This is Purslane, it is an Edible Flowering Weed that is very healthy for you.
Watermelon Mint Mojitos
Watermelon Mint Mojito with a garnish of mint, pineapple and watermelon.
Out on our Lanai
Fresh Seedless Watermelon – slices/wedge and cubes
Pineapple cubes – fresh or canned
Watermelon Mint Mojito Mixer
2 Sprigs of Mint – these are from our garden!
Pictured is the Watermelon Mint Mojito mixer we bought.
Using a sharp knife, slice your watermelon in half lengthwise, then slice it into smaller more usable wedges that are about 1 inch thick.
Now, slice some of those wedges into cubes and place about six of them into a glass as shown.
Use about the same amount of pineapple cubes and place them into the glass.
Place about one cup of crushed ice into your shaker as shown.
For one drink, use about 2 shots of Bacardi Pineapple to four shots of Watermelon Mint Mojito mixer per glass.
Your shots can vary if need.
Top your mixer and shake away until the outside is so cold you can barely stand to hold it.
Here, it is about to get painful… but keep smiling! 🙂
Carefully pour your drink into the glasses evenly.

Some Southerners like to slightly salt their watermelon as it brings out the sweetness.
My, Julie’s, Grandmother could not eat a watermelon without salting it. Which is why I always have a salt shaker on the table when we eat watermelon even though none of us salt our watermelon.
Using your knife, make a small cut about 2 inches into the watermelon as shown and place it on the glass. Use a sprig of mint as well to garnish. Garnishes are used to let the guest know what to expect in the food or drink as it is usually done with items found in them. We were pleasantly surprised to see the watermelon floating and the pineapple sinking.

Refreshing Italian Al Fresco
Gelato is Italian Ice Cream that is so superior to our American Ice Cream as Gelato is very thick and rich, whereas our Ice Cream tends to be whipped with lots of air in it.
We wanted to have Gelato on the Lanai so this is what we did.
I used some terra-cotta pottery to hold the ice packed Gelato’s of all different flavors.
We had a leftover Pumpkin Spice Panettone, some dark chocolate Pumpkin Spiced, and some Italian biscuits that needed to be eaten up.
The Panettone would make a great Gelato Sandwich.
