fresh Coriander and Micro-Greens

The first thing that you want to do is to have your Potatoes already washed and prepared.
The Cast Iron Skillet is for my Ham, the Wok is for my Potatoes.
Here I am Slicing My Potatoes into Small Bite Sized Chunks….
and then Placing them into a Large Bowl of Water.
(This will help to remove some of the starch.)

Having chopped up my Potatoes, and Having them sit into the large bowl full of water, I have now Drained them into 2 separate Colander’s.

Time To Place Some Vegetable Oil Into The Wok, To Sautee The Onion and Shallot
(About a 2-3 T. of the Vegetable Oil, for now)
Sauteing The Shallots and Vidalia Onion in Vegetable Oil
Do this for about 5-7 minutes until it softens a bit…..
Now, Start To Crush Your Garlic Cloves Into the Onion/Shallot Mixture.
You can either mince them or crush them.
Time To Add More Of The Vegetable Oil Into The Wok, About a 1/4 Cup.
Add All of Your Potatoes To The Wok, Stir Everything Around

It’s Time To Add The Spices As The Potatoes Cook
This is entirely up to your personal tastes.
To start I did add 1 t. of Cayenne, 1 t. of Paprika, 1/2 t. of Turmeric Powder….
Also, about 2 t. of Coriander and some Freshly Ground Black Pepper to Taste.
Also, I did a Sprinkling of Black Garlic Salt over Top. Just a Pinch or Two.
Blend Together and Keep Stirring in a Medium-Low Heat
If you need to add more Vegetable Oil, do so. You don’t want your potatoes sticking to the bottom of the Wok. If you would like to add a few more of the Spices, do so. This is all up to your personal tastes.
Season and Taste as you go!
When the Potatoes are Tender then you know they are done. Set them aside until ready to eat!

This is so easy!
I simply placed a pre-baked Ham into my Cast Iron Skillet and then turned the oven on 350F.
I did add a little bit of water to the skillet, and then started spooning my Jezebel over the Ham.
I placed the Ham into the oven for about 10 minutes to start, and then removed it to spoon over a few more tablespoons of my Jezebel, and then placed it back into the oven for an additional 10 minutes.
I wanted a caramelization over the Ham.
Potatoes have been done and are on a very low heat.
Ham is Ready!
It was a very nice dinner for me!

My mother bought me my first camera when I was in the 2nd. grade, age 7.
She herself, was an avid photographer, who came from a father who was an avid photographer, who came from a mother who was an avid photographer.
That is probably where it ends, or rather begins. It started with Honnie and Gordon Haskin, passed down to their adopted son Frank Haskin, who then passed it down to his daughter, my mother, Mary Keith Haskin, who then passed it all down to me. I think I am probably the only one of 4 siblings that has inherited this hobby/gift/talent, etc. My brother’s never had an interest.
There are many things about my upbringing that I am very grateful for, and photography is one of them. Probably my main appreciation. I have always been a very avid photographer, but with starting this website, my photography skills have really improved. Initially, it was all about taking a picture of a person, or a set, or a room, or anything out in nature. But, it has evolved into using lighting, shading, and even the daily humidity into creating lovely photos. No one taught me anything, I just learn as I go. I always have. Sometimes I hate that about myself, other times I love that about myself. You see, I don’t read instruction books. I just dive right in! (Not that I recommend that to any of you. It’s just who I have always been.)
With the website turning 14, I wanted to acknowledge what is most important about it, the photographs.
That is what we tend to get the most compliments on.
I will say that our website is not as popular as it once was. There isn’t as much traffic as we used to have.
Our audience has always been above us, not below us.
What I mean by that is that bots from around the world scan our site, and we do see our ideas in books and magazines around the world. I have mixed feelings on that. It is flattering being copied. Especially since I come from a family of abuse where I was told most every day that I am a nothing. I mean, why would anyone copy something from someone who is a nothing? I also tend to get upset when some of our ideas are in books and magazines that then sell and make money for other people. After all, we have never made a dime off this website.
But, what I have come to realize is that everyone copies off everyone else. Fashion people do it, car designers do it, hair salons do it, landscapers do it, movie people do it, food people do it, restaurants do it, shoe people do it, and so on, and so on, and so on. So, I’ve made peace with it all.
Now I just want to continue to be creative for me. Not that that was never the case. I’m just saying that I just want to focus on me, us, our children, grand-child, dogs, and not so much on what other people are doing, or imitating. I just want to do what I love, and if others are interested then you are very welcomed here.
I am trying not to create as much, and just work on what I have already created and do the write up’s for the website. That is hard for me because I have so many ideas that I am squashing in order to catch up with other things. Imagine holding yourself back from having great ideas? Not a simple thing to do. Especially fore a creative person.

When I started it I figured I might have a website for a year or two, I could actually see it going up to 7 years. Not 14!

So, What’s Up With Us?
Gordon is still working overseas. We are saving to buy a few rental properties in Weeki Wachee. It’s toward our retirement investments. Plus, something we would like to pass down to our children. Our son Brodie and his fiance, Mackenzie, have moved to North Carolina. We are sad by this move, and a few things associated with it, but we want them to be happy, because that is what you want for your children. There will be a wedding next year that we are all looking forward to as well.

Politically, there is so much to say, yet I really don’t feel like saying it. It doesn’t do any good anyway. I’ve been speaking up since 9/11 and all it has gotten me is isolated from so many people. Granted, I have come to realize that those people weren’t worth knowing. But, I’m getting old, I have a granddaughter to take care of. It really is up to the younger generations to fight for it.
I can remember when being informed by politics, and world events made you the life of any conversation.
Not anymore!
I do have to say that working on my mental health has become more of a job than it used to. I am having a harder time with being alone than I ever did before. It’s all this extreme weather that I am having to deal with, alone. It was a month ago that we received this big flash food and got 4 inches dropped on us in a matter of a few hours. Had this loud clap of thunder not woken me up, I never would have known. The pump out back, the circuit had tripped and I didn’t know that. Water was fixing to come pouring into our home and I got outside and just started bailing water off the main lanai with a big bucket, and hurling the water to the lanai extension which is tilted in order for water to run down it. I was scared! But, luckily the rain suddenly stopped and the water was able to drain out of our lanai. I was also pushing it out with a broom.

Flash Flood Warning for Wednesday-Friday
So, tonight at 3:00 a.m. we are supposed to experience a lot of rain, and having the storms extend into Friday. Our NOAA Radio has been going off since this morning, non-stop! I ended up turning it off just so as not to be bombarded by it. Also, Hillsborough County has been calling the house phone all day sending out their warnings as well.
I have moved some things outside, and on our lanai’s to prevent things from being broken. And while I was doing that, I broke something. So…. 🙁

Cleaning Out The Bedroom Closet
I’ve had the past 2 weeks off!
Tutu’s Hale (pronounced Ha-Lay, as in the Hawaiian word for House) Daycare has been closed, but will re-open early tomorrow morning.) 🙂
The Hale is ready for my favorite Keiki!
Veronica and Brian have taken their vacation time off what with the 4th. celebrations, Isabelle’s birthday on the 5th., and Veronica’s birthday on the 6th. They did do the Disney Parks as well.
But, I have started the giant task of cleaning out my side of the walk in bedroom closet, that Gordon and I share. I have so many clothes that they will no longer fit. My Lilly Pulitzer Collection has grown tremendously. I figured that it would be hard for me to part with anything, yet I am able to. Surprisingly!
BUT, NO LIILY WILL LEAVE THE PREMISES!!!!
I’m giving myself through August to get it all done. I am trying to pass some things to Veronica, the rest I’ll donate.
It is quite a task though. And, I am taking my time. But, now is the time to do it what with Gordon not here. I have so many things strewn all over the bed. I myself, am sleeping on the couch.

My Mental Health
I do mention my ‘mental health’ above. I have always been one to work on my mental health as it is, but now especially.
I realize that I have a very nice life. It isn’t a perfect one, but it is a good one.
Gordon and I have noticed that information in our accounts and beneficiary files are being changed. Information in my medical records, is being changed. This has us alarmed as we have our important information being changed, and we are not changing it. We believe this to be by our cyber-stalker Paul Gray. We are also looking into hiring people to help to protect us, which will most likely lead to hiring attorney’s. We have to protect ourselves from him. He can access our insurance information, and change it. He can erase everything. And he will, too.
So, how’s your day goin’? I’m guessing it’s better than mine!

But, what you don’t see is that I do my fair share of crying. I am afraid. I have many fears. Not just for my crazy country right now, but for our personal life. After all, we have someone obsessed with harming us. Obsessed with ruining us. Why? We have no fucking idea! When evil targets you, evil doesn’t seem to stop, until you stop it. Catching Up, I’ve Missed You

I have news to tell you on that front, but it will have to wait. We have plans where he is concerned but I cannot tell you at this time. (But I will say that I hope that Millie Bobby Brown, and Julia Roberts play me in the movie. A young, and old Julie.) 🙂

Everyday I feel a range of Good, Bad, Happy, Sad….
That is not just about my cyber-stalker, but about my country, and all that is happening around me.
I just feel like saying to those that have better things to do than vote and keep up with our country’s democracy, so, was leaving your future up to others to decide, worth it? Must have been. Otherwise you would have taken charge of your own lives and futures by keeping abreast of our political climate, our politicians, and the decisions that they make about our own lives. I just sometimes get so angry when thinking about “those” people and how they helped to get us here as a country through their own inaction.

With Gordon working overseas this has been a particularly hard time for me. Yes, we talk everyday on the phone.
He’s running to a bunker about 7 times a day because of incoming…. (that’s all I can say.)
We’re also in the midst of planning a wedding for next year. AND, Brodie and Mackenzie are moving to North Carolina at the end of the month.
Mackenzie has been offered her dream job, and she is taking it! I don’t blame her. She deserves all the good that comes her way. It’s just that they will be moving away from all of us, and we are sad about it. I do come from a family that has moved about quiet a bit, so moving for me is quite normal.
Just to give you an indication of that:
I lived in 4 cities in Georgia, 2 cities in Virginia, 1 town in Tennessee, 4 cities in North Carolina, 4 cities in Hawaii, and 4 cities in Florida. I know what it’s like to move around. It’s actually quite normal to my family. Oh, and I forgot Maryland! See, it comes with the territory. I’m not worried about Mackenzie adjusting to a new state and all that comes with it. However, I am worried about Brodie. It will be harder on him. They are excited/terrified! That’s normal.
I spend my days keeping Isabelle, working on the website, and creating new projects.
I love my simple life. I’m not looking for anything complicated. I enjoy being 64. To me, 64 isn’t so bad. It’s actually quite liberating. AND, it’s normal to age.
From what I understand from my Grandmother and Grandparents, Isabelle is just like ME!
Oh, they are long gone. But their depiction of me is still alive and well in Isabelle. 🙂

I suppose there really isn’t that much to catch up on after all. I am trying to finish all the many website pages that are “Under Construction.”
Because my Cyber-Stalker Paul Gray keeps getting into our photos, moving them around, and even stealing them, I have bought a computer that I keep offline at all times and just use it to house my pictures, and only transfer them over to this computer when I’m ready to upload them onto the website.
Paul had removed all my photos that I had placed on this new computer but when he heard of the plans that Gordon and I have for him, he put them all back. I guess in the hopes that it would appease me. You see, Paul is not only in our computer’s, but he is also in our phones and listens in to our private conversations everyday. Gordon and I even started a segment of ‘Let’s tell Paul what we think of him seeing as how he’s here with us on the phone.’ Hey, if he’s going to invade our privacy he might as well hear about how much we hate him.

Draining My Olives and Washing My Curry Leaf Branches
(I can’t believe that I have no photos of my Olives that I used here in the jars they came in. However, I will do my best to name them in the ingredient write-up.)

My Cyber-Stalker of 30 years who works for MICRSOFT has been hiding our photos and placing them into old files where we can’t find them.
His name is PAUL KEITH GRAY OF CHARLOTTE, N.C.
Isn’t this what women have had to endure for generations? Men trying to control them? My blog introduction may be a parody, but it’s concept is real in the 30 year harassment that I have had to endure from this very insecure little 62 year old man/child.
You know, Gordon and I have been waiting for years for Paul to get bored with us and move on, perhaps even finding a life of his own that doesn’t involve stalking anyone. When I say that he’s been stalking us for 30 years, he has! And as I told Gordon a few months ago, we are going to be saying things like, ‘Paul has stalked us for 32 years now’ and ‘Paul has stalked us for 35 years now’ and ‘Paul has stalked us for 40 years now.’ It’s never going to end. He is a 62 year old man who’s life has passed him by. He has nothing to look forward to except his daily pleasures of stalking and sabotaging others. Do you know how truly pathetic that is?
While my husband is working overseas helping to keep us safe, Paul is moving photos around in our Pictures. The Hero and the Zero.
That is the difference between Gordon and Paul.
I recently coined the name Gollum to describe Paul. You know, the pathetic unwanted creature from The Lord of the Rings?
You see, Paul listens into our daily phone conversations so I suggested to Gordon that seeing as how he is with us interfering in our private conversations that I say we spend about 10 minutes of our time telling Paul exactly what we think of him. Both Paul and Gollum are pathetic creatures worthy of our pity. They have a lot in common. Gollum’s obsession with the Ring ruined his life and drove him to madness. Paul’s obsession with us has done the same to him. He is nothing. He has nothing. And just like Gollum, Paul will destroy himself in the end.

