Ellen Louse Axson Wilson, May 15, 1860 – August 6, 1914, was the First Lady of the United States from 1913 until her death in 1914, as the first wife of President Woodrow Wilson.  Like her husband, she was a Southerner, as well as the daughter of a clergyman.  She was born in Savannah, Georgia, but raised in Rome, Georgia.  Having an artistic bend, she studied at the Art Students League of New York before her marriage, and continued to produce art in later life.

(Ellen is whom I am most interested in as she was a Rome Girl, buried in Rome, Georgia at Myrtle Hill Cemetery.  It is a beautiful cemetery built a top a winding hill.  I would drive past it most every day on my way to work when I lived in Rome.)

It’s just a matter of opening all the jars to add to the large cooking pot.

(Always taste as you go.)

At this point the Strawberry’s have reduced down, and all the flavors have melded together. 

Everything is nice and thick.

  Time to turn the burner off and just allow the Jezebel to start to cool.

(This entire process from start to finish once I started adding items to the pot, probably took a good hour of cooking time.  I do reduce the heat as it starts to bubble a bit.  That is when I place the burner on low and no longer on a medium-low heat.)

Time To Start The Canning

Following are some great shots of the tools and jars you will need for this canning recipe.

Just for the Heart Felt occasion, Julie was able to find some rose colored jars. The color of the

jars will help to enhance the color of the goodness inside.

On the back left of the stovetop, you can see where I am just heating the water almost to a boil to
soften the rubber seal of the lids. You should just see very tiny bubbles in the water.

The amazing mixture is cooking away.

You can see along the edge where the mixture has evaporated some making this Jezebel Sauce more
condensed. For this reason, you don’t want to add too much sugar, as it might then be too sweet
when it gets to this stage of the process. Be sure to taste it and adjust the ingredients as needed.

Now that the water is ready, I am placing the lids in to loosen the rubber seal. If the water is too
hot the seal will melt ruining the lids. I will use a stick with a magnet at the end to retrieve the
lids. You can purchase this tool with other canning equipment or supplies.

The night before, Julie sterilized all the jars in the dishwasher on sterilizing mode. Most
dishwashers have this feature. I then placed a large funnel over the jar and using a medium sized

ladle, began to fill the jars.

Here is a great picture of what I am talking about. You want to fill the jar leaving about 1 inch
away from the top. This is called the head space. This air cavity between the mixture and the lid
will create a vacuum when heated under water, creating a seal with the rubber area of the lid.

Continue to fill the jars.

Here you can see I filled the jars.

Now to help the jars seal, wipe the top of the jars with a wet paper towel to remove any excess
mixture that may have dripped on it. You can also see the lid tool which I spoke about earlier.
The magnet keeps the lids sterile as you never have to touch the underside of it, which might

cause issues by introducing bacteria.

Continue to remove the lids from the water and place one on each jar as shown.

 

Now, gently place a ring on each jar to just tight. If they are too tight, air will not be able to

escape from the jar’s headspace creating the seal.

Here I am using some metal spoons to create a buffer between the bottom of the pot and the jars.
This will ensure they don’t get too hot from being directly on the burner.

If you see bubbles escaping from the underside of the lids, you know you haven’t tightened the

lids too tight.

Using the jar tool, lift all the jars into the pot. The jars need to be completely submerged by
water. Let the jars boil for 15 minutes then remove the jars onto a surface that can handle the

heat like a cutting board topped with a dry dishtowel.

You should start to hear the lids pop, meaning they have sunken inwards creating a vacuum. If
they don’t, and yes sometimes with all the caution I have spoken about, they just don’t pop. If
this happens, you must do the process all over again. I will usually remove some of the jar’s
contents, get a new lid and again carefully wipe down the top. Then boil the jar again! Repeat
when needed.

Time To Get Cooking

I placed a little bit of butter in the frying pan, then I added my Canadian Bacon.

I wanted to fry it up to be very sticky and caramelized.  I added some of my Valentine Jezebel to the pan.

This is the end result!

Everything you see that is charred, is delicious flavor!

Toasting a Baguette

 

I sliced a baguette up into slices and placed them on a baking sheet, I buttered them, and placed them into a 350F oven for about 8 minutes. 

Then, I turned the broiler on brown them a bit.  Set them aside for now.

In the meantime I have allowed two 8 ounce Cream Cheeses to soften, and added some of my Valentine Jezebel to it.

Valentine Strawberry Jezebel Pancakes

Ingredients:

Dolly Parton’s Buttermilk Pancake Mix

(Follow Package Instructions)

Strawberry Guava Pancake Mix

(Follow Package Instructions)

Fresh Strawberry’s, Fresh Blueberry’s

Redi Whip Topping

Meringues

You will need a medium sized mixing bowl for this, and a measuring cup.

Wash the fruits you will be using, and make as many pancakes as you desire, following the package directions from Dolly Parton’s Buttermilk Pancake Mix.

On a medium-high heat, place a frying pan on the burner and spray some cooking oil spray in it.

Then dollop some of the pancake mix into the frying pan.  Use a spatula to flip when ready.

I’m sure there are instructions of when to flip on the pancake box.

My Strawberry Jalapeno Bacon Wrapped Stuffed Peppers

I happen to love the flavors of Strawberry’s and Jalapeno’s. 

Which is why I knew this recipe would work well.

I love Jalapeno Pepper Poppers so I wanted to incorporate my idea of a Strawberry Pepper Poppers recipe.

I have some green Jalapeno Peppers which I prepared.  Basically slicing them down the middle and removing their seeds.  I do have to admit that I have a hard time doing this.   I sneeze like crazy, blowing my nose continuously.  I do have a hard time preparing these.  So, when I do, it is a feat.

Clean the seeds out of your Jalapeno Peppers.

You Will Also Need Some Thick Cut Bacon

In a bowl you want to add some softened Cream Cheese, then add some of my Valentine Jezebel Sauce.

Stir Together

My Jalapeno Peppers Sliced Down the Middle with Seeds Removed

Fresh Strawberry’s Sliced

I placed some of my Valentine Jezebel into a saucepan on a medium-low heat.

Now I am adding my fresh Strawberry’s to saute around.

Once the Strawberry’s in the Jezebel have softened, set aside to cool.

In the meantime…  Stuff the Peppers with the Cream Cheese Jezebel mixture.

Now Just Dollop Some of the Jezebel Strawberry’s Over Top

Now Wrap The Peppers With The Bacon And Secure With Toothpicks

Turn The Oven On 350F

I had some leftover Italian Toasts, and I added the Jezebel Cream Cheese mixture, some Strawberry’s, and some Jalapeno Salt. 

Perfect!

I baked the Jalapeno Peppers on one side for 10 minutes, then flipped them, and baked the other side for 10 minutes. 

When done, I placed them over some Mexican Rice.
