This 2020 year we have gone through renovations in our kitchen and living room.
It was something of a holiday inconvenience but we got through it pretty good.
One thing that we wanted to make, and to give as gifts is Peanut Brittle.
Peanut Brittle is a Staple in Georgia Where I am Originally From
It is sold at every Stuckey’s, Souvenir Stand, Gas Station, etc.

Our Very Unique Christmas Tree
What with our home renovations going on it just didn’t seem lucrative to put up any kind of a tree, what with all of our boxes everywhere. We must have had 80 in our dining room alone. So, I gift wrapped some of them and created a Christmas Tree.
I do have to admit that this was a lot of fun!
It was probably the least stressful Christmas that we have ever had. It was easy and fun!
Putting together Christmas gifts was very enjoyable to us. And this was especially enjoyable.

Microwave Peanut Brittle
The Recipe:

The Ingredients:
1 Cup Sugar
1/2 Cup White Karo Syrup
1 3/4 Cup Peanuts
1 t. Vanilla
1 t. Margarine or Butter
1 t. Baking Soda

Other Ingredient Options:
Cashews
Macadamia Nuts
Peanut Durian
Spanish Peanuts
Khao Shong Nuts (Coconut Covered Peanuts)
Strips of Dried Coconut
Shredded Coconut
Coconut Snacks (Toasted Coconut Chips)
Wasabi Paste

Place All of Your Ingredients in Front of You
As we were making the Brittle’s we came up with new ideas that we hadn’t even planned.
That’s when creativity takes off, so run with it. 🙂
These Dried Coconut Strips Made for a Unique Topping
The Direction’s Are:
You need a large microwave safe bowl, preferably glass, to make the brittle’s.
Add the Sugar and the Karo Syrup to the bowl. Mix together and microwave on HIGH for 4 minutes.

Remove from the microwave and stir together.
This is like hot, molten lava so don’t let small children near this.
Add the Ingredients You Will be Using
FIRST:
Here We Added Some Shredded Coconut and the Coconut Covered Peanuts.
We eyeballed this so we probably added about 1/4 Cup of the Shredded Coconut, and about 1 Cup of the Coconut Covered Peanuts.
Stir Together With a Safe Spatula or Spoon
Now Place the Bowl Back into the Microwave
Cook For 3 Minutes on High
When you remove the bowl from the microwave add the Vanilla and Margarine/Butter. and then place back into the microwave for one additional minute. Then remove and add the Baking Soda. Mix everything together.
The Brittle will be very foamy. Turn it out onto a greased foil lined baking sheet and allow it to cool.
When it is cool enough to touch, remove from the baking sheet and place the hardened brittle onto a cutting board. I then used a wooden mallet to tap the brittle here and there and loved seeing it all break off into nice sized chunks.
That was the most fun part for me! 🙂

Follow the recipe, same as above….
Except this time we are adding our Shredded Coconut and Macadamia Nuts.
This was a really good combination where we made this one more tropical.
When you add the Baking Soda it foams up.
Stirring Together
Now Turn it Out Onto a Greased Foil Lined Baking Sheet to Cool
Spread it Around and Allow it to Cool and Harden

Then just tap with the wooden mallet and watch the beautiful shards of brittle form.

This one we turned it out onto a greased, foil lined baking sheet and before it was hardened we quickly added the strips of Dried Coconut.

This was an experiment that actually evolved right before our eyes.
We Made The Brittle Same as Always….
I got the idea to add something HOT to spice up the brittle, it was then that Gordon got the idea to add the Wasabi. After all, we did some Tropical Brittle’s, so why not an Asian one?

Viola! Wasabi Cashew Brittle
I will say this about it. When I first took a bite I was expecting a lot of heat but yet I tasted nothing. Oh, it was delicious, but I tasted no heat. It was when I took a second bite that I got a little green bit in it and then I tasted the heat. It was delicious!!! I just wish instead of the one teaspoon that I had added a good tablespoon. Next time….

The Shredded Coconut Durian Peanut Brittle
For those of you who do not know what a Durian is, it is more commonly called a Jack Fruit. We love Jack Fruit and eat it often. Here these are Durian covered Peanuts that we are using in this brittle.