Gordon’s Home!
Julie and Gordon Out and About
With Gordon working overseas as a contractor, when he is able to come home we only have a few weeks here and there to be together, and to be with our family. This visit has since come and gone but, we had a really nice time together. There was a lot of work to do as well.
He initially wanted to come home in February around my birthday, but I told him no. I wanted him here in March to help with all the spring prep outside. Spring is a lot of work here in Florida. We tend to lose our leaves from our trees in late January and throughout February, and even into March. That is a lot of raking, etc. However, because Hurricane Milton knocked down so many large branches of ours in our backyard, we had hardly any leaves to fall this year. I remember paying our yard guys $500.00 last year just to rake up all of our leaves.
There was also lots of algae and mold all around our property on our retaining walls, pavers, and lanai. That comes from the Florida heat and humidity. Bleaching, pressure washing, and so on, are all part of upkeep for Florida homeowners. We also ended up extending our existing fence along the side of our house because of our abusive neighbors.

I always have lots of Honey-Do’s for Gordon when he comes home. You know, ‘Honey Do This, and Honey Do That.’ 🙂
This was one of those cute little Honey Do’s I had Gordon to put together. I knew the Trump Tariffs would make everything go up so I bought all of this stuff before they took effect. This is a cute little Garden Center for our Grand-Daughter Isabelle.

Our time together was way too short, but we always manage to pack quite a bit into each visit.
We were thinking about him coming home permanently this October but with all that is going on in our country, perhaps he needs to stay over there longer just in case. Who knows, he may have to support all of us here if things get really bad?
We Are Truly Living In Uncertain Times
I wish that I had better things to write about. In these times it’s really up to us to make our own happiness. To create our own magic. I would go into greater detail on how to handle these times, but it will sound like everyone else giving advice on what to do. I don’t want to be that way. Each person’s circumstances are different. Some of us have better means than others. Some of us have better connections and opportunities than others. Personally, I wish and hope that all of us will survive these coming times and even thrive afterward. But, realistically I know that won’t happen.

We’re All Going To Hell In A Hand Basket
(Not to be TOO Negative)
Tuesday, March 11th.
I drove into the base in Tampa on this day to do some shopping. Gordon will be coming home soon from working overseas and I am shopping in preparation for that. We have many things planned. Some fun, some work. I found it interesting that the base was pretty empty compared to what it usually looks like. No traffic entering the base, no problem finding good parking, no long lines at check out, not waiting in line for gas, no waiting in line for prescription drive through pick-up, etc.
The Air Force Base is usually pretty busy. It is actually a small city with everything on it. This is Florida after all, what with lots of seniors coming onto the base to pick up their prescriptions and do their shopping. It was a nice day. I enjoyed it. To me a good day is when everything goes according to plan. I’m not one of these people that craves any sort of excitement. I prefer boring. To me boring is nice. Boring is also peaceful. Plus, boring isn’t boring to me.
I did my usual that day but it was while I was doing some Commissary shopping that I overhear conversations from other shoppers. This one white couple, probably in their 50’s were comparing brand prices looking for bargains. As it is prices are very cheap on base. But they were looking for cheaper.
Also, when I rounded a corner and headed up an aisle as I was looking at some products on the shelves an Empath noticed me and said something to the effect of, ‘We’ll be buying fewer things soon.’ I then looked at her and said, “I know. And things are about to get a lot worse.” She agreed with me as she walked past me.
She was an African-American woman, probably around my age, she was dressed very nicely and her cart was pretty full. She also had plants in the top section of her cart. I too was dressed nicely, (in one of my Lilly Pulitzer dresses), with my cart full as well, and plants all around the top part of my cart. So, you may wonder why she said that to me? Simple. She is an Empath, she read me, she knew I was safe to say those things to. Most white women and men that shop on base are republicans. You really can’t say anything to them without getting some negative reaction. Yet this woman knew that I was not that way. She knew she could say to me what she did and that I would respond in her favor. Which I did.
Oh, and I’m sure you’ve noticed that I have removed my Empath Blog Pages from my website.
Perhaps one day I can restore them. But not now.

After doing my shopping I headed home. Oh, the car was full! I did a LOT of shopping!
And, on the way home I had my chicken that I picked at in the car ride home. It took me and hour and a half to get home that day. Horrible Tampa traffic!
Plants, Juice, and Chicken
When I did get home it took me probably a good 35 minutes to unload the car. At this writing, Thursday, March 13th. I am still putting things away. I still have grocery bags full of items to take care of.
Ya know, I don’t think that I really have to go into my headline above. I think that most people that keep up with what is going on knows exactly what I mean above when I say, “We’re all going to hell in a hand basket.” I mean, it’s obvious. At least to those that have eyes and can see. Or ears that can hear? Or feelings that can feel.
Yesterday when our daughter Veronica got off work and picked up Isabelle from our house, she told me that 17 employees where she works were laid off. She did say that she made the cut, but that instead of working 5 days a week, she will only be working 4. Which means that I too get every Friday off from watching Isabelle from now on. That means I get a 3 day weekend all the time. Good for me, but not for Veronica and Brian that need the money.
So, the Trump Presidency has hit us close to home now.
I knew that it would.
Now I wonder what else is to come our way? I guess we’ll all find out.

Grabbing my Jalapeno Cheddar Muffin to Go
Ran some errands today and did some shopping. It was a busy Saturday with lots of traffic on the road and at the stores. While I was at the grocery store I overheard a woman on her cell phone talking to someone about how scared people are right now. I didn’t want to chime in to her conversation but I very well could have because I understand exactly as she does. She was a black woman. I also heard plenty of white women on their cell phones talking to others about the shopping list, or what time they will be picking up so and so to go wherever. And there were a few white men on the phone with their wives as they were tracking down items on their shopping lists. Interesting to me that it was the black woman that knew what was going on while the white people were still oblivious and just doing their shopping.
Oh, the white people will find out soon enough just how scared they should be.
We are all in danger now. None of us are safe. Know that.
Safety regulations on our food and drink are being removed right now. Also, if there is an outbreak of some contaminated foods, or some disease we will not know of it. Those agencies are being shut down, and the information will be squashed.
For the first time in our lives Gordon and I are considering buying a weapon. I don’t want to live in the Old West but that may just be how things turn out.
I’m also sure you have been aware of the latest plane crashes in our country? Well, when you fire and gut the department that made sure we were safe, then these things happen.
Each day I wake up feeling Good/Bad/Happy/Sad, just like the song says.
I have my good moments, my bad moments, my happy moments and my said moments.
This is all of our futures. Unless you are a billionaire then you are not immune, and you will feel the pain quickly.
They tried to gut Medicaid a few days ago but there was so much outcry they changed their minds. Understand that this is only temporary. They will try again when the coast is clear. Republican’s never give up on any damage they want to do. They don’t stop, they don’t take a day off, they plot, they plan, and they always succeed. It’s because you take a day off, you have a life you want to live and enjoy, they count on that. You turning your back to do something else. That is when they strike!
They have a grand plan for all of us that I cannot even begin to describe to you here. You wouldn’t even believe me if I tell you. Oh, I’ll tell you what I see coming when you are ready to hear it. But, not yet. For now, look out for yourselves. Stay low. There are no laws now in our country. Murderers will be forgiven as long as they fight for our leader. We are entering the American Holocaust.
During the George W. Bush years the only place that you could hear the truth was on NPR. National Public Radio. And also the foreign papers, which I frequented daily. However, they may just end up blocking our access to these foreign papers. In which case, we are left with pretty much nothing and it will be up to us to use our common sense to survive it all.
The thing that I do know well is that the truth always finds a way.
When the Bush Administration suppressed the news outlets, that made way for the rise of the political bloggers. It was only there that you could find the truth. However, they too will be squashed this time around. The truth will have to come in another forum. And it will! Because like I said, the truth always finds a way.

My MAGA Next Door Neighbors…
I don’t even know where to begin on this one. It’s so bizarre, but when I started keeping my Grand-Daughter in the Autumn of 2023, I have had to get up very early on the mornings I keep her. If Veronica drops her off I have to get up at 4:00 a.m. to be ready for when she drops her off. If Brain is dropping her off, I have to get up at 4:30 a.m.. Yea! I get to sleep in!
Being up that early in the morning just makes me feel vulnerable. I’ve just always felt like someone was outside my bathroom peeking in one of the windows. I also could have sworn that while I was in the bedroom naked, searching for something to wear and getting dressed, that someone was sitting on the roof on the house next door to us. I’ve thought I’ve seen that a few times. One time I thought I saw two men sitting together on the roof. And interestingly enough, the garage was open that morning on the house across the street. My first thoughts were that they must have forgotten to close their garage door. But I did think that was very strange.
In our bedroom we have a window that is very high up and spans probably 12 feet long and two feet high, and arched. We have very tall ceilings in our house. That window is also pretty standard. No one places curtains on it because it’s so high up and you will never find any kind of window covering to fit it. Also, most people aren’t tall enough to look in your house through it. (Unless of course, they were on their roof.)
I don’t keep Isabelle every weekday, but I do keep her anywhere from 2-5 days a week.
For the past few months when I get up at either 4:00 or 4:30, I am in the bathroom toilet room, with the light off. I do have the bathroom light on, just not the toilet room light on. But, the light does shine through to me. Well, it’s then that I will hear this very loud THUMP against the side of the house. My first thoughts are, ‘what the hell was that?’ I will then jump up and look out the main bathroom window to see if someone is out there. It’s usually very dark and hard to see. But, I am usually a bit shaken wondering what that was? This happens quite often. Usually I would forget about it and go on with my morning, and then my day, until it would happen again the next morning, only to alarm me again, etc.
I have also heard this THUMP at night after I have gone to couch. Yes, I sleep on the couch. I am the female Fox Mulder. Anyway, I will also hear it at night sometimes.
Two weeks ago at around 4:35 a.m. I was once again in the toilet room when I heard the loudest THUMP I had ever heard up until then. That THUMP was right beside the toilet room window! It scared me so much that I leapt up, if you know what I mean. I’ll just leave it there where my response was concerned but…
Well, it was on Saturday that something told me to look out the bedroom window. I have to stand on the bed to do so. That’s when I saw it, a blue and orange ball. It was right between our houses. That’s when it all made sense to me. It’s that BALL that I am hearing in the mornings. He’s throwing that damn ball at the house around the bathroom. Why? I have no idea! I knew they were republicans, but I didn’t think ill will of them until now.
But just think about it. He gets up before me, and lies in wait for me to use the restroom, and then throws that ball at the house. Isn’t that bizarre? Who does these things?
I took pictures. I’m gathering my evidence. I even went over there yesterday while I was on the phone with Gordon and hurled that ball to the front of their yard. I’ve been talking to Gordon and Brian about it and they are on it! Gordon will be back in March and he is planning on talking to the next door neighbors. Gordon and Brian are going to install additional security for me. We just need to update what we have, and install new that cannot be accessed online. I do still have a cyber-stalker Paul Gray ya know? If it’s online he can access it and thus control it so….

It’s kind of strange but when neighbors and others have been harassing me in the past…

It used to bother me. But for some reason this doesn’t upset me as much. I think because I see the disorder in the person, and not the person. For example, Leisa was a Narcissist, Wheelchair Nazi John was a Paranoid Schizophrenic, Ed had Demensia, Dori was Bi-Polar, Paul Gray is a Sociopath..
Get the point? When you see the disorder in the person it makes more sense. None of the things the people I mention above, have to do with me or anything I’ve ever done. It’s all about them. My MAGA neighbor is no different. I have never done anything to him or his family. I have no idea why he lies in wait for me in the mornings? His wife must know about it and she apparently doesn’t care that her husband harasses another woman. That makes her (Co-Dependent.) See how this works now?
Remember when I mentioned above that I just had this feeling someone was peeking in my bathroom window? Well, he was outside my bathroom and bedroom, wasn’t he? So, why not look? Looks like I was right after all.
I’m going to be 64 this month.

