Introducing My Butterscotch Extravaganza

I don’t know what else to call it? 

It is Butterscotch and Extravagant all at the same time, hence the name.

It is Perfect for the Holidays

I also think it is quite beautiful too!

Butterscotch Extravaganza

This entire recipe came to be because of two items. 

My Butterscotch Pudding that needed to be used up, and some ready made crepes that I saw pre-package at a grocery store.  That was when the gears started turning and I decided to create this.  Gordon was working overseas at the time, (2025), and Brodie and Mackenzie had moved to North Carolina, so I knew that if I make a ton of it I will only have Veronica, Brian and Isabelle to give it to.  I figured that they would pass some of it on to Brian’s large family.  I only kept a small bit.  Oh trust me, I could have eaten more, I love Butterscotch!  But I also didn’t want to put on a good 5 pounds so I held back.  This recipe is great and intended to be generously shared.

Ingredients:

3 Jell-O Pudding Butterscotch Mixes

(Make according to package instructions.)

Making My Butterscotch Pudding

I did this the day before.  It needs to set in the refrigerator for a few hours before it is ready.

1 Can Pumpkin 

Brown Sugar, To Taste

Ground Nutmeg, To Taste

Ground Cloves, To Taste

Chinese Five Spice, To Taste

Ground Cinnamon, To Taste

(All of these ingredients will go into my can of Pumpkin in order to sweeten, and spice it up.)

(Disregard the Bakerly Crepes To Go Photo Far Right.  I Didn’t Use These.)

Ingredients Continued:

1 Sleave, Honey Maid Graham Crackers

About 3 Cups of Dot’s Homestyle Pretzels, Cinnamon Sugar Seasoned

2 T. Granulated Sugar

1 Stick of Butter

Egg Life Egg White Wraps

(I found these at Sprouts.  I couldn’t find those original crepes that I saw that inspired this recipe, so I had to settle for these.  They ended up working quite nicely too.)

Also, I Used Lady Fingers And Snack Pack Butterscotch Pudding As Well.

Making My Extravaganza Crust

Turn the Oven on 350F

In a Resealable Baggie Place Your Seasoned Pretzels

I also had some other leftover pretzels I decided to add as well.

Add the Sleave of Graham Crackers to the bag too.

And now with a Wooden Mallet you want to bash them all up. 

I don’t like it all to be dust, I like there to be chunks as well.

Now Pour Into An Ungreased Casserole Dish, And Add The Sugar

Place The Butter Into A Microwavable Bowl To Melt In The Microwave

Pour The Butter Over The Pretzel Mixture And Combine

(This is why you don’t need to grease the dish first.  The melted butter in the mixture is enough.)

Place Into The 350F Oven For About 10 – 12 Minutes

When Done Remove From Oven And Set Aside To Cool

When my crust has cooled I am covering it with the Butterscotch Pudding I had made the day before.

Cover with Plastic Wrap and place in the Refrigerator to set a bit.

Jazzing Up My Canned Pumpkin

In a Medium Sauce Pan I placed my can of Pumpkin, along with about 2 T. of Brown Sugar, and dashes of Chinese Five Spice, Ground Cloves, Ground Cinnamon, and Ground Nutmeg.

You can taste this as you go.  I did want to heat everything through on a Medium to Low Heat just for a few minutes.  Set aside to cool.

When my Pumpkin is Cool, I then use my Egg Whites to spread some of the Pumpkin Mixture on to each one, and roll them up.

It is at this point that I have removed the Casserole Dish from the Refrigerator, and am now placing the Rolled Up Egg Whites with the Pumpkin Mixture all over the top of the Butterscotch.

I Am Covering The Entire Top Of The Casserole Dish With My Pumpkin Wraps

Photos Top Left and Right, Is The Last Of My Butterscotch Pudding I Had Made The Day Before…

I Didn’t Have Enough Of The Original Pudding So I Used The Smaller Ready Made Butterscotch Puddings To Cover The Top

Now Place In The Refrigerator To Set

After About An Hour Or Two I Removed The Dessert From The Refrigerator…

And Covered The Top With Lady Fingers

As a backup precaution I had bought the small ready made Butterscotch Puddings just in case, and I am now covering the top of the Lady Fingers with the Pudding.

It’s Almost Finished….
