Our Queen of Hearts Tarts

“The Queen of Hearts, she made some tarts, all on a summer’s day.

The Knave of Hearts, he stole those tarts.

Dormouse and White Rabbit

Ready for Tea and Tarts?

Tart ingredients:

~16 Frozen Small Tart Shells

12 oz. Mascarpone Cheese

6 oz. Honey

3 tsp. Vanilla Extract

6 fl. oz. Lemon Juice

18 oz. Heavy Cream

~24 oz. of your favorite fruit… Mandarin Orange Wedges, Blueberries, Strawberries, and Palm Seeds

Glaze Ingredients:

6 oz. Apricot Jam

8 fl. oz. Water

6 oz. light corn syrup

6 oz. Honey

You can use whatever fruits you like for this tart, these are what we chose.

Place your frozen tart shells on a cookie sheet.

Using a fork, poke the base of the tarts, so they don’t rise.

Bake per the package directions.  They should come out slightly browned as shown below.

In a large mixing bowl, add your Mascarpone Cheese, Honey, Vanilla Extract and Lemon Juice.

Mix the ingredients well.

Next Comes the Vanilla Extract, then our Volcanic Lemon Juice

I used a rubber spatula at first…

then moved to a whisk to combine the ingredients smoothly.

This mixture was so good!

Using a mixer, whip your Heavy Cream to stiff peaks.

You can see the peaks on my whisk in the photo below.

Using your rubber spatula, fold the whipped cream into the Mascarpone Cheese mixture.

Place the combined tart mixture into the tart shells even with the edge of the shells.

Smooth the tart mixture flat for your fruit to rest upon.

These palm seeds were very sweet and was a great addition to the other fruit.

The clear white seeds were rinsed in a colander to remove the sweet syrup.

Using your creativity, place the fruit pieces atop of the tart mixture, having washed the fruit first.

You can slice the fruit any way you would like.

Here you can see some of our creations.

Place all your glaze ingredients into a small sauce pan and heat until it flows easily.

This step shouldn’t take long and if the mixture needs to be thinned out more, add a little more water.

Make sure the glaze is smooth of lumps.

Using a pastry brush, brush your glaze atop your pastry fruit.

As you can see the glaze makes the fruit stand out and become shinny!