Before Inauguration Day

I took this photo of me yesterday while I was on my way to MacDill AFB in Tampa to do some major shopping to stock up.
Granted, it’s not new for me to take a car selfie while on my way to the base to do my shopping but, it was just different yesterday. I set my alarm for early and got up, got ready, and got out of here for the day.
I of course, took food with me, I always do. And plenty of water. It was my day off from keeping Isabelle and I knew that I had to make the most of my day and shop until I dropped. Which I did!
According to Trump he is implementing his Tariff’s on day ONE! That is a tax on many imported goods to our country. Our Economists have warned us that the average American family will be spending an additional $4,000.00 a year more on regular household goods they normally buy.
Gordon and I don’t exactly fall into that “average” category, so we will probably be spending more than that a year on our food, etc. budget. We tend to eat a lot of Asian ingredients. We lived in Hawaii for 13 years and all the Asian foods that we ate there are ingrained into our diets. Just to add a bit of history here about Tariff’s, The Boston Tea Party, December 16, 1773, was in response to Tariff’s. So….
If you are thinking that the items you mostly buy won’t fall under that “tariff” tax, and that you don’t need to stock up on anything, well, having to pay that “tariff tax” will make the things you usually buy a bit harder because you won’t have that extra money to pay for those items.
You also need to understand that grocery stores here in America are also going to implement that Tariff tax on their goods, whether they already had them in the store before the tax took effect, or not. Publix is owned by a woman that supported and funded the January 6th. Insurrection. You think she is going to give you a discount? She will tax you as soon as she can because that is free money for her. And no, I won’t be naming her here.
I stocked up on everything yesterday. I hit up the Exchange for some clothing for Isabelle, and lingerie for me, dog treats, Isabelle some Bluey toys, books, there were also lots of Valentine’s Day things that I bought, just to get ahead. It was funny that they had leftover Christmas, Valentine’s Day things, and even the Easter stuff has arrived and was out on display.
I stocked up on so many things so that all I will need to buy for the next few months will be fruits, vegetables, and dairy products. I can get those at Sprouts.

Already Packed
I wanted to add that I have started to keep some clothing and toiletries in my car just in case. I’ve been doing this since 2024. I read a few years ago that Climate Scientists are keeping a bag packed by their door, to grab on their way out of the house if there is a climate emergency.
I’ve always been the kind of person to carry a big purse with “additions.” What I mean by that is that in addition to the usual things women carry in their purse, I always had a toothbrush, toothpaste, floss, painkillers, antacids, address book with phone numbers, mini-scissors, small compact make-up, in addition to the usual lip sticks and lip liners, mini hand lotions, … shall I continue? 🙂

The California Fires
I can’t tell you how many times I heard interviews of people that said, ‘we didn’t have time to grab anything, we left with the clothes on our backs. We had nothing.
When you look at that cooler right behind me in the photo of my selfie, you see a blue cooler. In that cooler are clothing and toiletries. I am keeping those at the ready just in case I may ever need to evacuate in a hurry. I will at least have something, whereas there were so many that had nothing.
By our backdoor I have bags packed for our dogs. That way, all I have to do is to grab their food. I already have blankets, leashes, their papers, pads, blankets, toys, etc. all packed in carry-on’s.
I think this is how we need to live our lives in this day and age. Ready for anything. Especially, ready to evacuate. due to climate change.
I would like to credit Nancy Drew for my efficiency in always being prepared. Reading her books as a young child taught me that. Nancy was always prepared. She always had everything in her handbag that she needed. I know that may sound a bit silly, but it applies to today.
I managed to stock up on everything. Goods, Wine, Food, Toiletries..
As You Can See Here….
This is our future. Being prepared, being ready. I also have blankets in my car, batteries, rope, flashlights, first aid kits, even some books to read if I am ever stranded. Being prepared is our future. Like it or not. It is!

From My Neighborhood Stalker… 🙂
This was left in our mailbox back in December, but I find it very interesting.
You can see my trash cans in the photo. Usually I just set out the two for pick-up on Tuesday’s, but this particular day I had collected quite a bit of yard debris so I had placed that container out as well. This photo was taken on a Monday night, around 3:00 a.m.
You can see the shadow of the person (man) holding their arms in the air, left, to take the photo at 3:00 a.m. They look slender.
The note they left is also a interesting. It says:

First of all, this person doesn’t tell me who they are. It alarms me that someone would be standing outside the house at around 3:00 a.m. taking this photo. After they took this photo at 3:00 a.m. they had to have printed it out on their printer, and then placed it in the mailbox the following night. I know this because it was underneath my mail. As in, they placed the photo in my mailbox at night, and then the mailman delivered the mail the following morning, placing it on top of this note.
The smiley face added to the note is something a woman would do, but I believe this to be a man who wrote this. I don’t know many women wandering the neighborhood at 3:00 a.m., plus the note mentions how these sprinkler guys ‘did some work for me.’ We don’t have any single women living around me. A married woman would have said, ‘did some work for us.’ So, this is a man. (Or, it could have been the joint effort of a husband and wife team.)
I suppose I could call that number he gave me and ask who that business services on my street? But, I’m not going to. It’s funny but when you do contact any of these kinds of businesses they always ask the same thing, ‘How did you hear about us?’ What shall I say? Oh, my neighborhood stalker gave me your phone number, 🙂
P.S. I already knew about the busted sprinkler. I am a light sleeper and I get up throughout the night. The first thing I do is to look outside. I saw the geyser, I was just waiting until my son-in-law had the time to come over and fix it. He did, and all is well. The only mystery left is who is the sneaky neighborhood person?

…And, What I’ve Been Up To
Now that the holidays are over with I am back to keeping Isabelle. Some weeks are just a few days, while other weeks are everyday. We’ve also had the nicest coldest weather now for about a month. I have thoroughly enjoyed it. I’m just doing cold weather things like reading, organizing, working on my website. I’m currently working on 5 website pages at once, mostly Christmas’s from 2023.
I am also dreading Inauguration Day and will be doing a lot of shopping prior to that day. I suggest that you do the same. If we are to have to pay around $4,000.00 more a year on our normal household items because of the Trump Tariffs, then it would be a good idea to stock up now before day one of his Presidency.
Also, there needs to be an understanding by the American people of what is to come. Just watch how Trump handles the California fire situation when he gets in office and that will give you an indication of how he will handle everything. It will be up to us to survive on our own. There will be no help from any government official.
Do any of you remember the Brown Outs in California during the Gray Davis Govenorship? He was recalled and then replaced by Arnold Schwarzenegger. Those Brown Outs were generated by the Bush/Cheney Administration just so the people would blame Gray Davis, which they did, and the people got rid of him, which they did, even though it really wasn’t his fault.
These fires will have every Democrat in the state fired and replaced by Republican’s. The state will then turn red in the next major election. (If we even have elections anymore.)
As California burns so does the rest of us. You’ll see. This really is the end of California as we know it. It’s also the end of America as we know it.
Can Biden do something before he leaves office? Sure. Will he? I have no idea? He could grant every citizen living here in America citizenship. Will he? I have no idea? I guess we will find out what Biden is made of before Inauguration Day. But, the Biden that we know will smile, and shake the hand of the dictator that will destroy our country. Just as Obama sat next to Trump at Jimmy Carter’s funeral, smiling and laughing with Trump. Those are our Democrats. We don’t have fighters, we have political pussy’s that Trump gets to grab whenever he wants to.
Miracles can happen before Inauguration Day. Will they? Well, I have never believed in miracles. I’m pretty sure I’ll be proven once again, that they don’t exist.

Jimmy Carter’s Funeral, California Fires, and our Incoming President’s Unaccountability (I might have made up this word, not sure.)
The Start of 2025
(If you think this is bad, just wait.)
RIP Jimmy
I wanted to share a story with you. It took place in either the late 80’s or early 90’s but Jimmy Carter had organized a program to bring over some people from Soviet Georgia to receive surgery for their ailments. My parents, John and Mary Lancaster had one of the recipients of the program to stay with them. I remember his name was Iraqli, not sure if that is how you spell it, but it is how the name was pronounced.) He was a doctor over there. He didn’t have the money to come to America for the surgery he needed, his mother paid for it. I think that he just needed to get over here and then everything else was free. Iraqli had a huge tumor on his face. He came over to Georgia for probably a month. I believe it was Emory that removed his tumor. He stayed with my parents for a few weeks, and then another family in Atlanta.
Out of all the wonderful things being said of all that Jimmy Carter did, I haven’t heard one person say anything about this program. Probably because the Carter’s have done so many good things that are just too numerous to even name.

I may credit Jimmy Carter for this program but I’m sure Roslyn had something to do with it as well. Just as she had something to do with every good works Jimmy Carter was ever credited for.

I remember my parents telling me that Iraqli loved pickles so much and could not stop eating them, so they just placed the jar in front of him and let him have all of them.
Another cute story is that at that time my parents had a copy machine in their house. Iraqli was fascinated by that. My parents tried to explain to him that the only reason they had that copy machine is that it was leftover from his practice in North Carolina and that it isn’t common for most families to even own one. (Iraqli assumed that all American families had copy machines.)
When he went and stayed with that family in Atlanta when he had his surgery, they also had a copy machine. 🙂

I just wanted to state that I have told you things throughout my years of blogging of my abuse my parents inflicted on me for most of my life. My brother Johnny once summed it up by saying:
‘We might have had rotten parents, but they were good people.’
What he said about them actually helped me to get through a lot of the abuse that I received from them. But, the abuse never ended, so I finally decided to stop judging them by how good they are to other people, and only judge them on how bad they are to me.
The example of my parents taking in Iraqli is a perfect example of the good that they would do for other people.

The California Fires
See the Palm Trees?
They are not indigenous to California, and they suck up a lot of water.
This is so very sad on so many levels. Not just the human, animal and plant life, but the destruction of homes, property, businesses, places of worship, schools, etc. Not to even mention the pollution that is contributing to the destruction of our planet.
When you hear on T.V. that Mel Gibson’s house has burnt down, all you think about is Mel Gibson. (Before I continue, I just wanted to state that I do not like Mel Gibson, I am just using him as an example.)
What most people don’t realize is that there are so many attached to Mel Gibson that have now lost in some way. There are the people that live with him, the people that work for him. His giant mansion is tended to by some very skilled gardeners, who also probably would tend to the gardens of many in the area. They have now lost their jobs and perhaps even gone out of business.
Also, the housekeepers that tend to Mel Gibson’s house most likely work for a company that tend to many houses in the area. They have now lost their jobs, and that business has probably gone out of business. There are also people that you don’t think about. Oh, and let’s not forget the pool boys, and who they worked for. Most of these wealthy have personal chefs, and personal trainers. They have now lost their jobs too.
Schools have burnt down, banks have burnt down, businesses have burnt down. They have all lost their jobs.
This tragedy is so grand that I don’t believe it can be fixed. Where are all these displaced people to go?
Of course there are solutions, but that would mean taxing the rich and we all know that won’t happen.
I would like to say something to those people that after every tragedy they all say the same thing, ‘I never thought this would happen here.’
Me: Why the hell not? Are you protected by magic fairies or something like that? Why can’t it happen to you? It can happen to any of us.
There is such a thing called, Global Warming. Yeah, I know we changed the name to Climate Change because when most ignorant people hear the words, Global Warming, they tune out because they think of Al Gore. Each year our planet gets hotter and hotter, dryer and dryer, yet no one can connect the dots, and not wonder why this is happening?

My Spaghetti Pie
It was while I was making my Spaghetti Pie that I was using so many ingredients from California. That excellent Olive Oil that we use so often, and love so much The tomatoes grown in California, etc. I then wondered if the fires would affect our ability to even have these items in the future? I’m not trying to be selfish. I’m just pointing out that we are all connected and what happens in California can affect me here in Florida.
We need to care about each other. We need to help each other. We need to put our planet before profits.
Yeah well, stay tuned, huh?
And a big P.S.: Mel Gibson is the one that is going to be o.k. even though he is the one that lost his house.

And Now For The Most Disgusting…
In my 63 years I haven’t seen too many evil people pay a price for all the evil that they do. I won’t be naming names, but you know who I am talking about.
When I was in Elementary School in Roanoke, Virginia we watched the Watergate Hearings on T.V. every day. It was history. Our teachers knew it was important that we watch and be engaged, to know what was going on, and how serious it all was. That was such a long time ago when the criminal activity of our politicians was considered bad and important for us to know about. But not now.
I’ve heard the Democrats talking about how they need to change to appeal to the rural voters. WHAT? CHANGE? TO APPEAL TO A BUNCH OF RACISTS?
Exactly how are they going to do that? Become racists themselves?
I say, be yourself. Don’t try and appeal to any bad actor. Why? Is selling your soul just so you can win elections worth it? I don’t think so. Yet, this is where we are in our country.

If America is an evil country, then it’s an evil country. There is nothing we can do about it. Except perhaps to carve out a small significant portion ourselves in our daily lives where we disconnect from that evil and do good. There may come a time when I quit watching the news altogether. There may come a time when I deactivate yet another social media account of mine. I know that I have deleted some website pages of mine. Perhaps I will be deleting all my personal blogs as well if I see the need. There may come a time where I spend my days doing nothing but gardening, crafts, cooking, helping, etc.
As I told my brother Johnny in Ireland, ‘I guess I’ll just play princess castle with Isabelle until they drag me out into the town square and hang me for my liberal views.’

Ingredients: Amounts Are Up To You
Assortment of Olives, preferably Pitted
I used Kalamata Olives, Moroccan Olives, Italian Castelvetrano Olives, and large Stuffed Olives
Sundried Tomatoes
3 Branches of our Curry Leaves
Fresh Garlic Cloves
Roasted Garlic Cloves
Key Limes
Spices:
Oregano
Dill Weed
Dill Seed
Basil
Olive Oil

(Each one adds a different flavor.)
Turn Your Oven on 400F
Line a Baking Sheet with Aluminum Foil and create a sort of “bowl” to be able to hold all the Olive mixture so they don’t expand all over the baking sheet.
In a Medium to Large Bowl I Added All My Drained Olives and some Fresh Garlic Cloves, as well as some Roasted Garlic Cloves.
I Chopped My Sundried Tomatoes into Smaller Pieces
(I love this brand of Sundried Tomatoes, I snack on them all the time.)
Add Everything To Your Bowl
Time To Add Your Spices,
And Key Lime (or Lime) Juice
(You don’t want your bowl full of olives, etc. all wet. You want everything to mix together nicely and not have some puddle in the bottom of the bowl. This should give you an idea of how much Lime Juice to add.)
Mix Everything Together and then Drizzle Your Olive Oil Over Top
This is a really good Olive Oil. By all means, stock up on it. You will use it quite often. It is one of the best.
(I tend to always add more, so just drizzle enough to combine everything together. You can always add more later on.)

Now It’s Time To Place Them on the Baking Sheet
I Placed One Curry Branch Down First,
Then I Poured The Bowl of Olives Over Top
I Also Drizzled More Olive Oil Over Them to Make Sure They Were All Coated Well
Into The Oven They Go For 20 Minutes
Here I removed them and stirred them around a bit. Just to make sure they weren’t sticking to the Aluminum Foil, and to make sure they were coated well in the Olive Oil.
I Also Added More Spices… just a few Shakes of This and That

My, my…
Peanut Butter Pie
I’m originally from North Georgia, Rome to be exact. Peanut Butter is probably my most favorite food in the world. I eat more Peanut Butter than I do anything else. I knew I would be making a Peanut Butter Pie someday for the website, I just didn’t know how I would be doing it? Meaning, what I would put in it? Other than Peanut Butter? It then dawned on me to put everything I love to eat with Peanut Butter, in it. So, I did!
I also had in mind to try and make it in the form of a Pretzel Jello Salad. That is an old recipe that we also have here on our website. It’s usually made around Christmas and taken to Church Suppers and Holiday Events.
So, with that in mind I came up with this. I hope you like it. I did! I gave the second one to Veronica and Brian. They loved it too! (And trust me, they tell me when they don’t like things that I make. Usually, if something I make for them is “too spicy” then they let me know.) 🙂
When I think of Peanut Butter, I always think of Georgia and how the state is the largest producer of Peanut Butter in America. Alabama is second. However, the largest consumption of Peanut Butter in the world is China. Who knew?
My, my, Peanut Butter Pie is an homage to my youth. That little girl that put peanut butter on everything, Graham Crackers, Vanilla Wafers, Saltine Crackers, Animal Crackers, Potato Chips, Pretzels, Bananas, Chocolate, Chocolate Cookies, Rice Crackers, Popcorn Cakes, Rice Cakes, Bread, Bagels, etc.
I was never a Peanut Butter and Jelly kind of person. I have always been a Peanut Butter person. Jelly was never important to me.
I’m hoping that you see my creation as a guide to inspire you to create something special for yourself.

My, My, Peanut Butter Pie

Initially, I was going to make a Pretzel Pie Crust, but changed my mind and decided on a Graham Cracker Pie Crust. It was easier, as it was already made, and it reminds me of all the times I would eat Peanut Butter on Graham Crackers.
But first, I decided that I wanted to make some Vanilla Pudding to place on top of the Graham Cracker Pie Crust. The Vanilla Pudding reminding me of the Vanilla Wafers I would also eat Peanut Butter on.

Ingredients: For Making One Pie
1, Graham Cracker Pie Crust
Vanilla Pudding Mix
1/2-1 Cup Peanut Butter Of Your Choice
1, 1/2, 8 oz. Cool Whips, Thawed
2, 8 oz. Cream Cheeses, Softened
Dry Roasted Peanuts as Desired
1 Cup Florida Crystals Turbinado Sugar
Rice Crackers w/ Chocolate
BelVita Cookies (Chocolate and Peanut Butter)
Snyder’s Pretzel Rounds
Valdosta Glazed Pecans

You Will Need A Blender For This
Add the softened Cream Cheese, Peanut Butter, and Turbinado Sugar.
(I was so happy that I used the Turbinado Sugar in place of regular Granulated Sugar. When you bite into the pie, you taste that great brown sugar crystal and it is excellent! So much more satisfying that the Granulated Sugar.)
Just Mix Together Until Blended
Next, Add as Many Peanuts as You Like!
Stir Together, Do NOT Blend!

(I used 1 1/2 per pie.)

The First Thing I Did Was To Spread Some Vanilla Pudding Onto the Bottom Of the Graham Cracker Pie Crust
(I do wish that I had made 2 Vanilla Puddings instead of just one. That way I could have spread more on the bottom of each pie crust.)
I Next Started Layering With the Chocolate Covered Rice Cakes and the Cookies.

I got the idea that I wanted to make something very Florida, and very Palm Beach. A light lunch kind of thing. Flamingos kept popping into my head. But, not just the Flamingos themselves, but what kinds of foods that Flamingos eat. I knew they ate Shrimp, that is what keeps them nice and PINK. I wanted to know what else they ate so I did my research online and I’ve added some of those Flamingo tasty treats to my Pink Flamingo Pasta Salad.

Julie’s Pink Flamingo Pasta Salad
As with any kind of Pasta Salad, or Salad in general, you can always add as much or as little as you like. It’s all up to personal tastes. You can also omit ingredients that you don’t like, or want in your salads. What I am giving you is a guide in creating something nice for yourself and your family, or any nice Summer Gathering you may host, or be invited to.
I based this on my love of Flamingos and their diet. They eat Shrimp, Seeded Grass, Algae, Fly Larvae, Tiny Briny Crustaceans, and other Plants and Animals that live in shallow waters.
I didn’t add all of the Flamingo diet to my salad, obviously, but I did base it on the foods they do eat.

Gathering All of My Ingredients
I Did Double My Recipe To Give To Family
Ingredients:
Flamingo Pasta (Kind of a must.)
Red Onion, Chopped
Yellow Chives, Chopped
Flowering Chives, as Garnish
Celery, Chopped
Radishes, Sliced
Daikon Radish, Sliced
Fresh, or Frozen Peas, (Thawed, if frozen.)
Mayonnaise, To Taste
Hot Sauce, To Taste
Wasabi, To Taste
Cocktail Onions
Aji-Miren, To Taste
Shrimp, Already Cooked
Arugula
Pumpkin Seeds
Pink Pickled Ginger

The Shrimp you see above right, I bought already cooked and ready to eat from the grocery store. It came frozen.
I just needed to thaw them out for my Salad.
The Enoki Mushrooms I didn’t use in this salad.
I did place some around my luncheon bowl to eat with my Pasta Salad though.

Flowering Chives, Yellow Chives, Daikon Radish, and Radishes
As with any Salad you do need to clean the ingredients. In the photo top left, I have my Flowering Chives and Yellow Chives I purchased from The Asian Supermarket. They have some of the most exotic ingredients you will ever find. The green chives has a flower at the end, I’ll show you how I use those when I put the Salad together. The Yellow Chives add a nice pale color with a slight oniony taste to the Salad.
Vegetables Drying

With my Vegetables drying, it’s time to boil my Pasta.
Just follow whatever the package directions say on your Pasta you will be using.
When done, drain into a Colander and rinse with cold water to stop the cooking process and to cool the Pasta down.
Place the Pasta into a large Mixing Bowl.
Now we start to add the ingredients to the Pasta.

Eyeball and Taste
(This is what we do from now on.)
I purchased already chopped Red Onion from the grocery store to save a little time.
I’m adding as much as I like, no measurements.
Chopping Celery
Pasta, Red Onion, and Celery
Slicing the Radishes
They add a pepper taste and I love the texture and the pretty pink rings.
A Daikon Radish is ugly on the outside and beautiful on the inside.
Just use a Potato Peeler to remove the outside.
You can see the pretty flower when sliced. I’m saving these to be used as more of a Garnish.
The Peas were already washed and ready so I just added as many as I wanted.
Mixing Together To Judge the Ratios
At some point I also added the Yellow Chives by simply snipping them with a pair of scissors.

Now Comes The Wet Stuff
I just want to use the Mayonnaise to combine the Salad.
I really don’t like that much as it is usually very rich.

This is something of an experiment in deciding which one I liked better.
I did add a few dashes of both.
The Cocktail Onions are to add that Briny Bite that I wanted.
The Wasabi Paste is also to Add Some great HEAT!
Add a Tablespoon or Two of Miren. It adds a Wonderful Sweetness.

Thawing The Shrimp
This was another shortcut that I took in making this Salad. I bought the Shrimp already prepared, and frozen to be eaten as a Shrimp Cocktail. All I had to do was to thaw them out and drain any excess water. I did have to pat them dry as they were a bit wet from the thawing, and I didn’t want any extra water in my Salad. I did remove their Tails.

PINK Hot Chili Pasta

It was when I was shopping for my Flamingo Pasta that I came across this online.
Tagliatelle Peperoncino.
It is some Pasta with some HEAT! And I love it!
Also, that little jar of Spicy Chili Onion Crisp is wonderful drizzled on top!
I do admit that I kind of threw this together using what I already had in the Pantry, and the Refrigerator.
I combined the sauces that you see above. I used about a jar, and a half a jar of the other.
I place the sauces into a pot on the stove top and put it on a medium-heat.
That black blob on my sauce is Freshly Ground Black Pepper, I also snipped some Yellow Chives into the sauce as well.
I had some Roasted Garlic in the fridge as well and smooshed about 6 -8 Cloves into my sauce. I want it to simmer away for awhile, until it thickens up. When it starts to boil then I turn the heat down a notch or two. When that setting starts to boil, then I turn it down another notch or two, until finally it is all nice and thick on a low setting. Sometimes this can take up to an hour or longer. Be sure to keep an eye on it, stirring periodically so that it doesn’t stick to the bottom of the pot and burn.

I simply sliced it in half and placed it on a baking sheet in the oven to broil until a nice brown….

I Heated Up Some of the Pasta in the Sauce until Warm
I Then Started to Assemble My Sandwich
Layering Bread, Arugula, Pasta, Yellow Chives, Green Chives, Basil, and some Leftover Sauce from the Remaining Jar.

Ingredients:
Pizza Crust (Any that you choose.)
I am into shortcuts now so I bought Ready Made.
Plenty of Julie’s Jezebel Sauce
Shredded Italian Cheese
Slices of a nice Honey Ham
Slices of Provolone
1 Large Sweet Vidalia Onion
3 Colorful Bell Peppers
Olive Oil
Fine to Medium Sea Salt
Cookie Cutters
(Lots of Salad Greens)

Slicing The Onion
I wanted to slice the Onion in such a way as to have sections of it to stay together and fan outwards.
How I did that was to leave the small round section on the Onion, (see photo top right) and just slice an area in size that I desired. It will keep the Onion slice together, and will fan out nicely on the Pizza.
You can see how I sliced the onions in the photo above left. They kept together nicely, just like I wanted them to. If you slice them so that the top of the onion keeps them together, then they can stay together for your pizza project.
I then set them onto a baking sheet lined with some Aluminum Foil and a nice drizzle of Olive Oil.

(This is where my Jeze-Bell’s come in. I also have colorful Bell Peppers in my Georgia Peach Southern Jeze-Bell’s Sauce, hence the name.)
I wanted to use my Cookie Cutters on the Bell Peppers so I sliced them so that I had the room to do so.

(The canned Pineapple you see in the photo above, I changed my mind and didn’t use. I could have though because I do use Pineapple Preserves in my Georgia Peach Southern Jeze-Bell’s Sauce. The Pineapple would have been great but I thought that I already had enough stuff on the pizza and I didn’t want any more.)
However, upon reflection the Pineapple would have been great on the first layer of my Pizza. Oh well, next time!
Grating Some Freshly Ground Black Pepper Over Top
A Sprinkling of Pink Hawaiian Sea Salt
Into a 350F Oven for about 20-25 Minutes. I did turn them a little after the first 15 minutes. I didn’t want them to be thoroughly cooked because they would also have further cooking on the Pizza.
I didn’t just want every Bell Pepper cut out in a heart of Lips.
I also wanted just some nicely cut Bell Peppers as well.
So, While They Are Cooking…..
…Now It’s Time To Build My Pizza
The Pizza Crust Come with 3 of them, but here I will be using 2.
My Georgia Peach Southern Jeze-Bell’s Sauce
Here I Placed One Crust Down on a Pizza Pan Lined With Aluminum Foil
I then Spread Some of my Jeze-Bell’s on Top
Next, I Added Some of This Beautiful Ham!
I Meant to Mention That I Did Spray the Foil Underneath the Pizza with Olive Oil Pam
On Top of the Ham I Scattered Some Grated Italian Cheese

I just took the Onions and Bell Peppers and placed them all around the Pizza in a pattern that I liked.
I do wish that I had waited to add the cheese hearts because it did melt and you couldn’t see that they are hearts. I probably could have done it when I removed it from the oven, while it was cooling.

When I think of cooking Italian food, I imagine a long list of ingredients, carving out a significant portion of the day, and sipping a nice glass of red wine or two during the entire cooking experience. After all, to me it is an experience. (And nibbling on lots of bread sticks.) Also, I don’t really view Italian food as being “Quick.” However, I think in our busy world that it can be. It can also be just as delicious as if we spent hours in the kitchen.
With the exception of Gordon’s Italian Mac N’ Cheese, I never really considered any of these other dishes on this page to be ‘actual’ recipes.
They were more ideas with things we just thought about and threw together, mainly me. (Julie)
I suppose that to me a ‘Recipe’ is something that requires great thought and testing. Kind of like an Experiment in a Lab, or in this case, a Kitchen. But, we never do those things. In many cases we just know that the ingredients we choose are going to taste good together, without us even trying them out. We just throw it together and let our photos tell the story. Some ingredients that we may feature never go into the recipe. After all, we make this up as we go, grabbing things from the pantry. Always have.
However, these ‘Ideas’ have sometimes morphed into excellent Recipes. Ideas that we have become very proud of. And, we’ve even passed some of these Ideas on to our children and others who now cook our Ideas on a regular basis.
So, without hesitation, here are a few very simple Ideas from us for that ‘Quickie Italian’ Dinner. 🙂

I found this Bread on the sale rack at our Commissary for just a few dollars, and I snagged it instantly!
It looked beautiful and tasty, and it WAS! All you need is some great cheese and meats, and a good mustard, then you have a great meal. Oh, and don’t forget the wine. 🙂

Gordon’s Italian Mac N’ Cheese
There was a Mac N’ Cheese Contest at his workplace on the base. (2023)
Gordon tied for 2nd. Place! 🙂
The win is significant for him because he made it the night before and not that morning as some did, including the winner. It does make a difference when it is nice and fresh from the oven, as the winner’s was. Regardless, it is truly spectacular!
Truly Spectacular!
Ingredients:
32 oz. 33% Less Sodium Chicken Broth
~3 – ½ inch Thick Slices of Pancetta – reserve the fat
(NOTE: diced Pepperoni Mini’s can also be used)
~4 Cups Fusilli Pasta
Flour – as needed (equal to the amount Pancetta fat
~2 Cups Milk
~1 Cup Half & Half
~1 Cup White Cheddar Cheese sliced and ~½ Cup shredded
~1/2 Cup Parmesan Cheese sliced and ~¼ Cup shredded
~1/2 Cup Asiago Cheese sliced and ~¼ Cup shredded
1 Tbsp. Dried Italian Herb Seasoning
1 Tbsp. Dried Oregano
2 Tbsp. Butter
Freshly Ground Black Pepper
1 Tbsp. Himalayan Salt
Pam Cooking Spray – as needed

The milk and Half and Half used.
The pots we used…
the left pot was used for the sauce and the other was used to boil the pasta.
Start by pouring the Chicken Broth into the large pot… this will give your pasta some flavor instead of just
having plain water.
Then add enough water to cover the pasta when added.
Pictured are my thick slices of Pancetta.
You can get your local Deli to cut them this thick for you.
Slice the Pancetta into dice sized pieces as shown.
Place the Pancetta pieces into a medium sized pan and heat to medium heat.
While the Pancetta is cooking, add your Fusilli Pasta to the pot and cook as directed or until the pasta is
al dente or cooked so as to be still firm when bitten. Be sure to stir the pasta occasionally so it won’t
stick to the bottom of the pot.
When done and still partially firm (al dente) pour the pasta into a colander and immediately rinse with
cold water to stop the cooking process. Then set the pasta aside to drain.

Still cooking the Pancetta until it is well browned.
It is almost done and looking great!
Use a non-splatter cover in this next step to stop the Pancetta pieces from falling out of the pan. Pour
the Pancetta fat into your medium sized pot and turn the heat to medium high.
Then place the Pancetta onto a plate lined with paper towels to catch the excess fat.

Now, add your flour in equal amounts to your fat. When mixed, it should have the consistency of wet
sand. You have now made a roux! The second picture is a good example of what I mean.
Stir the roux consistently for about 2 min. Cooking it this long will remove the flour taste without
browning the flour. I am also slicing the cheeses while this is happening.
When cooked for two minutes, turn down your heat to low, and add some of your Milk and Half and
Half to the roux.
Stir this mixture until well combined adding more milk if needed to get to the thickness you desire. You
want your sauce thick, so don’t add too much of the Milk and Half and Half in the beginning. You can
always add more later. You have now made a Bechamel Sauce. Over time the sauce will continue to
thicken, so keep your Milk handy. Be sure to continue to stir your sauce now with a whisk from time to
time to remove any lumps. Still slicing cheese while the sauce heats.
This is Mac N’ CHEESE!
Add ~1 Cup of your White Cheddar Cheese to the Bechamel Sauce.
And add ~1/2 Cup of the Asiago cheese to the sauce. Now you have made a Mornay Sauce.
Slicing the Parmesan Cheese
And add ~1/2 Cup of the Parmesan cheese to the sauce. This is also great as a Fondue sauce to dip
bread and vegetables into. Stir your Mornay sauce with your whisk until the cheese is thoroughly
melted and well combined.
While still melting the cheese, add your dried Italian seasoning to the sauce…
Then add your dried Oregano to the sauce.

Here you can see the cheese is melted and the other ingredients are well combined. Taste the sauce to
see if you need to add more seasoning.
Here, I am adding the Mornay sauce to a large mixing bowl, then adding a few Tbsp. of butter to enrich
the sauce. This will also provide a little more flavor and silkiness.
Stir in the butter well.
Add your well drained pasta to the sauce as shown.
Use a rubber spatula to remove every drop of the sauce from the pan.
Then gently mix the sauce and
the pasta together.

Add your freshly cracked Black Pepper to the bowl…
Then add your salt. Himalayan salt isn’t as salty as table salt, which is why you can add so much as the
milk products and pasta in this dish are very bland. Stir to combine. Taste the pasta to see if you need
to add more seasoning.
Now, preheat your oven to 400’F.
Add your Mac N’ Cheese to a casserole dish or dishes that have been sprayed with a non-stick cooking
spray.
Fill the dish almost to the top.
Here I am shredding more of the three cheeses to the top of each casserole dish.
Add as much or as
little as you like.
They are now ready to go into my preheated 400’F oven.

You may want to place the casserole dishes onto a cookie sheet just in case your casserole spills over
during the baking process. (Although we didn’t.)
Here I opted not to as the cookie sheet isn’t large enough to hold both casserole dishes.
Bake the Mac N’ Cheese for about 25 minutes or until the top is well browned.
If needed, you can always turn your oven’s broiler on to brown the top as shown in this pic.
This was a somewhat complex dish to make, which does make enough for two meals.

My Favorite Spaghetti Sand
I didn’t grow up in a particularly sophisticated family where food was concerned. Oh, my grandmother that took me under her wing knew the fine arts of southern hospitality, and did teach me those, but for some reason my mother rebelled against such things and didn’t pass any of that knowledge on to me. I think it was because she married my step-father and he was the one that rebelled against such things. She just did whatever he wanted her to do.
I believe that sophistication was looked down upon in my family when I was growing up so we ate like poor people did. After all, my step-father, the surgeon, grew up poor in Texas so we did tend to eat like poor people did, even though there was money to eat like upper middle class people ate.
Having said that, sometimes my tastes do gravitate toward the more humble eating classes.
We didn’t grow up having our Spaghetti or Pasta Dinners with some lovely Italian Bread, it was always our Sandwich Bread smeared with some Butter and Garlic. I have since added some Paprika to it as well.
When you grow up eating something simple then you get used to it.
It then is no longer simple, but delicious.

Boil the Pasta Following Package Directions Until Al Dente

You Just Need a Bowl to Combine Your Ingredients

The “I Don’t Know What To Call It Pasta/Pasta Sandwich”

Ingredients:
Creamy Basil Alfredo Sauce
Jar of Marinated Artichoke Hearts, drained
Leftover Roasted Garlic Cloves, smooshed, and use as many as you like
Sun Dried Tomatoes, as many as you like
A Good Bread, Butter, and Cheese

Just place the contents of the jar into a sauce pan on a medium heat, add the drained jar of marinated artichoke hearts, and as many of the roasted garlic cloves you desire, and then just let it come to a nice simmering boil. Turn the heat down a few notches once it starts to boil. I Julie, love a nice thick sauce so I will allow it to simmer away until it becomes as thick as I like. Keep stirring the pot regularly so that it doesn’t burn on the bottom. And just keep turning it down to lower settings. When done to your liking, just keep it on low, or warm until you are ready to eat.

Bread and Butter
The Bread is a Tribeca Oven Asiago Cheese Loaf
The Butter is a Garlic Parmesan Basil, that I bought from Sprouts
All I did was to turn the oven on 350F.
On a foil lined sheet pan I placed the two halves of the bread, that I sliced into. Then buttered both sides.
I then grated some Romano Cheese on each slice. I also did a sprinkling of Paprika.
Into the oven they go. 8-10 minutes on 350F.
Then turn off the oven and broil until a bit brown.

When ready you can place this great sauce onto some pasta, with some of the great bread from above. You can also add a salad to make it the perfect meal.
Don’t forget, you can also make a sandwich of it!

I Julie, am known for mixing different pastas together to create a meal. I just started pulling out ingredients from the pantry one day and that’s when I noticed that it’s all got this great peachy/red/beigey color to everything. So….
..I decided to throw it all together, and here we are!

Just Heating Up The Sauce..
If you like you can grind some Black Pepper, or add a few dashes of your favorite Hot Sauce. Perhaps even add some Chili Powder or Cayenne. Make it as hot or as mild as you like!
To thicken the sauce simply allow it to simmer away on a medium-low heat, while stirring occasionally. When it is as thick as you like, then it is done.

My Herb Bread
This is a favorite bread of mine that we buy often. I place it on a foil lined sheet pan, slice the bread without cutting through to the bottom, smear it with a butter or margarine all over it. Place into a 350F oven for about 8 minutes. Then turn off the heat and broil until a nice brown color. That’s when I inserted fresh herbs all between the slices. Then serve with your delicious pasta dinner.

I was shopping at Sprouts when I saw this Simply Organic Sweet Basil Pesto packet. Needless to say, I bought a few. It looked like an easy way to make weeknight Italian on a busy schedule. I also bought some of Sprouts Organic Penne Rigate Durum Wheat Pasta.
I simply followed the package instructions….
Boiled the Pasta….
Drained the Pasta….
Added the Sweet Basil Pesto Sauce to the Cooked Pasta….
I then decided to add this great Cucina and Amore Sun Dried Tomato Bruschetta as well…
Mixing Together..
Now Let’s Grate Plenty of Cheeses Over Top
I’m using Parmesan and Romano, as much as I like!
I Then Sprinkled Some Italian Bread Crumbs In
And, some more Cheese…
Leftovers going into the refrigerator for lunches.
If you need to freshen the pasta up because it is a bit dry, just add a little bit of Extra Virgin Olive Oil.

I do write above about how I grew up eating regular loaf bread as an accompaniment to our weekly spaghetti dinners.
I am featuring it here because it is something that most people have on hand in every kitchen. Therefore, when in need of a nice bread for any Italian of your choice, here is a substitute.
Loaf Bread, Butter/Margarine/Garlic Salt/Paprika
Cook for about 6 minutes on 350F, then Broil until brown.

2 Lbs Ground Turkey

1 Cup Panko Japanese Whole Wheat Bread Crumbs
1 Thumb of Freshly Grated Ginger
3 Cloves of Garlic – Chopped
1/4 Cup Parsley – Chopped
5 Green Onions – Chopped
4 Tbsp Soy Sauce
2 Tbsp Sesame Seed Oil
1 Tbsp Wasabi Sauce
1 Tbsp Black Sesame Seeds
1 Tbsp Roasted Sesame Seeds
1 Tbsp Honey
2 Tbsp Sweet Soy Sauce
Salt and Pepper to Taste

In a large bowl, place all your above ingredients…

You can find roasted sesame seeds, but if not you can roast them gently in a pan until lightly brown.

Honey and Sweet Soy Sauce

Freshly Ground Black Pepper
Spray your a sheet pan with non-stick spray.
Mix the entire mixture until just combined.
Take just over a Tbsp size ball and place it on the sheet pan about 1 inch apart.
Bake in a 400’F oven for about 15 -20 min.
Ensure the internal temperature of the meat balls are 165’F.
Serve with a sweet dipping sauce and Enjoy!

Ingredients for the Wing Marinade:
2 Red Chili Peppers – de-seeded, sliced and chopped
1 Family pkg. of Wings
2 Tbsp. Roasted Garlic Powder
2 Tbsp Chili Powder – Badia Brand
2 Tbsp. Chili Powder – Spice Hunter Brand
2 Tbsp. Ground Cumin
3 Tbsp. Onion Powder
3 Tbsp. Smoked Paprika
2 Tbsp. Ground Chipotle
2 Tbsp. Jerk Seasoning
3/4 Cup Olive Oil

Here I have sliced the Red Chili Peppers in half and removed the seeds.
Now, slice the peppers lengthwise thinly.
Then slice them into a small dice as shown.

Here is the family package of wings we used.
Be sure to rinse them off in a colander to remove any excess blood or cuttings.
Let them drain well.
Now, using a sharp knife, cut between the wing and the drumettes. You should be able to see the area between the two bones. If you are off a little that is fine.
You will get better at finding that area with your knife as you cut more, and more of them.
Your knife should easily go through the small space between the bones.
Discard the wing tip.
Place the wings and drumettes into a large zip lock bag. Wash your hands well….Then begin to add your seasonings. I like using two different types of Chili Powders as I feel they are all different because they use different Chili’s.
Here I am adding more of the seasonings… I don’t measure as I go by more of the look of the wings. Add more or less of the ingredients as you like. I enjoy all of these seasonings so how can I really go wrong?
The Chipotle gives the wings a nice peppery taste while the Jerk seasoning provides that great Island flavor.
You may have noticed that I did not add any salt.
When I tasted the Jerk seasoning, I found it had plenty of salt in it, so be sure to taste all of your mixed seasonings.
The olive oil help to convey the seasonings throughout all the chicken. Pour in a little at a time. Don’t add too much as you don’t want to waste it and you need just enough to coat the wings.
Close the bag tightly leaving a little bit of air so that you can easily roll the wings in the herbs and oil.
When mixed well, remove the air in the bag by folding the bag over on itself then zip the bag closed. Place the bag of marinated wings in the refrigerator near the bottom just in case the bag leaks. You can also place the bag in a large bowl. Let the wings marinate for 24-48 hours.

TIME TO GRILL!
When you are ready to grill them, heat your grill for 5 min. on high to help remove any old food and to heat up the grates to give the chicken those great grill marks. When done, turn your grill to medium high and place the wings and drumettes evenly over your grill grates and close the lid. I used some long tongs to place the wings on the grates.
Turn the wings as needed being sure to check for hot spots on your grill which are areas that cook the wings faster than other areas. The wings in these spots will be done quicker than the rest. You will also have cool spots on your grill which are areas that don’t get a lot of heat. These wings I move to the hot spots so that all the wings cook evenly.
When the wings are mostly cooked, which takes about 7 min. per side, I place the wings on the upper section of my grill where they are away from the flames and tend to bake. Close the lid and let them bake for another 5 min. Doing this will ensure the wings are fully cooked, but still remain juicy and tender. An overcooked wing is a horrible thing. I also look at the wings to ensure the meat is firm and the skin is brown.

make your wing sauce before, or as the wings are cooking.
Ingredients for the Wing Sauce
3/4 Cup Honey
8 good shakes of Chipotle Pepper Tabasco Sauce
1 Tbsp. Roasted Garlic Powder
1 Tbsp. Spice Hunter Chili Powder
2 Tbsp. Jerk Seasoning

Add your Honey and Tabasco to a large bowl as shown.
Then add your other seasonings …
and whisk them all together until well combined.
When your wings are done, add them to the bowl and toss them well.
I can tell you these wings are great even without the Honey Chili Sauce… but it does make them so much better.

Turn them in the sauce as needed.
These wings are now our most favorite that we have ever made. This is a bold statement as we have made many different types. They even beat out my cherished Teriyaki wings, which I have made for years. We are sure you will enjoy them as much as we did.

Coconut Rice
Ingredients:
~ 2 Cups Rice – Rinsed until white water is practically gone
1 Can Coconut Milk
2-3 Tbsp. Coconut Cream – Cream of Coconut (Crema De Coco)
Chicken Broth – as much as needed to have liquid 1 inch above the rice
~3/4 Cup Red Onion – diced
1 tsp. Sea Salt
Jalapeno, Banana, and Red Peppers from our garden – to taste

The Banana Pepper (Yellow and Orange) and the UFO looking Pepper are from our garden! The UFO looking Pepper is our Mad Hatter Pepper.
Here I am washing the rice. This is done to remove the rice & #39;s natural starch. To wash the rice, add water
and mix the rice around in it. Then pour off the milky water and repeat about four times or until the
water in the rice runs clear.

Here I have rinsed my rice and it is ready to accept the flavors.
First add your Coconut Milk to your rice cooker bowl.
Then add some of your Coconut Cream.
Now add enough Chicken Broth to have the liquid be about 1 inch above the rice.
This is when you add your diced Red Onion,
followed by a touch of Sea Salt.
Slice your peppers to the same dice size of your Red Onions.
Here is the diced Banana Pepper… taste them to see how much heat they have. Then add as much or as
little as you like.
For the hotter peppers, you may want to use gloves to prevent the hot juices from getting under your
fingernails causing you some pain. Add as much or as little as you like!
Do the same with the last pepper. I like the various colors the vegetables bring to the dish.
Give everything a good mix.
Rice is Ready for the Rice Cooker
Then let your rice cooker do its thing! This is how it looks when done.

Gordon Preparing the Asparagus for the Grill
Here I have my tongs ready to move things to the grill.
Not shown, I rinsed the Asparagus then cut off the woody end near the root. Most of the time
you can cut all of them at once as they are all from the same planting area. Place them on a
cookie sheet and give them a good dose of Olive Oil… just enough to coat all the Asparagus.
Lemon Pepper is a favorite seasoning of ours for Asparagus.
I added about 1 Tbsp. or so then mix all the ingredients together as shown.

At this time, I am letting my wings get their final bake using the upper part of my grill. I then
have a baking/ cooling rack down on the grill to prevent the Asparagus from falling into the grill.
Grill the Asparagus turning occasionally until they are slightly charred as shown. Turn them
using your tongs.
I then placed them back on the cookie sheet and turned them into the Olive Oil and Lemon
Pepper seasoning to add some extra flavor to the Asparagus. When done, plate and serve!

We love to grill, we love Italian, therefore it makes sense that we would create a page dedicated to Grillin’ Italian.
Italian food showcases a lot of food that we love.
For example, tomatoes, mushrooms, garlic, olive oil, cheese, artichoke, eggplant, herbs, etc.

Our Sandwich Spread Ingredients
(For our Portobello Stuffed Mushroom Sandwiches)
This was a delicious sandwich spread and very easy to make.
My suggestion is to just eyeball the ingredients to your liking.
Of course you will need a Mayonnaise and a Mustard.
(I, Julie, used Dukes Mayonnaise and a Grey Poupon Dijon Mustard.)
I chopped some leftover Marinated Artichoke Hearts that we had in the refrigerator into small pieces.

Just place the Artichoke into a bowl.
add some Mayonnaise and Mustard to your tastes.

We had some leftover Quinoa and these beautiful Sweet Peppers.
I, Julie, thought it would be great to stuff them with the Quinoa and bake them with some Cheese.
Here Gordon is slicing them down the middle and removing the seeds.

Stuffing the Peppers w/ Quinoa

The jar you see in the photo top left, is a favorite food of mine.
Cheese stuffed Peperoncini.
The oil has some heat and I love it! I will sometimes cut up other cheeses such as Manchego to marinate in that delicious oil. We don’t tend to throw it out. We use it whenever we can in our cooking and eating. Here I wanted it drizzled over the Quinoa and Feta Stuffed Peppers to be baked. Simply place them into a 350F oven for about 15 minutes or so until they are done to your likeness.

Gordon Creating the Colorful Bell Pepper, Mozzarella and Pesto Appetizers

Here, I am cutting our Bell Peppers into wedges using the natural curves of the pepper to hold the ingredients.
Now, lay the cut sections on a baking tray.
I like using the Fresh Mozzarella as it melts easily and tastes great.
Being pre-sliced is another good option.

Use your knife to slice the Mozzarella sections to fit into the peppers.
Fill the pepper sections with the cheese as seen above.

Jarred Pesto
Use about a tsp. of some nice Pesto to accent the Mozzarella as it needs some additional flavor.

Here I scraped out the black gills of the mushroom with a spoon, as they don’t taste good when they are this big. I left the stem of the mushroom in, but it can also be removed and chopped up and mixed with the stuffing.
The Stuffing Ingredients for the Portobello Mushrooms
To make the stuffing we used Cream Cheese, Sharp Cheddar Cheese, Parmesan Cheese, Pecorino Romano Cheese. Fresh Garlic, Roasted Garlic, and Bacon. How can this combination of ingredients not taste delicious on anything?
To start, grate your cheeses into a large bowl
Sharp Cheddar
Now, add your Cream Cheese…
Then slice your Garlic thinly using as many, or as little as you like.
Once sliced, continue to chop them into a small mince.
Add the minced Garlic to the cheese mixture.
Chop the Roasted Garlic as well.
I like using the varied flavors of Garlic which make the stuffing mixture more flavorful in my opinion.
Add the Roasted Garlic to the bowl.

BACON
Into The Microwave
We like to cook our bacon using this cup like device which keeps the cooked bacon away from the grease.
Using the microwave to do this is another plus!
Here are the results.

We recently used most of the Grilled Artichoke Hearts which are in a nice seasoned oil. I thought it would be good to use this olive oil on the mushrooms to keep them from sticking and add some great flavor.
Use a brush to coat the olive oil onto the mushroom caps as shown above.
Here I am breaking up the bacon to place into the stuffing mixture. Be sure to taste the bacon to ensure it’s good!… Yeah right! Add some freshly cracked pepper then mix the bacon into the cheese mixture until well combined, then taste the mixture. You shouldn’t need any salt as the Parmesan Cheese and Bacon should have enough salt in them. Either way, add more ingredients as needed to suit your taste.
Use your best tool to load up the mushroom caps. Stuff them staying just below the stem as if stuffed too full, the cheese will run out creating a big mess.

Here you can see all the items I am about to grill for this great meal.
I usually preheat the grill on high for about 5 min. then scrape off any excess items using a grill brush. Then I turn the heat down to medium and spray the grill grates with a high heat oil. Pam makes a brand especially for the Grill. Now, place your stuffed mushrooms on the main part of the grill.
I placed the stuff Bell Peppers on the top rack to bake.
When the mushrooms become pliable, remove them and place them back onto your baking sheet.
I then grilled the long sweet peppers for a few minutes on each side until they were soft and slightly charred on each side. When the cheese melts and the peppers are slightly softened, you can remove them and place them on a baking sheet. You may have to remove some liquid around the cheese during the cooking process or as least before you place them on the tray.

Take the baking sheet and place the stuffed mushrooms under the broiler until browned as shown above. It will take a few minutes to broil them to this color.

The Sourdough Bread
Slice your bread loaf into sections about 3/4 of an inch thick as shown.
Use your broiler to toast the slices as shown on both sides.
To make this great sandwich, spread the Mayonnaise mixture on one side of the bread
Add some lettuce leaves, Green Leaf, Red Leaf, Romaine… etc then top with a stuffed mushroom cap.
Add a drizzle of Balsamic Vinegar and top with another slice of bread!
Here we basically did the same thing, but this time added some of the Grilled Sweet Peppers that were skinned and de-seeded!
Another great way to eat these great ingredients between two slices of bread!

Blackened Grouper Cheek Po’Boys
The Ingredients:
1 Bag of Frozen Grouper Cheeks
4 Sub Rolls – Toasted
2 Lemons
4 oz. Kerry Gold Butter – melted
Blackened Seasoning Mix Ingredients:
1 tsp. Paprika
1 tsp. Smoked Paprika
1 tsp. Sweet Paprika
1 tsp, Thyme
1/2 tsp. Onion Powder
1 Tbsp. Himalayan Salt – fine ground
1 tsp. Roasted Garlic Powder
1 tsp. Ground Black Pepper
1/2 tsp. Ground Mustard
1/4 tsp. Ground Cayenne Red Pepper
Pictured are all the ingredients.
Slice your Sub Rolls like a hot dog bun.
Thaw your grouper cheeks in running water in a colander.

Dipping Sauce Ingredients:
1/2 tsp Wasabi
1 Tbsp. Ketchup
3 Tbsp. Tartar Sauce
1 tsp. Lemon Juice
In a small bowl add your Wasabi…
Ketchup, Tartar Sauce, then Lemon Juice.
Mix all the ingredients well and set aside in the refrigerator.

Here are the spices I used to make my own Blackened Seasoning. I am using the 1/4 Cup to measure out the spices so I don’t get much more than that of all the Paprika’s I will be using.
Now the Smoked Paprika…
and lastly the Sweet Paprika. Place them all into a large measuring cup.
Now add your Thyme…
Onion Powder…
Finely ground Himalayan Salt…
Roasted Garlic Powder…
Ground Black Pepper…
Ground Mustard…
and lastly some Ground Cayenne Red Pepper… to taste.

Mix the ingredients well and place them into a used spice jar that has a sprinkle top. Using this makes it easier to distribute the seasoning on the cheeks. This is what we did.
Slice your two lemons in half and set on a tray to later grill.
Here is the type of butter I used.
Slice off just more than half of the butter…
place it into a bowl and microwave it until melted.

Place the grouper cheeks onto a large plate as shown.
Now add the melted butter and place all onto a large tray with the blackened seasoning.

Get your cast iron skillet as hot as you can using your grill.
Using your tongs, dip a grouper cheek into the melted butter coating it well.
Set the buttered cheek onto the plate and sprinkle your blackened seasoning all over the one side.
Place the seasoned grouper cheek side down onto the skillet. Then season the other side of the cheek as shown.
After about 1 min. turn the cheeks and cook for another min. Meanwhile, grill the cut lemons as shown.
If needed, you can put a touch of peanut oil into the pan to help stop the cheeks from sticking.
Repeat these steps with the other grouper cheeks.

Here I am grilling more cheeks as they cook fast as long as your pan is super heated.
I am also grilling the sub rolls.

Here are all the grilled grouper cheeks and lemons.
We made a slaw earlier to be placed onto the rolls.
add the spicy sauce we made earlier then add your blackened cheeks. You can also add some of the blackened seasoning as well.
Add some of the lemon juice and get ready to eat!
I really liked the sauce so I add some more to the fish.

Our Grilled Cabbage Slaw
An Excellent Edible Gift
With a Lovely Dressing…
Tossed and Ready to Eat

Ingredients:
1 pkg. Pecanwood Thick Cut Bacon
3 Cabbage
3 Yellow Onions
1/2 Cup Bacon Fat
1 Cup Lemon Juice
1 Tbsp. Whole Grain Mustard
1 Tbsp. Delicatessen Mustard
Salt and Pepper to taste
~3 Tbsp. Parsley – thinly chopped
2 Cups Whole Pecan Halves

Pecanwood Thick Cut Bacon
Here we are placing our bacon on our pottery specially made for this task.
Place a sheet of paper towel on top to prevent spattering.

Cook the bacon in the microwave for about 10 min. or until crispy.
Carefully remove the bacon and place on a paper towel keeping the bacon fat for later uses. Continue this process until all the bacon is cooked. We clean the pottery cooker between each cook.
Slice the cabbage into ~1 inch thick slices.
Like so….

Peel and slice your onions into quarters.
Heat your grill to medium high heat …
and place the cabbage evenly over the entire grilling surface as shown.
I then placed the quartered onions on the upper grilling surface to start their cooking.
Keep aware of your grill’s hot spots and turn and move the cabbage as it cooks.

Here you can see the nice grill marks and a little char on the cabbage.
As the cabbage finishes cooking, place it on a platter as shown.
When there is room on the grill, bring down the onions and grill them the same as the cabbage.

For the dressing, use a cast iron skillet as I find it retains its heat and cooks evenly.
Our Dressing Ingredients
Heat your skillet to medium heat and add a good amount of your bacon fat to the pan. Now add most of your lemon juice to the pan.
Now your grainy mustard…
Then your delicatessen mustard, and honey.
Now add your salt and freshly ground pepper to taste.
Whisk all this ingredients together.
Cook the dressing on the grill, or you can use your side burner if you have one.
As the dressing cooks, the mixture will begin to reduce and slightly thicken.
Taste your dressing and add ingredients as needed.

Slice your parsley…
then chop your grilled cabbage into bite size pieces.
Here, I wanted a little more bacon flavor so I added the rest of the bacon fat.
Place the chopped cabbage into a large mixing bowl then add the parsley.
Slice your onions lengthwise …

and place them in the mixing bowl with the other ingredients.
Now, add your dressing to the bowl and mix all the ingredients well.

Add your pecans to the bowl…
then add your bacon breaking it apart into bite sized pieces.

Mix all the ingredients well.

Place the cabbage mixture into jars which can last for a week or more in the refrigerator as the acid in the lemon juice will keep it from spoiling.
They also make excellent edible gifts.

Our Spanish Sofrito/Salsa Verde Tilapia and Sofrito/Salsa Verde Rice

Our Spanish Sofrito/Salsa Verde Tilapia and Sofrito/Salsa Verde Rice
Ingredients:
7 Tilapia fillets – Thawed if previously frozen
3-4 Tbsp. Sweet Paprika
Salt and Pepper to taste
~ 4 Tbsp. Olive Oil
Sauce Ingredients:
1 Cup Dry White Wine (your favorite Chardonnay)
2 Cups Salsa Verde (Julie’s Homemade)
1 Cup Sofrito (Julie’s Homemade)
~10 Large Pepper Stuffed Olives – sliced in half
1/2 Cup Old Florida Chunky Salsa
1 Tbsp. Smoked Paprika
1/2 Tbsp. Cayenne Pepper
2 Tbsp. Fresh Cilantro – Chopped
2 Tbsp. Fresh Parsley – Chopped
2 Tbsp. Fresh Basil – Chopped
(The herbs we brought from home.)

Place the thawed fillets on a sheet pan and liberally coat with the sweet paprika.

Turn the fillets over and coat the other side as shown.
Now add your salt and pepper to taste.
Spanish Olives
Slice your pepper stuffed olives in half.
Place the sliced olives in a bowl for later use.
These black olives are for the Sofrito Rice recipe.
Slice them also in half as shown.
Place the black olives in a bowl for later use.

We Brought our Rice, and Rice Cooker With Us on Vacation
For your Sofrito/Salsa Verde Rice recipe, add about 2 cups of rice to your rice maker’s pot. Rinse the rice about 3 times or until the water is clear. This is done by placing a few cups of water into your rice bowl and using your hand to stir the rice for about 45 seconds. You will begin to see the milky white starch to come off the rice. Pour the water out of the bowl and fill the bowl back again with a few cups of water and repeat the previous steps until the water is clear. Remove the remaining water from the rice.
Add the vegetable broth until it is about one inch above the rice.
One inch is about one knuckle above the rice.
You can place your finger inside to make that determination.
Close the lid and turn the rice maker on as shown.

Meanwhile….
Sofrito/Salsa Verde Rice Ingredients:
2 Cups Rice
~ 2 Cups Vegetable Broth – or until the broth is one inch above the rice.
1 Small bag of Frozen Peas and Carrots
~ 30 Pitted Black Olives – sliced in half
1 Cup Sofrito (Julie’s Homemade)
1/2 Cup Salsa Verde (Julie’s Homemade)

Back to the Tilapia
Add your olive oil to a large cast iron skillet and turn on to medium high heat.
Oyster Bay New Zealand Pinot Gris
Here is the wine I will use to de-glaze the pan after the tilapia is cooked. Also pictured are the fresh herbs from our garden we will use for the tilapia.

Adding some of the Tilapia fillets to the pan. Just sear the fillets for about 2 min. on each side as they will continue to cook while in the sauce.
Pictured are the olives and both of Julie’s homemade Sofrito and Salsa Verde… which were both so good!
Once the fillets are cooked, place them back onto the sheet pan which I used to hold the fillets for seasoning.
Here are the last of the fillets.
See all those bits in the pan? They are pure flavor!
Liberally add your white wine to the pan or about 1 Cup of wine.
Adding the wine to the pan will de-glaze the pan or lift up any pieces of fish that were stuck to the pan or what is called fond. Using your spatula, move the wine around the pan scraping up the fond.
Let the wine cook for about 2 minutes and continue to stir the mixture.

For the Sofrito Rice recipe, I cooked the frozen peas and carrots in a sauce pan with a little bit of boiling water and when done, I drained off the water.
Now, add the cooked peas and carrots to a larger pot as shown above.

Back to the Tilapia, add your sliced green olives to the wine and fond.
Saute the olives in the wine.

For the Sofrito Rice, add about 1 Cup of Sofrito to the peas and carrots.

Now add your sliced black olives to the pot.
Here you see the olives cooking in the wine and I am stirring the Sofrito Rice ingredients.

Once the olives have cooked for a few minutes in the wine, add a cup of Sofrito to the pan.

Now, add 2 Cups of your Salsa Verde to the pan.
Turn the heat down to medium and let the Tilapia sauce simmer and reduce.
NOTE: It was at this point that we decided to add some Salsa Verde to our Peas and Carrots. Photo not shown.

Add your Cayenne to the Tilapia pan sauce.
Now add your Smoked Paprika and stir all the ingredients together well.
Taste the sauce and adjust the seasonings as needed.

We had these green beans as a nice side dish to our meal. These taste a lot like Julie’s Grandmothers. Not everything needs to be homemade from scratch. Bring along some cans to add to your homemade vacation meals.

Here on the left is the rice mixture and on the right is the Tilapia Sauce.
Here I added about 1/2 Cup of this Old Florida Chunky Salsa to the Tilapia Sauce.
As the Tilapia Sauce reduces, I will chop the fresh herbs.
Be sure to stir the sauce occasionally so it won’t burn.
Here on the right the Tilapia Sauce has reduced to my liking, so turn off the heat.
I then added the cooked Tilapia fillets to the sauce and then will continue to cook over the hot sauce. You can nestle the thicker fillets in the sauce. I also poured the left over juices from the fillets into the skillet.

Ingredients:
1 28 Ounce Can of Whole Tomatillos (Costena Brand)
1-2 Jalapeno Peppers, Deseeded
3 Spring Onions
1 Bunch of Cilantro
1/2 Cup of Sugar
1 t. Garlic Salt

This was so easy and fast. I was thrilled to find this can of whole Tomatillos. I was dreading having to use fresh ones. They are just so sticky and you have to remove that husk from them which sometimes takes a bit of work.
You just throw everything in the blender and zap it until it’s ready.
Couldn’t be simpler! Just place into jars and keep refrigerated.

Julie’s Sofrito
(Sofrito is Puerto Rican)
Ingredients:
4 Cubanelle Peppers, Deseeded
2 Medium Sized Spanish Onions
(I have 3 pictured because one looked a little bad. I probably used about 2 1/2 Onions though.)
4 Plum Tomatoes (I used Roma, they are similar.)
1 Large Red Bell Pepper
2-3 Spring Onions
12 Large Garlic Cloves, or 18 Regular Ones
1 Bunch Cilantro
4-6 Culantro Leaves
Hawaiian Sea Salt, or any you so desire.

Spanish Sofrito Tilapia with Sofrito Rice
This is the same recipe from above except that we substituted some of the ingredients with what we had in our house once we got home from our vacation.
This was so good when we originally made it that when we got home and saw our leftover ingredients we wanted to remake it so as not to let anything go to waste.
We had some leftover Tilapia, Salsa Verde, Sofrito, Florida Salsa, Olives….

We didn’t have any of our Spanish Olives leftover from the recipe above so we opened a jar of Garlic Stuffed Olives, which was perfect. Here Gordon is slicing them in half. I also love the presentation of the large olives sliced in half and not chopped up into diced size pieces.
We also didn’t have any frozen peas and carrots for the rice that we make above so we opened up this can and added it to our Sofrito/Salsa Verde Rice. I’ll get to that in a minute.

Gordon Slicing Black Olives for the Rice
Gordon decided to cook the black olives and the colorful carrots in the rice cooker to save time.
You simply make rice according to the rice maker instructions and then add the colorful carrots and olives. That way everything cooks together at once. When the rice is done, the veggies are done.

The Pan Left is for Rice, The Pan Right is for Tilapia
Gordon wanted to add more ingredients to the rice so when the rice cooker with the vegetables was finished, he dumped everything into the wok that already had some olive oil in it. He put it on a medium heat. He then added the drained can of peas and onions and some leftover Florida Salsa.
Place the Tilapia back into the sauce just to warm…
then happily heap onto a plate and enjoy!

Lobster, Shrimp and Sides
Here I found some nice lobster at our Military Commissary (Grocery Store) which were pre-cooked. This can be a problem if you don’t reheat them properly. Luckily, they didn’t cook them to death in the first place.
It Doesn’t Get Any Easier Than This
I simply put the lobster on a sheet pan in a 350’F oven for about 10 min.
When done, the lobster will come out warm and nice and should be eaten right away. In a small saute pan melt some butter with some minced garlic. Break open the lobster tail and claws and dip them in the garlic butter. Don’t forget the legs as they have some meat in them as well.
Here is a great vegetable side dish. In our lower oven we roasted some Zucchini and Yellow Squash cut into strips at 375″F for about 25 min. which were coated with an egg wash (two eggs beaten together with a little water) then coated with some bread crumbs, grated Parmesan Cheese and salt and pepper to taste.
Roast the fries until browned as shown.

Arabic Rice, Grilled Asparagus and Squash, and Zucchini Fries
(We’ve got 3 recipes in the making here.)
Ingredients for the Arabic Rice:
1 1/2 Cups Brown Basmati Rice
3/4 Large Red Onion – diced
3 Tbsp. Olive Oil – I used one from the country of Jordan
1 Tbsp. Ground Cardamom – or more to taste
1 Tbsp. Ground Cumin – or more to taste
1 Tbsp. Ground Coriander – or more to taste
5 Cardamom Pods – seeds removed
~1/2 Cup Dried Cherries
~1/2 Cup Pitted Dried Apricots
~1/2 Cup Chopped Dates
~1/2 Cup Mixed Jumbo Raisins
1/2 tsp. Himalayen Salt
1 tsp. Dried Valencia Orange Peel
2 Whole Cinnamon Sticks
2 Bay Leaves
Fresh Ground Pepper to taste
Garnish with chopped chives

Add your rice to your rice cooker’s bowl and wash with fresh water a couple of times until the water runs clear. This removes the coating. Use your fingers to mix the rice with the fresh water and pour out the milky water and any non-rice pieces. Then add one inch of water above the rice. Use your index finger and your first knuckle to measure this 1 inch measurement. Cook the rice in your cooker until done.
Slice your Red Onion in half then dice it as shown.
Here I placed them in a bowl for later use.

Grilled Asparagus Ingredients:
~30 Asparagus
3 Tbsp. Olive Oil
1 1/2 Tbsp. Lemon Pepper
Wash your Asparagus then slice off the woody ends as shown. Usually about 1 inch of the end depending on the freshness of the Asparagus.
Place the Asparagus into a large baggie and add your olive oil.
Add your lemon pepper and close the bag letting it sit overnight or at least for a few hours.

Yellow Squash and Zucchini Fries:
Ingredients:
3 Yellow Squash – sliced
3 Zucchini Squash – sliced
2 Eggs – beaten
2 Tbsp. Water
2 Cups Wheat Panko Bread Crumbs
1/2 Cup Grated Asiago Cheese
Salt and Pepper to taste

Slice all the squash into thin French fry wedges as shown.
Crack your eggs into a large bowl…

then add your water to the bowl and whisk until combined.
Pour your Panko Bread Crumbs into another bowl …
then add your shredded Asiago Cheese and mix all the ingredients well.
Add your pepper and salt to taste and mix well again.
Dip your squash wedge into the egg mixture to thoroughly coat.
Then dip it into the Panko and cheese mixture,
and set it on a baking tray lined with aluminum foil as shown.
Slice the ends off of your Zucchini squash and cut them into wedges as before and place them into the egg, then Panko mixtures.
Here you can see I have the bowls and tray all in a row to simplify the process.
Line the squash fries in rows on the tray as shown.
Sprinkle a little more Asiago cheese on the squash if wanted.
Bake the fries in a 400’F oven for about 25 min. or until browned.

Thaw and rinse clean your salmon fillets.
Using a pair of food pliers, remove the bones as shown. You could also remove the backbone if you desired. They are also easily removed after the Salmon is cooked.

I like to use a Wok for rice dishes as they remind me a making Asian foods and the ease of moving the ingredients around which the Wok provides.
Heat the Wok to medium high heat and add your oil.
When the oil comes to temperature, add your Red Onions and saute them for a few minutes.
Now add your Cardamom…
Cumin…

and Coriander to the Red Onions and mix well.
Here I am also using the Whole Cardamom Seeds which I am removing from their Pod.
Mix the Red Onion and seasonings well adding more oil if needed.
Add your Dried Cherries to the Wok…
Then your Apricots…
Chopped Dates…
and Raisins to the Wok and continue to mix well.
Now add your Cinnamon Sticks and Bay Leaves to the mixture…
then your Salt…
and Dried Orange Peel, and again mix all the ingredients well.
The aroma of this is amazing!
Now remove some of your rice from the bowl and add it to the other ingredients in the Wok.
Begin to break up the rice with your wooden spatula while mixing all the ingredients together. Add as much rice as you like until the consistency looks good to you. Use any leftover rice for other meals.
Here is the finished dish which was garnished with some chopped chives.

Here I have removed the Squash Fries from the oven as they have browned to my liking.
Set them aside to be eaten later.

Slice some lemons in half to be grilled along with your Salmon.
Here are the four Salmon Fillet Steaks and a brush for the Jezebel sauce.
Turn on your grill to high and heat for about 8 min. When at temperature, reduce the heat to medium and place your cedar planks on the grates. TIP: Buy an entire board of cedar wood at your local home improvement store and have them cut the wood into manageable planks. This is much cheaper than buying the already cut wood planks. Just make sure that the wood is untreated.
Place some oil on the plank and brush it evenly over the wood’s surface.
Now place your Salmon on the plank, placing one inside the other as shown.

Add about 1/2 cup of your Jezebel sauce to a small bowl and …
use your brush to evenly coat the fish with your sauce/glaze.
Add your Asparagus to the grill as shown, over medium heat.
Close the grill for about 8 min. then turn the Asparagus using your tongs.
Add your lemons to the grill and cook them until they have grill marks on the cut side. Grill the fish until firm and you see the white fat coming out of the fish which should take about 15 min. total time depending on the thickness of your fish and the amount of times you open your grill to tend to other items.

Chick Pea Pasta with New Zealand Mussels, Garlic, Tomatoes, and Green Sauce

Ingredients:
1 Large Onion – diced
4 Tbsp. Butter
2 Tbsp. Garlic infused Olive Oil
~9 Garlic Cloves – sliced thinly
1 tsp. Red Pepper Flakes
~13 Cherry Tomatoes – sliced in half
24 oz. New Zealand Mussels – frozen
1 package Chick Pea Pasta – reserving 1/2 Cup of the water to create the sauce for the dish
~1 Cup Green/Herb Sauce (This Green/Herb Sauce recipe can be viewed here): Simply Easter
1 Small Bunch of Parsley – Chopped finely
Salt and Pepper to taste

Kerrygold butter is an Irish butter, which is very good and worth the extra cost.
Here is the Pasta, Garlic, and Cherry Tomatoes we used in this recipe.
Above are the New Zealand mussels we used. There are a few different brands to buy here in the U.S. that I have seen. I believe some of the best mussels in the world come from New Zealand. Other amazing mussels come from the U.S. waters around the state of Washington.
To start, place a few Tbsp. of Olive Oil into a large saute pan and turn the heat to medium high. I used Garlic infused Olive Oil to add the extra Garlic flavor, but most any good Olive Oil will due.
Now add your butter.
Now is a good time to slice your Onions and Garlic.
When the butter has melted, add your sliced Onions to the pan.
Add your Red Pepper flakes to the pan.
Stir and saute the Onions and Pepper flakes for about 2 min.
Now add your mussels to the pan. Stir the ingredients and cover the pan with a lid.
Turn the heat down to medium heat and let the ingredients cook for about 8-10 min. stirring occasionally.

In a large pot, add water and bring it to a boil. When boiling, add your pasta.
Here I am again stirring the Mussels and other ingredients.
Now that your Mussels have cooked, add your Garlic and Cherry Tomatoes.
The juices from the sliced tomatoes will add to the sauce when done.
After about 8 min. or as prescribed on the the noodles box, test that your noodles are cooked by eating one. If it is still very firm then they likely need to cook another min. or two. When the noodles have just a little bite to them they are cooked properly and called al dente or “to the tooth” in Italian. While cooking with the other ingredients, the noodles will absorb some of the sauce and fully cook.
Here you see the juices of the Onions, Cherry Tomatoes, and Mussels in the pan.
Add your al dente cooked noodles to the pan.
Add some of the pasta water to the pan as well to create a sauce.
Mix all the ingredients together as shown.
Add your Green Sauce and stir together with the other ingredients.
Add your chopped Parsley to the pan and mix well.
Serve immediately and enjoy!

Our Pasta Imitation Crab Salad
Gathering Our Ingredients
Ingredients:
14 oz.Crab Shaped Pasta – (Pastabilities – Let’s go Crabin’ Pasta)
1 Tbsp. Sea Salt
2 Quarts Water
3-4 Celery Stalks – Chopped to a small dice
2 Pkgs. Imitation Flake Crab Meat – (Crab Classics Brand)
1/2 Cup Sweet Yellow Pepper – diced
1/4 Cup Red Onion – diced
6 Water Chestnuts – chopped
~1 Cup Miracle Whip
1/4 Cup Aji Mirin – Sweet Cooking Rice Seasoning
1 Tbsp. Old Bay Seasoning
Garnish with Flat Leaf Parsley

Add enough water to a large pot to cover the pasta.
Then add your sea salt to the water to help flavor the pasta.
Turn the heat to high, to boil the water.
Meanwhile, wash and slice your Celery first in long lengths…
Here, my water is boiling so I am adding the pasta, and boiling it as directed by the package instructions for 6 min.
Stir the pasta while it boils and turn the temperature down slightly.
Now slice the Celery into a small dice.
Pictured is the imitation Crab Meat I used.
I like this brand and flake type the best.
Break the flaked meat into smaller chunks as shown and place it into a medium sized bowl.

Your pasta should be ready by now, so drain it into a colander and rinse it well with cold water to stop the cooking process.
Now, add your chopped Celery to the bowl.
Here I sliced and removed the seeds then chopped the Sweet Yellow Pepper into a dice.
Add the Pepper to the bowl.
I then chopped a Red Onion into a small dice and added about 1/4 of it to the bowl.
Here you can see the nice array of colors in this salad.
I used Water Chestnuts to provide more crunch to the salad.
Chop the Water Chestnuts as shown and add them to the bowl.

Here I am adding Miracle Whip to the salad.
I like using this more than Mayonnaise as it provides a subtle sweetness to the salad.
Mix the ingredients by using a folding action… this is done by placing your spoon into the center of the ingredients, then pulling the ingredients up and over the center and repeat this action.
Now add your Aji Mirin and Old Bay Seasoning.
The Aji Mirin is a ‘go to’ item for me in most all of my pasta salads as it too gives a subtle sweetness to the salad.
Of course, Old Bay Seasoning is a must in most anything having to do with Crabs.
Fold all the ingredients together and taste the salad.
Adjust the ingredients as needed, such as you may need a touch more Miracle Whip or Old Bay Seasoning.
Taste the salad again and adjust as needed.
When done, add the salad to a large serving bowl and refrigerate until ready to serve.
Here we garnished the salad with some Flat Leaf Parsley.
